SPICY ROSEMARY SPAGHETTI
Chile-flavored oil is the secret ingredient to this robust dish, made easy with Muir Glen organic diced tomatoes.

Steps:
- Cook and drain spaghetti as directed on package.
- Meanwhile, in large skillet, cook chopped rosemary and garlic in oil over medium heat about 5 minutes, stirring frequently. Add tomatoes, salt and pepper. Reduce heat to low; cook an additional 15 minutes, stirring occasionally.
- Add cooked spaghetti to tomato sauce in skillet and toss until combined. Serve immediately. Garnish with rosemary sprigs.

- Set Sun Oven out to preheat. Combine all the ingredients in a dark, light-weight, pot. Cover the pot with a tea towel and the lid set slightly ajar. Simmer the sauce in the Sun Oven until the oil separates from the tomatoes, about 1 hour. Serve over pasta.

SOLAR PASTA SAUCE

- Set Global Sun Oven out to preheat. Place oil and garlic in a lightweight pot and place in GSO. When the garlic starts to turn a pale golden color, after approx. 10 minutes, stir in the tomatoes (with their juice and coarsely chopped if using whole tomatoes) and the salt. Cover the pot with a dark tea towel. Cook until the tomatoes have separated from the oil, 20 - 30 minutes. Remove from GSO. Stir in basil. Makes enough sauce for one pound of dry pasta Serve over cooked pasta with freshly grated parmesan cheese. *Look for a brand of tomatoes that contain only one ingredient - tomatoes. No salt, no citric acid, no seasonings. I've never found a non-Italian brand that has none of these and even some of the Italian brands are guilty of unwanted additions, so read the label carefully. Pomi, sold in cartons, is good and available in most U.S. supermarkets. *Radicchio, a type of chicory, can be found in the produce section of many supermarkets.

PASTA WITH SPICY SAUSAGES, TOMATOES, ROSEMARY AND OLIVES

- Warm the oil in a large skillet over medium-high heat. Add the sausage and rosemary; cook, breaking up the meat with a fork, until browned and cooked through, 5 to 7 minutes. Add the garlic, cook 1 minute. Add the tomatoes and stir occasionally until they have broken down and turned into a sauce, 10 to 15 minutes. Stir in the olives for the last 5 minutes of cooking. Add salt to taste, cover and keep warm.
- Meanwhile, bring a large pot of salted water to a boil. Cook the pasta according to package directions. Drain well and toss with the sauce.
