This is my mother-in-law's recipe.She was always baking and this is one of my favorite recipes she had.

1 cup creamy peanut butter
1 cup packed brown sugar
1 cup white sugar
1 cup butter or 1 cup margarine, softened
2 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
2 1/2 cups flour

Steps:

  • Cream butter, peanut butter and both sugars together.
  • Add eggs, one at a time, beating well.
  • Add baking soda, powder and vanilla.
  • Stir in flour.
  • Roll into balls, roll in sugar. Flatten cookies, using a fork, in a criss-cross pattern.
  • Bake on ungreased cookie sheet at 350 degrees for 6-7 minutes or adjust to suit your oven and size of cookies!

½ cup margarine, softened
½ cup peanut butter
½ cup white sugar
½ cup packed brown sugar
1 egg
½ teaspoon vanilla extract
¾ teaspoon baking soda
¼ teaspoon salt
1 ¾ cups all-purpose flour

Steps:

  • Combine margarine, peanut butter, sugars, egg, and vanilla. Blend together very well.
  • Add flour, baking soda and salt with mixer. Chill dough 15 minutes in the refrigerator. Roll into balls by hand.
  • Place on sprayed cookie sheet and bake in a preheated 350 degrees F (175 degrees C) oven until edges very lightly browning (about 7 to 10 minutes). Don't overcook. We store them in a plastic storage containers, and they stay soft!

1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups packed dark brown sugar
1 1/4 cups granulated sugar
1 cup butter, softened
3 large eggs
1 cup creamy peanut butter
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 300 degrees F.
  • Mix dry ingredients and set aside.
  • On medium speed, in large bowl, blend sugars; add butter, mix till grainy consistency. Add eggs, peanut butter and vanilla extract; beat till fluffy. On low speed, add flour mixture until barely mixed into butter mixture.
  • Drop by rounded tablespoonsful, 2 inches apart on ungreased cookie sheet. Use a wet or flour coated fork to gently press a crisscross pattern on top of each cookie.
  • Bake until the edges of the cookies are lightly browned, approximately 18 to 20 minutes. Remove to cool on a flat surface.

1/2 cup butter, softened
1 cup plus 2 tablespoons packed brown sugar

4-1/2 cups quick-cooking oats
1 cup miniature semisweet chocolate chips
1/2 cup English toffee bits or almond brickle chips

Steps:

  • In a large bowl, cream the peanut butter, butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in baking soda, vanilla and corn syrup. 1 cup unsalted butter, Softened (but not melted)
1 cup creamy peanut butter (for more texture you could use crunchy. I used all natural organic creamy peanut butter)
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1/2 tablespoon vanilla extract
2 cups whole wheat flour (you could also use all purpose flour)
1 teaspoon baking soda
1 cup semi-sweet chocolate chips
1 cup peanut butter chips
1/2 cup nuts, Chopped (optional)

Steps:

  • Preheat your oven to 325 degrees Fahrenheit.
  • Cream butter, peanut butter, and sugars together until smooth.
  • Add eggs and vanilla, beat well.
  • Stir in flour and baking soda until well combined.
  • Mix in chips and nuts by hand.
  • Using a cookie scooper or a spoon, scoop up 1 1/4 inch balls of dough and place 2'' apart on a greased cookie sheet. (For smaller cookies make smaller balls of course. Do not push them down.).
  • Bake for 15 minutes or until cookies are firm around the edges but do not wait until the tops are brown.
  • Tips:.
  • Wait 3-4 minutes before transferring to wire rack to cool.

I never liked how peanut butter cookies turned out. They were always too greasy-feeling or too hard and never were soft a few days later. After a lot of trial and error batches, now I get rave reviews from these cookies. They are very rich and soft for those who do not like the typical crunchy style of peanut butter cookies. They do take a bit of time to prepare and cook but very much worth the wait. I used reduced-fat peanut butter in both crunchy and creamy to make for a rich-tasting cookie with more peanut flavor and a less greasy feeling on your hand.

1 c peanut butter
3/4 c sugar
1/2 c dark brown sugar, firmly packed
1 egg
1 Tbsp milk
1 tsp vanilla extract

3/4 cup brown sugar
1/4 cup sugar (caster or superfine)

  • Preheat oven to 350F/175C & grease an oven tray.
  • In a large bowl mix sugars together.
  • Add remaining ingredients. NOTE: Do not pour tahini straight from container. Scoop from bottom as mixture separates & you don't want just the oil! If you buy a particularly runny tahini, use 1/4 cup tahini, 3/4 cup peanut butter.
  • Mix ingredients til well combined. If mixture is too sticky/runny add some flour/gluten-free flour to the mix.
  • Spoon 1 1/2 teaspoons of the mixture onto the greased baking tray. TIP: they will spread out while baking so don't crowd tray. You may need to do two batches.
  • With a fork, make a slight indent to flatten cookies.
  • Bake for 8 minutes for soft cookies, >10 (til browned) for crisper cookies.
  • Let cool for 10-15 before touching otherwise they will crumble.

1/2 c evaporated milk
1 c chopped peanuts, i used dry roasted

  • 1. Preheat oven to 350 degrees F. I have listed the ingredients I used to make these cookies. Cream the butter and peanut butter in a large bowl.
  • 2. Beat until mixture is creamy and smooth.
  • 3. Add in both sugars, Vanilla bean paste or extract, and eggs. Then beat until blended together.
  • 4. Add in 1/3 of the sifted flour mixture, and beat, then add in some of the milk and beat again.
  • 5. Chop peanuts until broken into small pieces or use a kitchen hammer or food processor.
  • 6. Now add another 1/3 of the flour, along with the chopped peanuts & milk.
  • 7. Add in the remaining flour.Beat until batter is creamy and smooth. Grease or spray several large cookie sheets with cooking spray, and drop cookie dough onto sheet pans with a teaspoon, or if you prefer larger cookies use a tablespoon. Space at least 2 inches apart.
  • 8. Place in preheated 350 degree F. oven and bake for 12 minutes or less, depending on your oven.

I made this recipe when I was craving peanut butter cookies. Everyone who tried them loved them because they were so soft! I made mine tiny bite size cookies and the recipe made a bunch.

2 1/3 cups flour
1 teaspoon baking soda
1 cup butter
2/3 cup granulated sugar
2/3 cup brown sugar
1/2 cup peanut butter
2 egg whites
2 teaspoons vanilla

Steps:

  • Preheat oven to 325 degrees.
  • Combine flour and baking soda in a small bowl.
  • In a separate bowl, melt 1/2 cup butter in microwave.

These cookies weren't supposed to be! A Zaar chef, who shall remain nameless, ;) posted a recipe for a chocolate cookie with pb chips in it. But instead of listing butter as the first ingredient, she accidentally listed peanut butter. After I had mixed everything together, I knew something was wrong because I ended up with a bowl full of crumbs, not dough. To try and salvage the ingredients, I added the milk, left out the pb chips and formed them like traditional pb cookies. Thankfully, the resulting cookies were soft and tasty so I decided to share. :)

  • Alternately add with the milk to the peanut butter mixture, mixing thoroughly. (How thick your peanut butter is will determine if you need more milk or not.).
  • Roll into one inch balls and place on an ungreased cookie sheet about 2 inches apart.
  • Use a fork to flatten with the traditional crisscross pattern of a peanut butter cookie.
  • Bake at 350° for 8 minutes. Allow to cool on cookie sheet slightly before removing to a cooling rack.

Super soft Peanut Butter Chocolate Chip cookies. This recipe also works well for plain chocolate chip cookies. I have used it a lot of times and it works great. I got the recipe from http://www.rachaelray.com/2014/01/super-soft-peanut-butter-chocolate-chip-cookies Please note that the size of the cookies depends on how many you get. I use a small-ish spoon and can make around 12 cookies with this amount.

1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
3/4 cup creamy peanut butter (not natural-style)
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1 1/4 cups flour
1 pinch salt
1 1/4 cups chocolate chips

Steps:

  • 1. Mix the butter and sugar with a mixer on medium speed until creamy. Add the peanut butter, egg, and vanilla and beat until well- combined.
  • 2. Whisk together the baking soda, flour, and salt in a small bowl, and slowly add the dry ingredients to the peanut butter mixture, mixing until just combined.
  • 3. Fold in the chocolate chips and chill the dough in the refrigerator for at least 30 minutes.
  • 4. When ready to bake, preheat oven to 350°F.
  • 5. Drop tablespoon-size (approximate) balls onto parchment paper-lined cookie sheets, and press each cookie down to slightly flatten.
  • 6. Bake for 9-10 minutes until set and very light in color. They will appear under-done.
  • NOTE: For gas ovens, it might take a little less. for 9-12 cookies, it only takes my oven 6-7 minutes when preheated.
  • 7. Let cool on cookie sheet for 5-10 minutes and transfer to a rack to cool completely.
  • 8. Store at room temperature, tightly covered, for up to 5 days.

Use sweet and creamy processed peanut butter (like Skippy or Jiff.) for the softest, chewiest texture. DO NOT substitute natural peanut butter. The dough is quite soft, so keep it chilled until you are ready to form and bake the cookies.

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups creamy peanut butter (see note)
3/4 cup light brown sugar (packed )
8 tablespoons butter (1 stick unsalted , melted and cooled slightly)
1/2 cup light corn syrup
1/4 cup granulated sugar
1 large egg (plus 1 egg yolk)
1 teaspoon vanilla extract
1/3 cup dry roasted peanuts, chopped fine

Steps:

  • 1. MAKE DOUGH Combine flour, baking soda, and salt in medium bowl. Whisk peanut butter, brown sugar, butter, corn syrup, granulated sugar, egg, yolk, and vanilla until smooth. Stir in flour mixture until just combined. Divide dough in half, wrap with plastic wrap, and refrigerate until firm, about 1 hour.
  • 2. SHAPE cookies Adjust oven racks to upper-middle and lower-middle positions and heat oven to 350 degrees. Line 2 baking sheets with parchment paper. Roll 2 tablespoons chilled dough into 1½-inch balls and place 2 inches apart on prepared baking sheets. Using greased measuring cup, gently press each ball to ¾-inch thickness and top with chopped peanuts, pressing lightly to adhere.
  • 3. BAKE AND COOL Bake cookies until puffed and edges are lightly browned, 12 to 14 minutes, switching and rotating sheets halfway through baking. Cool 5 minutes on sheets, then transfer to wire rack to cool completely. Repeat with remaining dough. Serve. (Cookies can be stored in airtight container for 3 days.).
  • In the great cookie debate, there are chewy people and there are crispy people. But when it comes to peanut butter cookies, it seems that the chewy lovers are always forced to settle for an "inferior" crispy version. We wanted to change that. Here's what we discovered:.
  • Test Kitchen Discoveries.
  • * Switching from shortening to butter made the task of creating a chewy cookie more difficult, but the superior flavor was worth the complication.
  • * Thanks to hydrogenated oils used in manufacturing, processed peanut butter produced a chewier cookie than natural peanut butter.
  • * The chewiest recipes we encountered were sweetened with honey, but we found the flavor overbearing. To retain the moisture of the honey without sacrificing flavor, we used light corn syrup instead.
  • * We cut back on the egg white in our recipe and added more peanut butter to make up for the loss of moisture.
  • * Chopped peanuts on top of the cookies added even more peanut flavor.
  • * Baking soda reacted quickly with the acidic ingredients in the dough to create bubbles that expanded in the heat of the oven. This caused the cookies to puff up and deflate before their structure had time to set, leaving the centers soft and chewy.
  • * We used melted butter instead of creamed butter to ensure that the cookies weren't too cakey.

This is one of my all-time favorite cookies. Soft, thick and just a little chewy, they make the perfect "dunker" for after dinner tea or coffee or with a glass of ice cold milk for a special treat. If you like soft peanut butter cookies, these are for you. Just the perfect balance of sweet and salty.

1 c peanut butter, creamy (not low-fat)
1 stick butter, no substitutes, slightly softened
1/2 c brown sugar
1/2 c white sugar
1 large egg
1 1/2 tsp real vanilla
1 1/2 c flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda

Steps:

  • 1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • 2. Cream together butter and peanut butter until well mixed.
  • 3. Add brown sugar and white sugar and mix on medium for 2 minutes until light and fluffy. Add salt, soda, baking powder, vanilla and egg. Mix until well blended.
  • 4. Slowly add flour until just mixed and dough is a uniform color.
  • 5. Roll into 1 1/2" balls. (Can roll in sugar at this point, but I never do.)
  • 6. Transfer to prepared baking sheet. (12 to a large cookie sheet.) With a large glass or the palm of your hand, flatten just a little bit... not too much! You want them to stay thick and chunky! =)
  • 7. Bake for 7-8 minutes until they just start to brown. Don't over bake. Cool on wire racks topped with paper toweling to cool.
  • 8. ***To keep cookies like these soft for several days, (...if there's any left!) place a piece of white sandwich bread in with the cookies in a large ziplock bag the next day. When the bread starts to become firm, replace with a new piece.
