SNAP PEAS • HOW TO FREEZE
This is a good way to save them for later use. The process includes "blanching" to preserve the color, nutritional value & flavor.

Steps:
- Brake and tear off the stem before pulling the string; discard it.
- In a pot with boiling water, drop in the snap peas and blanche them for 1 1/2 minutes.
- When time is up, using a slotted spoon, transfer them in an ice bath; soak for 2 minutes.
- Remove from the col water and place them on a cutting board or plate lined with paper towels to absorb the excess water. Place them on a baking sheet, leaving space between each snap peas, and transfer to the freezer. When frozen, place them in a re-sealable freezer plastic bag and return them to the freezer until needed.

SAUTEED SUGAR SNAP PEAS
Steps:
- Remove and discard the stem end and string from each sugar snap pod.
- Heat the olive oil in a large saute pan over medium-high heat. Add the sugar snap peas, salt and pepper and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender.
- Place the sugar snap peas in a serving bowl, sprinkle with sea salt and serve.
