SODA POP CAKE
A white cake with strawberry gelatin and whipped topping makes a great summer cake that is nice and cool.

- Prepare cake according to package instructions for a 9x13 inch pan. remove from oven and poke holes in the cake with a wooden skewer or toothpick.
- In a medium bowl, combine boiling water with strawberry gelatin. Stir until dissolved and allow to cool slightly. Pour in the strawberry flavored carbonated beverage. Pour slowly over cake, allowing it to soak in. Refrigerate until cool.
- To make the Frosting: In a medium bowl combine pudding and milk. Beat until well blended and thickened. Fold in the thawed whipped topping. Spread on cake. Refrigerate for several hours before serving.

- Prepare cake mix according to package directions, except substitute 1 1/4 cups soda pop and honey for the water. Bake as directed. Remove from oven and set upside-down until cooled.
- Meanwhile to prepare glaze, combine melted margarine, powdered sugar, remaining soda pop, and food coloring in a mixing bowl. Mix until smooth and drizzling consistency. Spread top of cooled cake.

SODA POP CAKE
My daughter-in-law gave me this recipe. So simple, and can used with any kind and flavor of pop and cake mix. Our favorite is orange w/orange buttercream.

- 1. Heat oven to 350, grease and flour, or use baking spray, a 9" cake pan.
- 2. In large bowl, put cake mix and use either a wisk or spoon to make sure any clumps are broken up.
- 3. Slowly add 1 can of soda, stirring as you add so it doesn't foam up. Mix well either by hand or mixer at med. speed for 2 min.
- 4. Pour in pan and bake for 24-30 min. up done. Cake will spring to light touch or toothpick will come out clean. Cool and frost with choice of frosting or dust with powered sugar.
- 5. I have done rootbeer in a white cake mix with coolwhip frosting, Sprite or 7 up in yellow cake with buttercream frosting madewith 7up and cherry cola or cola in a choco. cake mix, with choco. frosting. you get the idea. you can be as creative as you want. This is a great recipe to have little ones do with some help.

- 2. While the cake is still warm, poke holes all over the top of the cake.
- 3. Combine the jello and boiling water, stir to dissolve. Add the strawberry soda to the jello mixture and gently pour over the cake while still warm.
- 4. Add the kool-aid to the vanilla frosting and mix till well blended, spread over the cake.

- I used a deep 13x9 pan. Bake cake according to directions. Let cool, when cooled poke holes into cake with straw.
- Pour whole can of strawberry soda on cake, let soda absorb into cake.
- Pour eagle brand milk onto the cake after the soda. Use a spoon to spread around to edges of cake.
- Empy cool whip onto cake, spread cool whip to edges of cake. Top with fresh strawberries.
- Refrigerate cake for at least 3 to 4 hours before serving. This is best served cold and in the summer.

Steps:
- 1. Heat oven to 350 degrees. Combine flour, baking powder and salt in a medium bowl; set aside. Beat butter and sugar in a mixing bowl with mixer until light and fluffy, 3-5 minutes. Add vanilla. Beat in egg whites one at a time. Mix in food coloring. 2. Beat in flour mixture and soda in three alternating additions, starting and ending with flour. Pour batter into two greased and floured 9-inch pans. Bake until a knife inserted in the center comes out clean, about 35 minutes. Cool 10 minutes. Run a knife around edges to loosen cake; invert cakes onto wire rack. Cool. 3. For frosting, heat the soda in a saucepan over medium-high heat to a boil; cook until reduced to 1/4 cup, about 10 minutes. Cool completely. Beat butter and cream cheese in a bowl with a mixer, 1 minute. Gradually add confectioners' sugar, reduced soda, vanilla and food coloring. Beat until smooth and creamy, adding more confectioners' sugar if too thin. Place one cake layer on a cake plate; spread half of the frosting over the top. Add top layer; cover with frosting. Sprinkle top with grated fruit rind, if desired.
