If you are someone who is always stealing the crumbs off the top of the apple crumble, this recipe is for you. We spread the apples out on a sheet pan to maximize the surface area and upped the chewy oats and crumb topping so that every bite has plenty.

7 medium baking apples, such as Gala or Fuji (about 3 pounds)
1 tablespoon fresh lemon juice
1 1/2 cups packed light brown sugar
2 sticks unsalted butter, melted
2 teaspoons ground cinnamon
Kosher salt
2 cups old-fashioned rolled oats
1 1/2 cups all-purpose flour
Vanilla ice cream, for serving

Steps:

  • Position a rack in the center of the oven and preheat to 425 degrees F. Peel and core the apples, then cut into 1/4-inch-thick slices. Place apple slices on an 18-by-13-inch sheet pan and toss with the lemon juice, 1/4 cup of the brown sugar, 2 tablespoons of melted butter, 1 teaspoon cinnamon, and 1/8 teaspoon salt.
  • Spread the apples evenly on the pan, cover with foil and bake until the apples have softened and released some liquid, about 20 minutes.
  • Meanwhile, combine the oats, flour, remaining 1 1/4 cups brown sugar, 1 teaspoon cinnamon, and 1 teaspoon salt together in a large bowl, breaking up any lumps with a fork. Add the remaining melted butter to the oat mixture, stirring with a fork until it is moistened and crumbly.
  • Carefully uncover the sheet pan and scatter the oat crumble evenly over the top. Bake uncovered until the top is crisp and golden brown and juices are bubbly, about 15 minutes. Serve with ice cream.

We went apple picking last weekend so I was trying to figure out what to do with all these gala apples. I think this recipe is really helpful when you have minimal prep time and/or the apples aren't so firm anymore.

6 gala apples
1/2-1 cup sugar
2 teaspoons vanilla
2 teaspoons cinnamon (or all spice)
1/4 cup butter
1/2 cup brown sugar
1 cup flour

Steps:

  • Peel, core & slice apples and place into medium sized mixing bowl.
  • Add sugar, vanilla and cinnamon (or all spice) to apples and mix until apples are coated.
  • Place apple mixture into 8X8 glass baking dish.
  • Soften butter, stir until creamy and place in another bowl.
  • Add flour and brown sugar until mixture looks like little peas.
  • Cover apples with flour mixture making sure apples are coated.
  • Place uncovered baking dish onto lower oven rack.
  • Bake at 300 degrees for 50-55 minutes (or until corners are dark brown & crispy).
  • Serve warm with vanilla ice cream or espresso.

4 cups sliced peeled Granny Smith apples
1 tablespoon water
1 teaspoon lemon juice
1 cup white sugar
¾ cup all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
½ cup cold unsalted butter, cut into small pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pile sliced apples in an 8x10-inch casserole dish. Mix water and lemon juice together and sprinkle over apples.

2 lbs cooking apples, pared, cored, sliced 1/4-inch thick (such as Granny Smith, Rome, Golden Delicious)
3 tablespoons granulated sugar
1 tablespoon chopped crystallized ginger
1/2 teaspoon ground ginger
1/2 teaspoon lemon zest
2 tablespoons fresh lemon juice
1/3 cup walnut pieces
2/3 cup old fashioned oats
2/3 cup all-purpose flour
1/2 cup light brown sugar (packed)
1 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup unsalted butter, cold, cut into 10 pieces
whipped cream, for serving

Steps:

  • Heat oven to 375 degrees. Butter 9-inch square baking pan.
