SOUTH-OF-THE-BORDER RICE PILAF



South-of-the-Border Rice Pilaf image

Number Of Ingredients 9

1 (6.4 ounces) Rice-A-RoniĀ® Jalapeno Cheddar
2 water
2 unsalted butter or margarine
2/3 reduced-fat milk
2 garlic, minced
1 chopped fresh tomatillos
1 packed chopped fresh spinach
1/4 thinly sliced green onions
Chopped cilantro (optional)

Steps:

  • In medium saucepan, combine rice, water and butter or margarine. Bring to a boil. Add garlic. Cover, reduce heat to low. Simmer 18 to 20 minutes or until rice is tender and most of the liquid is absorbed. Stir in milk, Special Seasonings and tomatillos. Increase heat to high. Boil 1 to 2 more minutes, stirring constantly. Stir in spinach and onions. Cover and remove from heat. Let stand 3 minutes. Stir well before serving. Sprinkle with cilantro, if desired.

1 tablespoon oil
1 onion, chopped
1 red pepper, diced
1 clove garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium tomatoes, chopped
1 (14 1/2 ounce) can chicken broth
1 cup uncooked rice
1 (15 ounce) can black beans, rinsed & drained
1 cup shredded sharp cheddar cheese, 4 oz.divided
1 tablespoon chopped fresh cilantro
hot pepper sauce, optional

Steps:

  • Preheat broiler, coat baking dish with cooking spray.
  • In skillet heat oil.
  • Add next 7 ingredients, cook, stirring until tender, 5-6 minutes.
  • Add broth and bring to boil, stir in rice.
  • Reduce heat, cover and simmer until liquid is absorbed about 20 minutes.
  • Remove from heat and stir in beans& 1/2 cup cheese.
  • Cover, let stand 5 minutes, then transfer to baking dish.
  • Sprinkle with remaining cheese and broil until cheese is melted.
  • Sprinkle with cilantro and serve with hot pepper sauce if desired.

1 tablespoon olive oil
1 medium green pepper, diced
1 medium onion, chopped
2 garlic cloves, minced
1 cup uncooked long grain rice
1/2 teaspoon ground cumin
1/8 teaspoon ground turmeric
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 cups frozen corn (about 10 ounces), thawed
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chiles, undrained

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat; saute pepper and onion 3 minutes. Add garlic; cook and stir 1 minute., Stir in rice, spices and broth; bring to a boil. Reduce heat; simmer, covered, until rice is tender, about 15 minutes. Stir in remaining ingredients; cook, covered, until heated through.
