Suzanne Goin, the chef and owner of a number of Los Angeles restaurants, published a recipe for this surprisingly light concoction of onions, rice, cream and Gruyere in her invaluable 2005 cookbook, "Sunday Suppers at Lucques." Years later, Mark Bittman and I served it as part of a feast menu we cooked up for the Sunday Times Magazine. It is a marvelous accompaniment to roast chicken.

4 tablespoons unsalted butter
14 cups Spanish onions, 2 cups diced and 12 cups thinly sliced, about 3 pounds in total
2 tablespoons thyme leaves
Kosher salt and freshly ground black pepper, to taste
1/2 cup short-grained risotto rice, like Arborio
1/2 cup grated Gruyère cheese
2/3 cup heavy cream
Chopped parsley to finish

Steps:

  • Preheat oven to 300 degrees. Melt the butter in a large Dutch oven set over medium heat and, when it foams, add the onions, thyme, salt and pepper. Cook slowly for 15 to 20 minutes, stirring often and turning the heat down if it threatens to scorch the butter, until the onions are soft and translucent.
  • As the onions cook, bring a small pot of water to a boil and add the rice to the pot. Cook the rice for 5 or 6 minutes, then drain it. Add the rice to the onions and stir to combine.
  • Cover the Dutch oven tightly and place it in the oven. Allow to cook, undisturbed, for 35 minutes. Remove from oven and allow to sit for 30 more.
  • Before serving, remove the top of the Dutch oven, stir the rice, and place over a medium-low flame to reheat. Stir in the cheese and the cream and cook, stirring occasionally, until the dish is hot. Add the parsley to serve.

2 white onions, chopped finely
4 tablespoons butter (2 for cooking the onion & 2 to make the roux)
2 tablespoons flour
1 cup milk
salt & pepper, to taste
3 tablespoons heavy cream

Steps:

  • Cook the onions in 2 T of butter until they are very soft (about 12 minutes). They should not brown. (In France they puree the onions for a more refined sauce.) At this point it's your choice.
  • In a saucepan, melt the other 2 T of butter & incorporate the flour, stirring over low heat for 2 minutes.
  • Gradually whisk in the milk, blending well after each addition. Cook the sauce over low to medium heat until it thickens & comes just to a boil. Remove from heat & stir in the cooked onions & heavy cream.

  • To Béchamel sauce add Gruyère cheese, Parmesan cheese, and onion. Add salt and pepper to taste. Heat until flavors are thoroughly blended and the sauce is smooth.

BF and I went to the casino the other night and the Chinese section of the buffet had a dish by this name. I knew it was rice and very rich and that I needed to find a recipe for it! This is it!!! I did sub 1/2 and 1/2 with no problems and by all means use the food processor for the onions!

1 1/2 cups water
1/2 cup long grain rice
1/2 teaspoon salt
6 -7 cups thinly sliced yellow onions (I used a sweet variety)
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup whipping cream
2 tablespoons butter
1/4 cup shredded swiss cheese or 1/4 cup cheddar cheese (or both)
1 tablespoon snipped parsley

Steps:

  • Preheat oven to 300.
  • In med pan bring water to a boil.
  • Add rice and 1/2 tsp salt.
  • Cook uncovered 5 minutes.
  • Drain.
  • In 3 qt round casserole stir onions and melted butter until coated.
  • Bake covered at 300 for 15 minutes.
  • Remove from oven.
  • Add the ricee 1/2 tsp salt and pepper.
  • Bake at 300 for 1 hour.
  • Remove from oven.
  • Stir the whipping cream and 2 TBS butter into the rice mixture.
  • Sprinkle with cheese (s) and parsley.
  • Serve immediately.

1 tablespoon unsalted butter
1 large yellow onion, diced small
Kosher salt and freshly ground black pepper
1 pint heavy cream
1/2 cup finely grated Gruyere
1/2 cup finely grated Parmesan
1 teaspoon Worcestershire sauce
1/4 teaspoon freshly grated nutmeg
8 "grates" lemon zest (about 1/2 teaspoon)

Steps:

  • Cook the onion: In a medium saute pan, combine the butter and onions with 2 tablespoons water and a generous pinch of salt over medium-low heat. Cook, stirring occasionally, until tender, 8 to 10 minutes. (There should be little liquid in the pan and the onion should not be browned.)
  • Make the cream base: In a saucepan, add the cream and warm over medium heat. Allow the cream to come to a boil and reduce slightly, 2 to 3 minutes. Add the Gruyere and Parmesan and let melt a little. Add the Worcestershire, nutmeg, lemon zest and salt and pepper to taste. Whisk the ingredients together in the pan and let it cook until the cream thickens, 2 to 3 minutes.
  • Pour the cream base over the onions and bring to a simmer. Remove from the heat, then stir and let the mixture rest for 2 to 3 minutes. Taste for seasoning.

RUTABAGA SOUP SOUBISE-WITH RICE AND ONION PURéE



Rutabaga Soup Soubise-with Rice and Onion Purée image

3/4 cup sliced celery stalks
1 1/2 cups sliced onions
2 cups light chicken stock (page 4)
1/3 cup raw white rice
4 cups additional liquid-light chicken stock and milk
1 1/2 quarts (2 1/2 pounds) peeled and roughly sliced rutabaga
Salt and freshly ground white pepper
Optional: Sour cream or crème fraîche (see page 9), and chopped parsley

Steps:

  • The Rice and Onion Soup Base. Simmer the celery and onions in the 2 cups of chicken stock until very tender and translucent-15 minutes or more. Stir in the rice, and the rest of the liquid.
  • The Rutabaga, and Finishing the Soup. Stir in the rutabaga, bring to the simmer, season lightly, and simmer loosely covered for about 30 minutes, or until both rutabaga and rice are very tender. Purée in batches in the electric blender. Reheat, correct seasoning, and top each serving, if you wish, with a spoonful of sour cream or crème fraîche, and a sprinkling of chopped parsley.
  • Variations
  • CREAM OF CUCUMBER SOUP. For about 2 1/4 quarts, serving 6 to 8. Peel 4 large cucumbers, save half of one for garnish, halve the rest lengthwise, and scoop out seeds with a spoon. Chop the halves roughly and toss with 2 teaspoons each of wine vinegar and salt; let stand while the celery and onions have their preliminary simmer. Then turn the chopped cucumbers and their liquid into the soup base with the rice, and finish the soup as described in the preceding recipe. To serve, garnish with a dollop of cream, cucumber slices, and a sprinkling of fresh dill weed.
  • CREAM OF CHICKEN SOUP WITH VEGETABLES. Combine the rice-and-onion soup base with the chicken-and-vegetable soup on page 6, using only 4 cups of the liquid called for in the chicken recipe.

2 tablespoons butter
2 tablespoons whipping cream

Steps:

  • Saute the onions in the butter until transpaents.
  • Add the veloute sauce (posted separately) to the onions and bring the sauce to a boil.
  • Reduce the heat to a simmer and cook for 30 minutes At this point puree the sauce in a blender.
  • This will give you a smooth sauce.
  • Add the whipping cream and then season to taste.

1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 tablespoon flour
1 cup milk
1 ounce cream

Steps:

  • Melt the butter over a gentle heat.
  • Add the onions and cook in a covered saucepan over a low heat until really soft but not browned.
  • Season with salt and freshly ground pepper. Stir in the flour, add the milk and simmer gently for an additional 5 minutes until thickened.
  • This sauce keeps for 3-4 days covered in the fridge.
  • Variation: Onion and Mint Sauce.
  • Add 2-3 tablespoons freshly chopped mint to the Onion Sauce before serving.

From Julia Child's "Mastering the Art of French Cooking". This is a savory mixture of sliced onions, rice and butter cooked slowly together until they melt into a puree. The natural moisture of the onions is sufficient to cook the rice; no other liquid is needed. Soubise is particularly good with veal or chicken. It may be turned into a sauce soubise by pureeing it with a sauce bechamel or veloute and enriching it with cream.

1/2 cup rice
4 quarts rapidly boiling water
1 1/2 tablespoons salt
4 tablespoons butter
2 lbs thinly sliced yellow onions (6-7 cups)
1/2 teaspoon salt
1/8 teaspoon pepper
salt and pepper, to taste
1/4 cup whipping cream
1/4 cup grated swiss cheese
2 tablespoons softened butter
1 tablespoon minced parsley

Steps:

  • Preheat oven to 300 degrees.
  • Drop the rice into 4 quarts of boiling salted water and boil for 5 minutes exactly. Drain immediately.
  • Add the 4 Tbsp of butter to a 3-quart, fireproof casserole and place in the oven.
  • When the butter is foaming in the casserole, stir in the onions. As soon as they are well coated with butter, stir in the rice and seasonings.
  • Cover and cook very slowly in the 300°F oven for about 1 hour, stirring occasionally. The rice and onions should become very tender and will usually turn a light golden yellow.
  • Correct seasoning.
  • Just before serving, stir in the cream and cheese, and then the butter. Taste again for seasoning. Turn into a hot vegetable dish and sprinkle with parsley.

YELLOW TURNIP SOUBISE

I don't like many vegetables. I try to find lots of creative ways to make them taste better, so I can have a balanced diet. Rutabaga's( yellow Turnips) are high in vitamins and lower in carbs than potatoes and so make a great substitute in many things. They also combine with onions and rice in this simple recipe to make a rich, creamy soup that is high in nutrients and low in fat. I found this recipe in "Recipes 1-2-3" by Rozanne Gold.

2 lbs yellow turnips, peeled and trimmed and cut into large chunks
1 lb onion, peeled and cut into large chunks
6 tablespoons long-grain rice
6 cups water
2 teaspoons salt
additional salt and pepper

  • Put the turnips, onions,water and salt in a large pot and bring to a boil.
  • Add the rice, stir until well mixed and cover.
  • Lower the heat and simmer for 50 minutes, or until the vegetables are very soft.
  • In several batches, puree contents of pot in a food processor or blender until smooth.
  • Return the puree to the pot. Salt and pepper to taste.
  • This soup gets better as it sits and is better the next day.

1 1/2 lbs. yellow onions
6 Tbs. butter, or as needed
salt and pepper
1/2 cup raw rice
Water
3 -4 Tbs. heavy cream
Parsley, minced

Steps:

  • Peel onions and slice very thinly. Be sure to remove all dry, papery layers. Blanch in boiling, lightly salted, water to cover for 8 or 9 minutes. Drain off water but reserve about 1/2 cup. Melt 3 Tbs. butter in a heavy saucepan or casserole. Add blanched onions and turn through butter with a wooded spoon. Cover andsimmer very slowly over low heat for about 20 minutes or until onions are almost completely soft and melted. Do not let them brown. Sprinkle with salt and pepper. While onions are cooking, parboil rice for 15 minutes in well-salted boiling water. Drain thoroughly. Add rice to onions after they have cooked for 20 minutes. add a little more butter if mixture seems dry. Cover and continue simmering for another 10 or 15 minutes,stirring frequently. If mixture seems very dry add one or two Tbs. of the reserved onion water. When rice and onions are completely soft, and mashable, puree through a seive or in a food processor. Return puree to pot and stir in two or three Tbs. heavy sweet cream. Heat thoroughly, stir to combine, adjust seasonings and stir in parsley.

6 cup(s) yellow onions, chopped or sliced (lyonnaise cut)
1 teaspoon(s) ground himalayan sea salt
1 1/2 cup(s) béchamel sauce
1/4 teaspoon(s) hot paprika (substitute tomato purée, herbs or spices)

Steps:

  • In a large pot over medium-low heat, add butter and when melted and it starts sizzling, add onions and sea salt.
  • Stir to coat, cover and cook until soft and translucent, about 20 minutes, stirring occasionally - DON'T brown them.
  • Meanwhile on medium heat, make the béchamel sauce and season with freshly ground black pepper and salt - don't add nutmeg; set aside.
  • When the cooking time is up, remove the lid and let the liquid evaporate from the onion mixture, about 10 minutes, stirring often to prevent it from browning.
  • Remove from the heat and transfer the onions to the bowl of a food processor. Purée them until the texture is smooth, 15 to 20 seconds.
  • Add the puréed onions to the béchamel, stir well and bring the mixture to a simmer. Depending on what it will be served with, season it appropriately.
  • Serve immediately otherwise, place some wax paper on top to prevent a skin from forming and move it to the back burner, keeping it warm until needed.

1 1/4 pounds onion, thinly sliced
2 1/2 tablespoons white rice
2 tablespoons unsalted butter
1/2 cup heavy cream
1/2 teaspoon freshly grated nutmeg
1/2 cup shredded Gruyere cheese
salt and freshly ground pepper
1 tablespoon minced chives

Steps:

  • Preheat the oven to 325 degrees. Spread 1/2 cup small, dry hardwood chips over the bottom of the smoker, then place the drip tray and rack directly on the chips. To jury-rig a smoker, line a wok or disposable aluminum baking pan with heavy-duty foil and spread with dry wood chips; top with another layer of foil (to catch drips) and a rack. Cover the wok or pan by sealing it tightly with a lid or sheet of foil. Place a sheet of foil on the smoker rack, poke holes all over. In a well-ventilated area, set the smoker over high heat. When smoke rises from all sides, spread the onion over the foil. Cover and smoke for 45 seconds. Remove the onion. In a saucepan of boiling water, cook the rice for 3 minutes; drain. In an enameled cast-iron casserole, melt the butter. Add the onion and cook over medium heat until softened. Add the rice, cream and nutmeg and bring to a boil. Cover and bake until the onion is tender, 30 minutes. Increase the oven temperature to 400 degrees. Stir the cheese into the onion and bake for 5 minutes. Season with salt and pepper; garnish with chives.
