2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1-1/2 cups miniature marshmallows
3 tablespoons baking cocoa
1 cup cola
1/2 cup canola oil
1/2 cup butter, cubed
2 eggs, lightly beaten
1/2 cup buttermilk
1 teaspoon vanilla extract
FROSTING:
3 tablespoons baking cocoa
6 tablespoons cola
1/2 cup butter, cubed
3-3/4 cups confectioners' sugar
1 cup chopped pecans, divided

Steps:

  • In a large bowl, sift together the flour, sugar, baking soda, cinnamon and salt. Stir in marshmallows; set aside. In a small saucepan, bring the cocoa, cola, oil and butter just to a boil. Pour over flour mixture; mix well. Stir in the eggs, buttermilk and vanilla. , Pour into a greased 13x9-in. baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool on a wire rack., For frosting, in a large saucepan, bring the cocoa, cola and butter to a boil. Remove from the heat. Stir in confectioners' sugar and 3/4 cup pecans until blended. Cool slightly. Spread over cake; sprinkle with remaining pecans. Cool until frosting is set before cutting.

2 cups quick-cooking oats
Sugar substitute equivalent to 1-1/2 cups sugar
2-3/4 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
3 large eggs
1 cup orange juice
1/3 cup canola oil
2 large carrots, shredded
2 medium apple, peeled and shredded
1 cup raisins
1 cup dried cranberries
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the first six ingredients. Whisk the eggs, orange juice and oil; stir into dry ingredients just until moistened. Fold in the remaining ingredients., Pour into a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares.

This is a favorite here and so easy to make. it was a take of of the "Crock pot German chocolate cake". Only this version the topping stays on top. this recipe is easy to double and bake in a 9x13 pan Eric liked it better also

Number Of Ingredients 7

1/2 pkg white cake mix
1/2 the boxes amounts of water and oil
2 medium eggs
1/3 c coconut
1/4 c chopped pecans
1/3 c brown sugar, firmly packed
4 single size envelopes cocoa mix

Steps:

  • 1. I used a round pirex casserole dish about 8 inches across. Spray oil in pan. set a side
  • 2. In a bowl mix the cake mix 4 cocoa packets, eggs, water, and oil. Beat 2 minutes. then pour into the pan.
  • 3. in a small bowl add the coconut, sugar, and pecans mix well and sprinkle over the cake.
  • 4. Bake for 20 minutes or until done in a 325 degrees oven.
