Tender, moist cake recipe with crushed pineapple, pecans and coconut with a cream cheese frosting. An old Southern tradition to make this cake when the preacher comes by for a visit!

Number Of Ingredients 15

3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
2 cups sugar
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
1 20-ounce can crushed pineapple, with juice
1 1/2 cups finely chopped pecans or walnuts, divided
1 cup flaked coconut (optional)
1 8-ounce package cream cheese, at room temperature
1/2 cup (1 stick) butter, at room temperature
1 teaspoon vanilla extract
2 cups powdered sugar, sifted

Steps:

  • Sift together flour, baking soda, salt and cinnamon; set aside.
  • Combine sugar, eggs, oil and vanilla and mix on medium-low speed with an electric mixer until creamy. Slowly mix in flour mixture until just combined.
  • Add pineapple (undrained), 1 cup chopped pecans and coconut then continue mixing on medium-low speed until all ingredients are thoroughly combined (about 1 minute).
  • Spray a 3-quart 13x9 baking pan with cooking spray. Pour cake batter into pan and bake at 350 degrees for 45-50 minutes or until cake is set in the center and a toothpick inserted comes out clean.
  • Cool cake completely in pan then the frost with Cream Cheese Frosting. Sprinkle remaining 1/2 cup chopped pecans over cake. Store in refrigerator.
  • Whip cream cheese, butter and vanilla with an electric mixer until fluffy (about 2 minutes). Beat in powdered sugar (add more if necessary to reach desired consistency).

½ cup butter
4 tablespoons unsweetened cocoa powder
2 cups white sugar
½ cup milk
⅛ teaspoon salt
3 cups quick cooking oats
½ cup crunchy peanut butter
1 teaspoon vanilla extract

Steps:

  • Mix butter or margarine, cocoa, sugar, milk, and salt together in saucepan. Boil for 1 minute.
  • Stir in oatmeal, peanut butter and vanilla. Drop by tablespoonfuls onto waxed paper. Allow to cool and harden.

A southern favorite! This jazzed up boxed cake mix is filled with pantry staples. Preacher Cake was a classic cake made when the preacher cake to visit.

½ cup salted butter (melted)
1 box spice cake mix (15.25 ounces )
8 ounces crushed pineapple in juice (undrained)
1 cup shredded coconut
2 large eggs
½ cup chopped pecans
8 ounces cream cheese (room temperature)
½ cup salted butter (room temperature)
2 cups powdered sugar

Steps:

  • Heat the oven to 350º Fahrenheit. Spray a 9x13 baking pan with cooking spray.
  • In the bowl of a stand mixer (or you can use a hand mixer), add the butter, cake mix, pineapple (with juice), coconut and eggs. Beat well until blended, scraping the sides of the bowl as needed.
  • Stir in the chopped pecans.
  • Pour the cake batter into the prepared pan.
  • Bake for 25-30 minutes or until the center of the cake springs back when you touch it (or a toothpick comes out clean).
  • Allow the cake to cool.
  • To make the frosting, beat the cream cheese, butter and powdered sugar together until well blended and smooth.
  • Spread the frosting on the cooled cake.
  • Sprinkle with pecans.
  • Store in an airtight container.
