SOUTHERN BBQ CHICKEN

Southern BBQ Chicken image

Slow-grilling over indirect heat keeps this chicken moist and tender. Giving the drumsticks a long rub with seasonings makes them taste great. Always baste at the end of grilling to prevent the legs from burning.

Time 9h10m

Yield 5

Number Of Ingredients 10

2 tablespoons brown sugar
2 large cloves cloves garlic, chopped
2 teaspoons salt
1 teaspoon black pepper
10 chicken drumsticks
2 tablespoons vegetable oil
½ cup finely chopped onion
¾ cup ketchup
2 tablespoons white wine vinegar
2 tablespoons Worcestershire sauce

Steps:

  • Mash brown sugar, garlic, salt, and pepper together in a mortar and pestle to form a paste. Spoon paste into a resealable plastic bag. Add the chicken, coat with the paste, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
  • Heat oil in a small saucepan over medium heat. Cook and stir onion in hot oil until softened, about 5 minutes. Stir ketchup, vinegar, and Worcestershire sauce into onions; bring to a simmer and cook until flavors blend, about 10 minutes.
  • Preheat grill for medium heat and lightly oil the grate. Remove chicken from bag and discard marinade.
  • Cook chicken on the preheated grill until lightly browned on all sides, about 1 minute per side.
  • Turn off one of the grill burners or move the coals and move chicken so there is no heat source directly below it.
  • Baste drumsticks with the sauce and cook another 10 minutes; turn again and baste chicken with sauce. Continue to grill drumsticks until juices run clear, 10 to 15 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

SOUTHERN SHREDDED BBQ CHICKEN

Southern Shredded BBQ Chicken image

My family loves traditional pork barbecue served over mashed potatoes. I swapped the pork for chicken in honor of the delicious chicken barbecue my childhood church used to serve at its annual fundraiser. I also love cornbread and think that this yummy chicken is even better when served with a slice.-Angela Spengler, Clovis, New Mexico

SOUTHERN OVEN-BAKED BBQ CHICKEN

Southern Oven-Baked BBQ Chicken image

This baked BBQ chicken is easy to prepare, juicy, and full of flavor. The sauce is unique - a cross between a red BBQ sauce and a mustard BBQ sauce. Onion soup mix brings another depth of flavor to the delicious chicken. We can't wait to try this sauce on other cuts of meat too.

Provided by á-40619

Number Of Ingredients 7

2 lbs boneless, skinless chicken breasts or tenders
seasoning salt, ground black pepper, garlic powder to taste
1 medium yellow onion, roughly chopped
1 16-oz. jar of your favorite BBQ sauce
1/4-1/2 cup cornstarch
6 hamburger buns
2 cups coleslaw

Steps:

  • Season your chicken breasts with seasoning salt, black pepper, and garlic powder. Lay the chicken breasts on the bottom of the slow cooker; top with chopped onion. Pour the BBQ sauce on top of the chicken and onion. Cover the slow cooker and cook on high for 4-5 hours or low for 7-8 hours. One hour before the chicken is done cooking, add the cornstarch to the slow cooker. (If you want a thicker sauce, add 1/2 cup of cornstarch.) Stir the cornstarch into the BBQ sauce; return the lid and cook for another hour. Remove the chicken from the slow cooker and place in a large bowl. Shred the chicken with two forks. (The chicken will be extremely tender, so it will almost fall apart itself.) Toast the hamburger buns. Place some of the BBQ chicken on a toasted bun and top with coleslaw. Enjoy! Serves 6.
