SOUTHERN GREEN BEANS

1 tablespoon vegetable oil
8 ounces country ham, ripped into small shards
1 1/2 pounds green beans, trimmed and halved
2 1/2 cups low-sodium chicken stock
1/2 teaspoon freshly cracked black pepper
1/2 teaspoon kosher salt

Steps:

  • Place a large nonstick skillet over medium heat. Pour in the vegetable oil. Spread the ham in the skillet in a thin layer. Cook, stirring occasionally, until it turns brown and crispy. Remove half of the ham shards from the skillet and place on a paper-towel lined plate. Leave the remaining ham and any fat that has rendered in the skillet.
  • Add the green beans, chicken stock, pepper and salt to the skillet. Reduce the heat to medium-low and simmer, stirring occasionally, until the stock reduces and darkens in color and the beans are soft but hold their shape, about 30 minutes. Pour into a serving platter and sprinkle with the reserved crispy ham.

A staple in my home. I tried to make a green bean casserole at Thanksgiving this year and was read the riot act by the boys and told to make this instead. Can be a side or meal of its own when served with potatoes.

Number Of Ingredients 6

2 pound(s) fresh green beans, cleaned with ends off. (can substitue frozen cut green beans.)
1 large onion, chopped
2 tablespoon(s) liquified ham fat or bacon grease
2 cups - chopped leftover ham
1 cup(s) water or broth from simmering a ham bone
*** - salt and pepper to taste

Steps:

  • Place a large Dutch oven on the stove at med-hi heat. Add the bacon fat. Add the green beans and onion. Sauté until the onion is translucent, constantly stirring to coat the beans. They will turn a brighter green in the fat.
  • Add the water or ham broth and ham pieces. Bring to boil then turn down to low and simmer until the beans are tender and the liquid is reduced. Approx 20 mins. If the water evaporates faster than the beans are cooking, adjust by adding water. If there is far too much liquid and the beans are cooking faster than it evaporates, do not cover. Final dish should still be moist but not have a lot of loose liquid. Salt and pepper to taste.

1 ½ pounds red new potatoes, halved
1 pound fresh green beans, trimmed and halved
1 small onion, coarsely chopped
½ cup butter
water to cover
salt and ground black pepper to taste

Steps:

  • Place ham steak, potatoes, green beans, onion, and butter in a large pot with just enough water to cover. Season with salt and pepper; bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 20 minutes.

This recipe can also be cooked in a crock pot, and simmered all day. If fresh green beans are not available, use frozen. Just good ol' Southern style green beans with FLAVA!!

1 ham hock
2 tablespoons lard or other cooking fat
1 teaspoon seasoning salt
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
1 pound fresh green beans - rinsed, trimmed and snapped into bite size pieces

Steps:

  • Combine the water, ham hock, and lard in a large pot over medium-high heat. Season with seasoning salt, salt, pepper, garlic powder, and onion powder. Bring to a boil, then reduce heat to medium-low, and add green beans. Simmer covered for about 2 hours.

2 tablespoons olive oil
1 ham shank, cut into 1-inch pieces
Freshly ground black pepper
2 cups thinly sliced yellow onions
Salt
3 pounds fresh green beans, trimmed
Water

Steps:

  • In a large saucepan, with a lid, over medium heat, add the oil. Season the ham with black pepper. Add the ham and cook for 2 minutes on each side. Remove and set aside. Add the onions. Season with salt and pepper. Saute for 2 minutes. Add the reserved ham and beans back to the pan. Cover the beans completely with water. Bring the liquid to a boil, reduce heat to medium low, partially cover and cook for 2 hours. Remove from the heat and reseason if necessary

Southern Green Beans, Ham & Potatoes image

I love homemade ham & green beans with potatoes, served with a skillet of cornbread and sweet tea! For this recipe, I took two "soul-food" recipes I had and combined them to come up with this one. It's just the way I like it. You can adjust the amounts of ingredients to your own taste. If I use ham hocks, I usually only add one or two slices of bacon for added flavor, just because I like bacon flavor. But if I don't have ham hocks, I use 4- 6 slices of bacon.

1 -2 ham hock
1 -6 slice bacon (raw)
2 onions, coarsely sliced
2 teaspoons salt
1 -2 teaspoon sugar
1 teaspoon garlic, to taste
1/4-1/2 teaspoon cayenne pepper
1 tablespoon parsley (optional)
2 -3 lbs fresh green beans
1 lb potato, quartered, peeled

Steps:

  • Place ham hock and bacon in large Dutch oven pot or soup pot; cover with water.
  • Bring to a rapid boil.
  • Turn burner to medium to medium-high and let it come to a medium boil.
  • Add the sliced onion.
  • Let this cook while you wash and snap your beans (about an hour or more).
  • Wash beans, cut off ends and break in half.
  • Add beans, salt, sugar, garlic, pepper and parsley to the ham hocks.
  • Let it come to a boil, then turn burner to medium, to medium-low.
  • Let it slow boil for about an hour or more or less, depending on how well you like your beans cooked.
  • About 15-20 minutes before done, add your potatoes.
  • Boil until tender.
