Crave-Worthy Ground Pork Tacos image

Thanks to ground pork, these easy pork tacos come together fast. We highly recommend making your own taco seasoning with chili powder, cumin, smoked paprika, coriander and cayenne pepper. If you're using store-bought taco mix, watch out for adding additional salt. Often the store-bought packages already have salt added so you might not need to add any additional salt.

1 teaspoon olive oil
1 pound ground pork or bulk ground sausage
1 to 2 tablespoons taco seasoning, see our homemade taco seasoning
1/4 cup broth or more as needed (can substitute water)
Salt to taste 8 (6-inch) tortillas
Shredded cabbage, see notes
1 large avocado, pitted and mashed
2 tablespoons sour cream, see notes
Pickled onions, see our pickled onions recipe
Pico de gallo, see our pico de gallo recipe
Tomatillo salsa, see our roasted tomatillo salsa recipe
Lime, quartered

Steps:

  • Heat a wide skillet over medium heat then add the oil. When the oil is hot, press the pork down into the pan, spreading it out as thin as you can so that it browns evenly on one side, about 5 minutes.
  • When it begins to brown on one side, use a wooden spoon to break the pork up into small crumbles. Continue to cook until browned on all sides, about 3 minutes.
  • Toss 1 tablespoon of the taco seasoning with the pork. Taste a small crumble to see if it needs more seasoning and adjust from there - when using our homemade taco seasoning mix, we use 2 tablespoons.
  • Stir in the water and let it come to a simmer. The mixture will thicken and coat the pork. Season with a pinch or two of salt (if you are using packaged seasoning, it may already have salt added).
  • Wrap tortillas, in two stacks, with aluminum foil. Place into the oven for 10 to 15 minutes, or until heated through. Fill each warmed tortilla with pork and your favorite toppings. We particularly love these with mashed avocado spread onto the bottom of each tortilla then topped with pork, cabbage, pickled onions and sour cream.

1 pound spicy pork sausage
1 medium onion, diced
½ (1.25 ounce) package taco seasoning mix
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
½ (8 ounce) can tomato sauce, or more to taste
1 (12 ounce) package corn tortillas, warmed

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef, sausage, and onion in the hot skillet until meat is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in taco seasoning until meat is well coated. Add diced tomatoes and tomato sauce; simmer to heat through. Spoon filling onto tortillas.

Tater Tot Waffles with Saucy Sausage and Feta image

I got the inspiration for this savory waffle from my friend Jen Pelka of The Riddler in San Francisco and New York City. At her Champagne bar, Jen finishes her waffles with luxe toppings, like caviar and shaved truffles. My version, topped with a harissa-laced sausage gravy, comes together in just minutes and is perfect for any meal.

Nonstick cooking spray
16 ounces frozen potato tots, such as Tater Tots, thawed (4 cups; see Cook's Note)
2 tablespoons extra-virgin olive oil
8 ounces bulk breakfast sausage
1 to 2 tablespoons harissa
1 tablespoon all-purpose flour
1 1/2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
Crumbled feta, for serving
Chopped parsley, for serving

Steps:

  • Preheat the oven to 200 degrees F. Heat a waffle iron on high heat; grease with nonstick spray. Spread about half of the potato tots on it. Close and cook on medium-high; fill in any holes in the waffle with more potato tots a few minutes into cooking. Close the iron and continue to cook until browned and crisp, about 8 minutes total. Transfer the waffle to a baking sheet; keep warm in the oven. Repeat with the remaining tots.
  • Meanwhile, heat the oil in a large skillet. Add the sausage and cook, breaking the meat up with a wooden spoon, until cooked through, about 5 minutes. Add the harissa and cook, stirring, until the sausage is coated, about 1 minute. Sprinkle with the flour and cook, stirring, until evenly coated, about 2 minutes. Gradually whisk in the broth and cook until thickened, 3 to 5 minutes; add more broth or water if too thick. Season with salt and pepper.
  • Cut the waffles in half, if desired, and transfer to plates. Spoon the saucy sausage on top. Sprinkle with crumbled feta and chopped parsley. Serve right away.

1 small red onion, finely chopped
1 garlic clove, minced

2 tbsp olive oil
2 medium red onions , cut into thin wedges
1 tsp cumin seeds
2 x 215g cans refried beans
10 cherry tomatoes
1 small packet fresh coriander
200g packet feta cheese
8 small flour tortillas
100g bag iceberg lettuce
2 x 130g tubs ready-made fresh guacamole
8 black olives , optional

Steps:

  • Preheat oven to 190C/Gas 5/fan oven 170C. Heat the oil in a large frying pan, add the onions and cumin seeds and fry until softened.
  • Tip the beans into the pan with the onions and start to warm. Halve the tomatoes, chop the coriander and dice the feta. Add to the pan and gently heat just until bubbling.
  • Place the tortillas directly on the oven shelves and heat for 1-2 minutes until warm and starting to puff. Now get everyone to help themselves and create their own tacos. Pile pieces of lettuce on the warmed tortillas and add a spoonful of the spicy bean and feta mixture. Top with a spoonful of guacamole, and an olive if you like. Fold over and serve.
