NOODLE CASSEROLE WITH SOUR CREAM AND CHEESE
This recipe is great for a holiday brunch. My family makes this noodle casserole for Christmas and Easter brunch every year!

- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water until tender yet firm to the bite, 6 to 8 minutes. Drain and toss with melted butter. Set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with butter.
- Beat eggs, sour cream, and cottage cheese together in a bowl until well blended. Add Parmesan cheese, onion, parsley, garlic powder, salt, and pepper and beat until thoroughly mixed. Add cooked egg noodles and toss to mix well. Transfer mixture to the prepared casserole dish.
- Bake in the preheated oven until heated through, about 20 minutes.

CHEESY GROUND BEEF-SPINACH SOUR CREAM NOODLE CASSEROLE
Your family will be clammering for more when you serve this casserole, it is simply delicious, don't expect any leftovers lol! We like extreme heat so I most always add in two large chopped jalapeno peppers in with the ground beef mixture. You can use grated mozzeralla cheese in place of Monterey Jack for the top or you omit the cheese completely and just top with Parmesan. Make certain to hand-squeeze out any excess moisture from the spinach, or the sour cream will become to runny.

Steps:
- Set oven to 350 degrees.
- Grease a 13 x 9-inch baking dish.
- In a large skillet cook the beef with the onions, garlic, bell pepper, Italian seasoning, mushrooms and chili flakes until the beef is no longer pink; drain fat, then season with seasoned salt and pepper to taste.
- Add in the Parmesan cheese and pasta sauce; mix to combine, then simmer for about 20 minutes over medium-low heat.
- In a large bowl combine the spinach (squeeze out any excess moisture in the spinach with hands) with 2-1/2 cups Monterey Jack cheese, sour cream, egg, green onion, garlic powder and 1/4 cup grated Parmesan cheese; mix to combine, then fold in cooked egg noodles.
- Spoon the spinach mixture into the prepared baking dish.
- Sprinkle with about 1 cup Parmesan cheese (can use less).
- Top evenly with the ground beef mixture, then sprinkle about 1 cup Parmesan cheese over the ground beef mixture.
- Bake uncovered for about 25 minutes; remove from oven then sprinkle with about 1-1/2 cups grated Monterey Jack cheese on top.
- Return to oven and bake for about 5 minutes, or until the cheese has melted.
- Delicious!

I got this recipe from an old Southern Living cookbook. My family enjoys this casserole. I used Ricotta cheese instead of cottage cheese, since my kids hated cottage cheese.

Steps:
- Cook noodles in boiling salted water according to package directions.
- Rinse and drain.
- In skillet, brown meat in butter.
- Add salt, pepper and garlic salt, then tomato sauce.
- Simmer for 5 minutes.
- Combine cottage cheese, sour cream, chopped onion and noodles.
- Alternate layers of noodle mixture and meat mixture in a 2-quart casserole, beginning with noodles and ending with meat.
- Top with shredded Cheddar cheese.
- Bake at 350 degrees for 25 to 30 minutes or until cheese is melted and browned.

I love this recipe as a simple, country style, casserole, especially since it freezes so well. My mom used to make this all of the time, for that reason, and it was one of the first recipies that I learned to cook as a teen.

- Prepare noodles as directed on package. (This usually takes about 8 minutes).
- While the noodles are boiling, sautee onions and garlic over medium heat with the coconut oil until tender. (I personally use coconut oil for almost anything, but if you do not have it, any oil or butter will do.)
- Also during this time, microwave the frozen peas and carrots in a bowl for 2-3 minutes until thawed.
- Cube the chicken into bite sized pieces and add to the onion and garlic mixture in the pan. Sautee together until mixed. Remove from heat.
- In a bowl, combine the cream of chicken soup, sour cream, and milk. Stir in the ranch dressing mix, salt, and pepper.
- Drain the cooked noodles and pour into a 13X9X2 baking dish. Add the chicken and onion mixture, soup mixture, and peas and carrots. Mix well.
- Top casserole with the shredded cheese.
- Bake in a 350 degree oven for about 30 minutes or until cheese and sauce is bubbly.
