ORANGE SLICE COOKIES

Soft candy orange slices are a refreshing addition to these crispy vanilla chip cookies from Britt Strain, Idaho Falls, Idaho. To quickly cut the orange candy, use scissors, rinsing the blades with cold water occasionally to reduce sticking.

Number Of Ingredients 12

1 cup orange candy slices
1-1/2 cups sugar, divided
1 cup butter, softened
1 cup shortening
1-1/2 cups packed brown sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 package (10 to 12 ounces) white baking chips
1 cup chopped pecans

Steps:

  • Cut each orange slice into 8 pieces. Roll in 1/4 cup sugar; set aside. In a bowl, cream the butter, shortening, brown sugar and remaining sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in chips, pecans and orange slice pieces., Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks to cool.

This recipe is my own adaptation of a recipe that came from my husband's grandmother. I made a few changes to suit my own family's tastes. These cookies are a big hit with kids as well as adults.

1 cup white sugar
1 cup packed brown sugar
1 cup shortening
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups quick cooking oats
2 cups orange-flavored fruit slice jelly candies

Steps:

  • In large mixing bowl, cream together sugars and shortening till fluffy. Add eggs and vanilla; beat well. Stir together the flour, baking powder, baking soda, and salt. Stir into creamed mixture.
  • Stir in the oats, and the orange candy. NOTE: Dip a pair of kitchen shears into a glass of hot water or spray with a non-stick spray to make snipping the orange slices easier. Using about one tablespoon of mixture for each cookie, roll into one inch balls. Place on greased cookie sheets.
  • Bake in a 350 degree F (175 degrees C) oven for 10 to 12 minutes or until lightly browned. Remove and cool on a wire rack.

1/2 cup butter or margarine, melted
2 cups packed brown sugar
4 eggs, beaten
2 cups Gold Medal™ all-purpose flour
1 lb orange slice candies, finely chopped
1 cup chopped pecans
1 cup powdered sugar

Steps:

  • Heat oven to 350°F. Generously grease 15x10x1-inch pan with shortening or cooking spray.
  • In large bowl, stir together melted butter and brown sugar. Add eggs; mix well. Add flour, chopped candies and pecans; stir until well blended. Pour batter into pan.
  • Bake 25 minutes. Cool 15 minutes. Cut into 9 rows by 4 rows. Cool completely in pan on cooling rack. Remove bars from pan; cut each in half diagonally. Sprinkle bars with powdered sugar.

1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup rolled oats
1 cup flaked coconut
1 cup chopped orange slices candy

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, stir in the oats, coconut and candy orange slices. Drop by rounded spoonfuls onto the prepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Number Of Ingredients 9

2 c cornflakes or 1/2 c crumbs
2 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 c shortening
1 1/2 c brown sugar, firmly packed
2 eggs
1 lb orange slice candy
1/2 c coconut or finely chopped nuts

Steps:

  • 1. Divide flour. Thinly slice orange candies into 1/2 of the flour. And set aside. Finely crush cornflakes and mix with remaining flour. Add baking soda and baking powder and stir well. Cream shortening and brown sugar, add eggs 1 at a time and cream well. Stir in flour and cornflake mixture. Stir in candy and coconut or nuts.
  • 2. Roll into balls or drop by spoonful 1 1/2 to 2 inches apart onto lightly greased cookie sheet.
  • 3. Bake at 350 degrees for 10 to 12 minutes.

3 cups blanched almonds
3 cups confectioners sugar
1 tablespoon orange water
1/4 cup orange juice, plus more, for shaping

Steps:

  • Grind the almonds in a food processor until ground fine. Add in 2 1/2 cups of sugar. Put the almond mixture into a small saucepan on medium high heat. Add in the liquids and simmer until sugar is dissolved. Put aside to cool.
  • Once cool, shape tablespoon-sized portions of the mixture into 1 1/2-inch-high pear shapes, wetting your fingers with the juice. Dredge each cookie in confectioners or granulated sugar to coat. Wrap individually in cellophane or place in a box with a lid. Let stand for at least 3 days before serving.

  • Heat oven to 350°F. In a small bowl, whisk egg, food coloring, vanilla and orange extract. In large bowl, mix butter and sugar cookie mix until well blended. Then, mix in egg and food coloring mixture. Once soft dough has formed, stir in baking chips.

1 1/2 tablespoons water
1 cup shortening (I use butter)
1 cup firmly packed light brown sugar
1/2 cup sugar
2 large eggs
10 candy orange slices, chopped
3/4 cup chopped pecans
1/2 cup flaked coconut
2 cups flour
1 1/2 cups quick-cooking oats
3/4 teaspoon baking powder
2 cups powdered sugar
1/4 cup orange juice

Steps:

  • Stir together soda and 1 1/2 T water until dissolved.
  • Beat shortening (butter) at medium speed with an electric mixer until fluffy. Gradually add sugars, beating until fluffy. Add soda mixture, eggs, candy, pecans and coconut. Beat until blended.
  • Combine flour, oats and baking powder. Gradually add to shortening mixture, beating until blended.
  • Drop by rounded tablespoonfuls onto lightly greased baking sheets.
  • Bake at 350 for 10 to 12 minutes. Remove to wire racks to cool.
  • Stir together powdered sugar and orange juice; drizzle over cookies.
