I visited my best friend (Magga) over the Easter holiday & borrowed a few cookbooks from her. I was immediately drawn to *Taste of Mexico* by Elisabeth L. Ortiz, found this recipe among her collection of "70 fiery & flavourful recipes from south of the border" & learned some new lessons on authentic Mexican cuisine. Her intro to the *Soups* section says "Soups are a must for the midday main meal (comida). There are 2 types: aguada (liquid) & seca (dry). The 1st term is self-explanatory, but what is a dry soup? It describes a separate course (traditionally a tortilla or rice dish) served after the more conventional soup & before the main course." I never knew that & this "dry soup" sounds so good to me. (Times were estimated & 15 min allowed for ingredient prep + assembly) *Enjoy* !

1/2 cup corn oil
1 onion (finely chopped)
2 garlic cloves (chopped)
1 lb tomatoes (peeled, seeded & chopped)
1/2 teaspoon dry oregano
1/4 teaspoon sugar
16 corn tortillas (sml size, day-old & cut in 1/2-in strips)
1 cup double cream
1 cup parmesan cheese (freshly grated)
salt (to taste)
black pepper (freshly ground to taste)

Steps:

  • Heat 2 tbsp of oil in a non-stick fry pan. Saute onion + garlic till soft & stir in chopped tomato.
  • Cook tomato till thick, then stir in oregano & sugar. Season to taste & set aside in a bowl.
  • Wipe the pan clean w/paper towels, heat the remaining oil in the pan & fry the tortillas without allowing them to brown. Drain fried tortilla strips on paper towels.
  • Pour a layer of the tomato sauce into a greased flameproof casserole. Add a layer of tortilla strips, a thin layer of cream, another layer of sauce & a layer of grated cheese. Continue till all ingredients have been used, ending w/a layer of cheese.
  • Cover casserole & heat through gently on the stovetop ~ or heat through for about 20 min in an oven preheated to 180C (350F).
  • *Cooks Tip* ~ Be sure to use corn tortillas for this recipe. If only lrg ones are available, use 8.
  • *Personal Note* ~ Altho not a part of the recipe or its authentic intent, I can easily see this dish 1) Converted to a main-course w/the addition of seasoned grd meat or chorizo to the sauce *or* 2) Combined w/a salad to form a meatless main-dish.

"DRY" MEXICAN NOODLE SOUP (SOPA SECA DE FIDEOS)



Not your traditional soup: the Mexican name of this recipe literally translates as "dry soup" so there is no liquid. Fideo noodles are fried, then stirred into a quick tomato sauce and simmered until noodles absorb it. Serve with grated aged cheese.

1 tablespoon vegetable oil
1 (7 ounce) package fideo noodles
¼ white onion, roughly chopped
1 clove garlic, sliced
1 ¼ cups tomato puree
2 bay leaves
¾ cup water
1 teaspoon chicken bouillon granules
1 pinch salt to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add noodles; fry until golden brown, about 4 minutes. Transfer to a bowl and set aside. Add onion and garlic to the skillet. Cook and stir until translucent, about 5 minutes. Add tomato puree and bay leaves; cook until heated through, about 3 minutes.
  • Pour tomato mixture carefully into a blender; add water. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend. Pour back into the skillet; add bouillon and salt. Bring to a boil. Reduce heat to low and add the fried noodles. Cook until the noodles are tender and have absorbed most of the tomato sauce, about 15 minutes more.

Pasta. That's not Mexican, right? Think again. You see it in homes throughout Mexico, one of the many foreign foods that we have welcomed into our cuisine and something I ate growing up. We call this Mexican comfort food, funnily enough, sopa seca, which means "dry soup."

Roasted Tomato-Chile de Arbol Salsa:
1 pound plum tomatoes (about 4)
3 to 6 chiles de arbol, depending on how spicy you like it
2 tablespoons olive oil
1 medium white onion, chopped
4 garlic cloves, crushed
1/2 cup chopped fresh cilantro
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Sopa Seca:
1/4 cup canola oil
1 cup small shaped pasta such as melon seeds, orzo, or alphabets
1/2 cup Roasted Tomato-Chile de Arbol Salsa
2 cups chicken stock (low-sodium store-bought is fine)
1 tablespoon chopped fresh cilantro
A handful of shredded cotija or queso fresco (preferably the Cacique brand, or pecorino, Parmesan, or lightly salty feta

Steps:

  • Heat the oil in a Dutch oven or medium pot over medium-high heat until it ripples. Add the pasta and cook, stirring constantly, until the pasta is golden, about 3 minutes.
  • Scoop out and discard 2 tablespoons of the oil. Add the Roasted Tomato-Chile Arbol Salsa and cook for 2 minutes, stirring the whole time. Pour in the chicken stock and let the liquid come to a simmer. Cover the pot and cook, stirring once in a while, until the liquid is absorbed and the pasta is tender, about 20 minutes.
  • Divide the pasta between two bowls and garnish with the cilantro and cheese.

3 to 4 chiles in adobo
4 garlic cloves, unpeeled
2 1/2 pounds (5 medium-large round, 15 to 17 plum) ripe tomatoes
About 1/2 cup vegetable oil
3/4 cup (about 6 ounces) chorizo sausage, casing removed, optional
1 (10-ounce) package dried fideo (vermicelli) noodles, preferably angel hair
1 cup beef or chicken broth
1 teaspoon dried oregano, preferably Mexican
1/2 teaspoon black pepper, preferably freshly ground
Salt, about a scant teaspoon
2 medium zucchini, cut into 1/4-inch dice
1/4 to 1/2 cup thick cream, whipping cream, or creme fraiche, optional
2/3 cup finely grated Mexican queso anejo or Parmesan
A few tablespoons roughly chopped cilantro, for garnish

Steps:

  • For dried chiles, toast them on an ungreased griddle or heavy skillet over medium heat, turning regularly and pressing flat with a spatula, until very aromatic, about 30 seconds. In a small bowl, cover the chiles with hot water and re-hydrate 30 minutes, stirring frequently to ensure even soaking. Drain and discard the water. (Canned chiles need only be removed from their sauce.)
  • Roast the unpeeled garlic on the griddle or skillet, turning occasionally, until soft, about 15 minutes; cool and peel. Roast 1 1/2 pounds of the tomatoes on a baking sheet 4 inches below a very hot broiler until blackened on 1 side, about 6 minutes, then flip and roast the other side. Cool, then peel, collecting all the juices with the tomatoes.
  • In a food processor or blender, process the roasted tomatoes, rehydrated or canned chiles, and garlic to a medium-fine puree. Heat 1 tablespoon of the oil in medium-size (4-quart) pot (such as a Dutch oven or Mexican cazuela) over medium-high. Add the puree and stir for about 5 minutes as it sears and thickens. Set aside.
  • If using chorizo, cook in a little oil over medium heat, breaking up large lumps as you go, until thoroughly cooked, about 10 minutes. Scoop it out with a slotted spoon, draining as much oil as possible back into the skillet.
  • Pour 6 tablespoons of the remaining oil into the skillet and return to the heat. When quite hot (drop a stray noodle in ? it should sizzle but not brown immediately), lay in about 1/3 of the noodle nests to fry until noticeably browned, about 1 minute, then flip and brown the other side. Remove with a slotted spoon, draining as much oil as possible back into the skillet, and drain on paper towels. Continue until all have been browned.
  • Add the broth, oregano, and pepper to the tomato sauce. Core the remaining 1 pound of tomatoes and chop into 1/4-inch bits. Add and simmer briskly until the sauce thickens to the consistency of a juicy tomato sauce, about 5 minutes. Taste and season with salt.
  • Add the noodles. In about 2 minutes pull the "nests" apart (they'll have softened enough to do it at this point), then add the zucchini and the chorizo (if you're using it). Simmer, stirring occasionally, until the noodles are tender but still firm, about 2 minutes.
  • If using the cream, add it now, raise the heat to medium-high and boil quickly until the sauce returns to its previous consistency. Taste again and readjust the salt, if necessary.
  • Stir in half of the grated cheese, scoop into a warm serving dish, sprinkle on the remaining cheese and the cilantro garnish, and it's ready to serve.

SOPA SECA: MEXICAN NOODLE CASSEROLE

Made by lightly frying vermicelli noodles and then cooking them in a rich broth flavored with spices, chipotle and tomatoes, sopa seca is considered comfort food in Mexico. We added smoked turkey to the mix, topped the noodles with grated Cheddar, and finished cooking in the oven for a cheesy, bubbly finish.

1/4 cup extra-virgin olive oil, plus extra for pan
12 ounces fideos (bundled vermicelli)
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon ground coriander
1 teaspoon dried oregano, preferably Mexican
1 teaspoon New Mexican chili powder
1 bay leaf
1 1/2 cups canned whole tomatoes
1 to 2 chipotles en adobo sauce, minced
1 1/2 cups chicken broth, homemade, or low-sodium canned
1 teaspoon kosher salt
Freshly ground black pepper
2 cups shredded smoked turkey
1 cup coarsely grated cheddar cheese (4 ounces)
Mexican crema, or sour cream thinned with a bit of milk, optional

Steps:

  • Preheat the oven to 375 degrees F. Brush a 9-inch square baking dish with oil. Heat the extra-virgin olive oil in a large skillet over medium heat. Add the fideos and cook, turning them with tongs, until golden brown on both sides, about 5 minutes. Transfer the bundles and any broken pieces to a plate. Add the onion to the skillet and cook over medium heat, stirring occasionally, until golden brown, about 8 minutes. Stir in the garlic, coriander, oregano, chili powder, and bay leaf, and cook until fragrant, about 30 seconds. Crush the tomatoes over the pot with your hand and add them to the pot along with their juices. Add the chipotles, increase the heat to high, and cook until thickened, about 2 minutes. Stir in the broth, the toasted fideos, salt, and pepper, to taste. Bring mixture to a boil, reduce heat, and simmer gently, uncovered, breaking up the fideos with a spoon, for about 5 minutes. Stir in the turkey. Remove the bay leaf. Transfer the mixture to the prepared baking dish, sprinkle the grated cheese over the top, and cover loosely with foil. Bake until the cheese melts and the casserole is hot through and through, about 20 minutes. If desired, serve with some crema drizzled over the top. A rich and creamy Mexican side dish - full of peppers, onions, cheese and corn tortillas. It will surprise you. The name means "Dry Tortilla Soup" Some people would call it a casserole. I call it divine. A nice addition to a Mexican dinner, this also goes well with other foods. Not spicy at all, so it can go with many things. Though it is meant to be a side dish, you could serve it along with a large salad for a luncheon or light dinner. (Or, not so light, maybe) This is so rich and creamy, you'll want to make it for company. If you must have spicy foods, you can add some jalepenos to it if you like. But do try it this way first.

10 6-inch corn tortillas
cooking oil (olive or canola)
2 green bell peppers, cut in strips
1 medium onion, chopped
1 clove garlic, minced
1 teaspoon salt
1 cup whipping cream
1 cup shredded monterey jack cheese

Steps:

  • Cut tortillas in strips about 3 inches long and 1/2 inch wide.
  • In medium skillet heat 1/4 inch of oil.
  • Fry tortilla strips, a few at a time, about 10 seconds or just until limp.
  • Remove with slotted spoon.
  • Drain on paper toweling.
  • Pour off all but about 2 tablespoons oil from skillet.
  • Add green pepper strips, onion and garlic; cook till onion is tender.
  • Sprinkle vegetables with salt.
  • In 1-1/2 quart casserole, combine tortilla strips, vegetables, and half of the cheese.
  • Pour whipping cream over all.
  • Cover and bake in 350-degree oven for 20 minutes.
  • Uncover.
  • Stir gently; sprinkle with remaining cheese.
  • Bake uncovered about 10 minutes more or until heated through.

2 cups long grain rice
6 tablespoons butter or 6 tablespoons margarine
2 small onions, finely chopped
3 garlic cloves, minced
4 medium tomatoes, peeled and chopped
4 cups regular-strength chicken broth
2 -3 california chilies (optional) or 2 -3 pasilla chiles, medium sized, seeded and chopped (optional)
2 tablespoons chopped fresh cilantro (optional)
1 cup pimento stuffed olive

Steps:

  • In a wide frying pan over medium-high heat, brown rice lightly in butter or margarine.
  • Add onion, garlic, tomato, and chiles, if used and cook for 2 or 3 minutes; add 3 cups of the broth.
  • Cover and simmer 25 to 35 minutes or bake, covered, in a 350F oven 50 to 60 minutes.
  • Add more broth, if needed, to cook rice. However, there should be no liquid remaining when rice is tender to bite.
  • Add cilantro, if desired, during last 10 minutes.
  • Garnish rice with olives.

1 ancho chili, seeded and julienned
1 pound tomatillos, diced
1 pound tomatoes, diced
1 tablespoon dried epazote leaves (see note)
4 cups chicken stock
Kosher salt to taste
Vegetable oil for the casserole dish
20 uncooked corn tortillas, cut into 1-inch-wide strips
3 pounds cleaned squid, cut in half-inch rings, tentacles quartered
1 cup Mexican crema or sour cream
1 cup corn-bread crumbs
2 tablespoons unsalted butter, diced

Steps:

  • In a large saucepan, combine the ancho chili, tomatillos, tomatoes, epazote leaves and stock. Season with salt and bring to a boil. Lower the heat and simmer 30 minutes. Set aside.
  • Meanwhile, preheat the oven to 350 degrees. Oil a 10-by-14-inch glass casserole and place the tortilla strips loosely in it. Bake for 30 minutes. Remove the tortilla strips, separating any that stick together. Brush the bottom of the hot casserole again with oil and arrange a layer of tortilla strips lengthwise across the bottom.
  • Cover the strips with about 2 cups of the squid, dot with some of the crema and pour 2 cups of the tomato mixture over the top. Continue making layers, ending with a layer of tortilla strips, crema and the tomato mixture. Sprinkle the top of the casserole with the corn-bread crumbs and dot with the butter. Bake for 1 hour. Allow to set 30 minutes before slicing and serving.

This is a wonderfully spicy casserole of sorts. Because it has cream cheese, strips of tortillas, it could be classified with chilaquiles. This is just amazing! If you need more heat, sprinkle some red pepper flakes in, or some hot sauce of your choice. Tradition calls for either lard or shortening. You can use salad oil, as I do.

4 ounces green chilies, minced
1 cup whipping cream
1 cup tomato puree

MEXICAN-STYLE RICE (SOPA SECA)

"Sopa seca" literally translates to "dry soup". A friend of ours from Mexico served this delicious rice sidedish to us and I enthusiastically went about finding a recipe for it. This is from the cookbook Mexican: Healthy Ways With a Favourite Cuisine by Jane Milton. A more glutinous rice dish than the ever popular Spanish rice. Is this an authentic Mexican recipe? I don't know, but I do know we like this dish!

1 cup long grain white rice
7 ounces fresh tomatoes or 7 ounces canned tomatoes, okay to include the juice
1/2 white onion, coarsely chopped
1 -2 garlic clove, cut up roughly
2 tablespoons olive oil
2 cups vegetable stock (try to use homemade stock for really good flavor!) or 2 cups chicken stock (try to use homemade stock for really good flavor!)
1/2 teaspoon salt
1 fresh chili pepper, of your choice (we like jalapeno for kick)
3/4 cup fresh green peas or 3/4 cup frozen green pea
fresh ground black pepper

Steps:

  • In a large heatproof bowl, pour boiling water over the rice enough to cover. Stir only once, and let stand 10 minutes.
  • Transfer to a colander over the sink and rinse rice under cold water. Drain again. Set rice aside, spread out on a cookie sheet to dry slightly. (I usually do this first thing in the morning.).
  • In the meantime, put the tomatoes, onion, garlic and half of chili pepper into a food processor or blender. Process until smooth like salsa. Set tomato mixture aside.
  • Heat the olive oil over medium heat in a large, heavy saute pan and cook rice until a light golden brown color. Stir constantly so that rice does not burn, scraping bottom of pan with spatula because the rice grains will stick.
  • Next add the pureed tomato mixture and keep stirring over medium heat until all the liquid is absorbed, about 10 minutes. If mixture starts to boil, reduce heat. *Stir in the stock, salt, and green peas. Continue to cook the mixture on low-medium heat stirring occasionally until all liquid is absorbed and rice is tender, another 10-15 minutes. Be careful not to burn.
  • *NOTE: DO NOT stir rice too often after adding the stock or the grains will become too starchy.
  • The original directions say to remove pan from heat, cover with tight-fitting lid; letting stand in a warm place 10 minutes or so. I remove pan from heat, cover and place pan in low oven, at approximately 150-200 degrees. Sometimes I'll let the rice set in the oven for a good hour or longer, as long as the rice grains are tender and rice doesn't dry out too much.
  • Transfer the cooked rice to a serving platter, fluff with fork and serve sprinkled with freshly ground black pepper. Garnish with thinly sliced chilis or serve on side.

This is a very old recipe calling for 1 lb dried beef and dried tomatoes. Takes hours for dried beef to soften, so I have updated to jerky and fresh tomatoes. Enjoy!

6 -8 sticks of dried smoked beef jerky
1 quart boiling water
1 tablespoon lard or 1 tablespoon vegetable oil
3/4 cup rice
3 ripe tomatoes, chopped
1 yellow onion, chopped
1/2 teaspoon salt
1 whole dried chili
1 green sweet pepper, cored seeded and diced (optional)

Steps:

  • In stockpot add boiling water and jerky.
  • Let set 15 minutes. Take out of water and cut in small pieces. Return to pot.Heat on low setting.
  • In frying pan, add lard or oil, add rice and onions and salt. Brown the rice and cook the onion until slightly browned. Add tomatoes and chili pepper. Cook for about 10 minutes. Add all ingredients to stockpot.
  • Simmer about 15 minutes until rice is cooked. Take out whole chili pepper before serving. There should be enough salt in the jerky so you do not need to add except for the 1/2 tsp of salt called for in the recipe. Serve with tortilla chips.

1 large tomato
1 large jalapeno chile
1 small onion, coarsely chopped
1 large garlic clove
6 sprigs of cilantro
1/4 cup vegetable oil
1 7-ounce package small shaped pasta such as melon seeds or alphabet
2 cups chicken stock or water

Steps:

  • Heat a heavy ungreased griddle or cast-iron skillet over medium-low heat until a drop of water sizzles on contact. Place the tomato and jalapeno and cook, turning frequently, until the skin of the tomato and chile is blackened and blistered all over, about 15 minutes. Remove the tomato into a bowl to hold the juices. Place the chile in a small plastic or paper bag; let rest 10 minutes. When they are cool enough to handle, peel off the charred skin. If some tiny blackened bits remain, they will just add to the flavor. Be sure to save all the delicious juices. Place tomato, onion, garlic, cilantro and jalapeno chile in the blender or food processor and process until almost smooth, about 1 minute. Reserve.
  • Place the oil in a small Dutch oven or medium saucepan; heat over medium-high heat until rippling. Add the pasta and cook, stirring constantly, until golden. Remove all but 2 tablespoons of the oil. Add pureed tomato mixture and cook, stirring often, for 2 minutes. Reduce heat to low; add chicken stock and bring to a simmer. Cover Dutch oven and cook for 20 minutes or until the liquid is absorbed. Serve with shredded Parmesan cheese and pico de gallo salsa if desired.

2 tablespoons aji panca paste
1 cup diced tomato (about 1 large tomato or 3 plum tomatoes)
1 pound spaghetti, broken in half
1 cup parsley, chopped

Steps:

  • Add all of the basil leaves and 1 cup of chicken stock to a blender. Puree until smooth. Set aside.
  • In a medium bowl, combine chicken with ground cumin and salt and pepper to taste. Set aside.
  • In a large pot, heat vegetable oil over medium heat. Add annatto seeds and fry for about 6 minutes, stirring often. When the oil is dark orange and the seeds lose their red color, remove pot from the heat. Strain the oil to remove the seeds. Add the strained annatto oil back into the pot. Place the pot back on the burner over medium-high heat.
  • Add the chicken, browning on all sides, then transfer to a clean bowl and set aside.
  • Reduce heat to medium. Add onions and fry until softened. Make sure to scrape up the browned bits from the bottom of the pan. When the onions have softened, add the garlic and fry for one minute, stirring constantly. Add ají panca paste (if using) and stir to combine with the garlic and onions. Fry for one minute, stirring often. Add carrots and fry for one minute.
  • Add the tomatoes to the pot and cook for about 5 minutes, stirring often, or until the tomatoes cook down and the oil separates from the mixture.
  • Add basil puree and stir to combine. Wait for the mixture to come to a simmer. Add salt to taste. (You'll want this a little on the saltier side since you'll be adding pasta to this.)
  • Add the pasta to the pot so they're evenly spread out. Add the rest of the broth and raise the heat to high. Gently nudge the pasta with a wooden spoon around the edges of the pot. Be careful not to break the pasta. You just want to move the pasta around slightly in the sauce. Repeat this every 30 seconds or so until the pasta is pliable, which should take about 5 minutes. Gently stir to coat the pasta with the sauce. Add the chicken to the pot and stir to combine.
  • If the pot has not come to a simmer yet, bring to a simmer. Make sure the pasta is mostly submerged in the liquid.
  • After 5 minutes, uncover the pot and stir, making sure to scrape up any pasta that may have stuck to the bottom of the pot. Reduce the heat to medium-low and cover the pot again. After 5 minutes, uncover the pot and stir again.
  • Continue to cook uncovered over medium-low heat until the pasta is cooked through and has soaked up the liquid, about 5 to 10 minutes. You can opt to have a wetter sopa seca or a dryer sopa seca. It's a matter of personal preference, and one way is not considered more authentic than the other. When the sopa seca has reached the desired consistency, remove from the heat and stir in the parsley. Garnish with the optional avocado cubes.

I first tried Sopa Seca in Cancun a few years ago and liked it so much I ate it every day for a week! I found this recipe on the another site and tweaked it to suit my tastes.

1/4 cup extra virgin olive oil, plus extra
extra virgin olive oil, for pan
12 ounces fideos (bundled vermicelli)
1 medium onion, chopped
3 garlic cloves, minced
1 teaspoon ground coriander
1 teaspoon dried oregano, preferably Mexican
1 teaspoon new mexico chile powder
1 bay leaf
2 (14 1/2 ounce) cans diced tomatoes
1 -2 chipotle chile in adobo, minced
1 1/2 cups chicken broth
1 teaspoon kosher salt
fresh ground black pepper
2 cups shredded cooked chicken
1 cup coarsely grated cheddar cheese (4 ounces)
Mexican crema (optional, or sour cream thinned with a bit milk)

Steps:

  • Preheat the oven to 375 degrees F.
  • Brush a 9-inch square baking dish with oil.
  • Heat the extra-virgin olive oil in a large skillet over medium heat.
  • Add the fideos and cook, turning them with tongs, until golden brown on both sides, about 5 minutes.
  • Transfer the bundles and any broken pieces to a plate.
  • Add the onion to the skillet and cook over medium heat, stirring occasionally, until golden brown, about 8 minutes.
  • Stir in the garlic, coriander, oregano, chili powder, and bay leaf, and cook until fragrant, about 30 seconds.
  • Add the diced tomatoes with their juices.
  • Add the chipotles, increase the heat to high, and cook until thickened, about 2 minutes.
  • Stir in the broth, the toasted fideos, salt, and pepper, to taste.
  • Bring mixture to a boil, reduce heat, and simmer gently, uncovered, breaking up the fideos with a spoon, for about 5 minutes.
  • Stir in the chicken.
  • Remove the bay leaf.
  • Transfer the mixture to the prepared baking dish, sprinkle the grated cheese over the top, and cover loosely with foil.
  • Bake until the cheese melts and the casserole is hot through and through, about 20 minutes.
  • If desired, serve with some crema drizzled over the top.

1 onion, halved and thinly sliced
1 poblano chile pepper, seeded and sliced
1 teaspoon chili powder
1/2 teaspoon ground cumin

8 ounces whole-wheat spaghetti, broken into thirds
1 14-ounce can diced fire-roasted tomatoes
2 cups fat-free low-sodium chicken broth
1 14-ounce can kidney beans, drained and rinsed
1 bunch cilantro, leaves chopped (about 1/2 loosely packed cup)
2 ounces monterey jack cheese, shredded (about 1/2 cup)

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the onion and poblano and cook, stirring occasionally, until slightly soft, about 3 minutes. Add the chili powder, cumin and 1/2 teaspoon salt and cook 2 more minutes. Add the uncooked spaghetti and cook, stirring occasionally, until slightly toasted, about 5 minutes. 4 canned chipotle chiles in adobo, minced
4 cloves garlic, minced
1 (15-oz.) can whole peeled tomatoes in juice, crushed
½ small white onion, roughly chopped
½ cup chicken stock
Kosher salt and freshly ground black pepper, to taste
1 cup crumbled Cotija (available at mexgrocer.com)

2 tbsp. minced cilantro

  • 1. Heat oven to 350°. Grease an 8" x 8" baking dish with oil; set aside. Heat oil in a 12" skillet over medium-high heat. Working in two batches, add pasta and cook, stirring, until lightly browned and toasted, about 4 minutes. Using a slotted spoon, transfer to paper towels to drain; set aside. 2. Purée chipotles, garlic, tomatoes, and onion in a blender until very smooth, at least 2 minutes. 1/2 pound dried coiled egg noodles, such as vermicelli or capellini
1/4 cup vegetable oil
1 yellow or white onion, minced
1 clove garlic, minced
2 fresh Anaheim chiles, seeded and chopped
1 chayote (see note)
2 firm-ripe tomatoes, seeded and chopped
1/2 teaspoon dried oregano
2 cups chicken broth
Salt and pepper

Steps:

  • Note: Chayote is a type of squash; leaving the peel on adds color to this dish, but some find the skin to be "slimy" when cooked so it can be peeled if desired. If chayote is unavailable, use zucchini or crookneck squash.
  • Put noodles in a sealable plastic bag and break into small pieces by rolling with a pin or crushing with your hands. Heat the oil in a large frying pan over medium-high heat and add onion, garlic, and chiles. Cook, stirring often, until vegetables are softened, about 5 minutes. Add noodles and stir until lightly toasted and well coated with oil. Add chayote, tomatoes, oregano, and broth; cover and let simmer until almost dry (about 15 minutes). Season with salt and pepper, and serve.

2 ounces unsweetened butter
1/2 pound dry vermicelli, 2-inch pieces
1 onion, diced
1 pound mushrooms, sliced
3 Italian Roma tomatoes, seeded and diced
1/2 bunch epazote leaves, chopped
2 cups chicken broth
Sea salt, to taste
1 cup coarsely shredded Manchego cheese

Steps:

  • Preheat the oven to 325 degrees.
  • Heat the butter in a large, heavy saucepan, over a medium heat. Add the dry vermicelli. Saute just until golden brown, stirring gently with a wooden spoon. Add the diced onion and cook 2 to 3 minutes. Add the mushrooms, saute until almost dry, then add the tomatoes, epazote, broth, and salt. Heat the sopa to boiling and then simmer.
  • Cover tightly and bake for 45 minutes. Sprinkle the cheese over the top and continue baking, uncovered, 10 minutes longer.
