Roasted Asparagus Salad with Harissa-Spiced Sorghum (Vegan, Gluten-Free) image

This North African whole grain salad is filled with the flavor and goodness of asparagus, kale, citrus and harissa.

1 bunch slender fresh asparagus, trimmed, sliced in 3-inch lengths
1 tablespoon extra virgin olive oil
1/2 lemon, juiced
Salt and pepper (optional)
2 cups cooked whole grain sorghum, cooled (according to package directions)
2 cups chopped kale, packed
¼ red onion, sliced
½ cup cherry tomatoes, halved
1 tablespoon extra-virgin olive oil
½ lemon, juice, zest
1 clove garlic, minced
1 tablespoon harissa paste

Steps:

  • Preheat oven to 375 F. Place asparagus in thin layer on a baking sheet, drizzle with 1 tablespoon olive oil and lemon juice; sprinkle with salt and pepper (optional). Place on top shelf and roast until golden brown (about 15-20 minutes). Remove from oven and set aside.
  • In a large salad bowl, gently mix together cooked sorghum, kale, onion, cherry tomatoes, and roasted asparagus.
  • In a small dish, whisk together 1 tablespoon olive oil, lemon juice and zest, garlic, and harissa paste. Stir into the sorghum and mix well to distribute.
  • Makes 6 servings (1 cup each)

¾ cup grated Parmesan cheese

Steps:

  • Melt butter with olive oil in a large skillet over medium heat. Add asparagus spears, and cook, stirring occasionally for about 10 minutes, or to desired firmness. Drain off excess oil, and sprinkle with Parmesan cheese, salt and pepper.

This is an adaptation of an old Armenian recipe, and this variation is so delicious I can't stop eating it. It's a great way to stretch expensive seasonal asparagus and pricey cashews. It's great as a side dish or as a vegetarian entree.

¼ cup butter
2 ounces uncooked spaghetti, broken
¼ cup minced onion
½ teaspoon minced garlic
1 ¼ cups uncooked jasmine rice
2 ¼ cups vegetable broth
salt and pepper to taste
½ pound fresh asparagus, trimmed and cut into 2 inch pieces
½ cup cashew halves

Steps:

  • Melt butter in a medium saucepan over medium-low heat. Increase heat to medium, and stir in spaghetti, cooking until coated with the melted butter and lightly browned.
  • Stir onion and garlic into the saucepan, and cook about 2 minutes, until tender. Stir in jasmine rice, and cook about 5 minutes. Pour in vegetable broth. Season mixture with salt and pepper. Bring the mixture to a boil, cover, and cook 20 minutes, until rice is tender and liquid has been absorbed.
  • Place asparagus in a separate medium saucepan with enough water to cover. Bring to a boil, and cook until tender but firm.
  • Mix asparagus and cashew halves into the rice mixture, and serve warm.

6 cups water
1 vegetable bouillon cube
1 lb salmon fillets
2 tablespoons butter or margarine
20 stalks fresh asparagus, cut diagonally into 2-inch pieces (2 cups)
4 medium green onions, sliced (1/4 cup)
1 cup frozen sweet peas (from 1-lb bag), thawed
1/2 cup halved grape tomatoes
1/2 cup vegetable or chicken broth
1 teaspoon lemon-pepper seasoning
2 teaspoons chopped fresh or 1/2 teaspoon dried dill weed

Steps:

  • Rinse quinoa thoroughly by placing in a fine-mesh strainer and holding under cold running water until water runs clear; drain well.
  • In 2-quart saucepan, heat 2 cups of the water to boiling over high heat. Add quinoa; reduce heat to low. Cover; simmer 10 to 12 minutes or until water is absorbed.
  • Meanwhile, in 12-inch skillet, heat remaining 4 cups water and bouillon cube to boiling over high heat. Add salmon, skin side up; reduce heat to low. Cover; simmer 10 to 12 minutes or until fish flakes easily with fork. Remove with slotted spoon to plate; let cool. Discard water. Remove skin from salmon; break into large pieces.

  • Gently stir quinoa, salmon, lemon-pepper seasoning and dill weed into asparagus mixture. Cover; cook about 2 minutes or until thoroughly heated.

  • In a casserole, heat oil at medium heat. Add onion and tarragon, and cook, stirring from time to time, for about 3 minutes or until onion has soften. Add rice and stir.
  • Add vegetable stock, water and salt. Reduce to low heat, cover and let simmer for 15 minutes. Add asparagus, cover and keep cooking for about 10 minutes or until rice is tender and liquid has absorbed. Add lemon juice and pepper and stir with a fork.
