CINNAMON-CHOCOLATE SNACKIN' CAKE

- In a large bowl, sift together the flour, sugar, baking soda, cinnamon and salt. Stir in marshmallows; set aside. In a small saucepan, bring the cocoa, cola, oil and butter just to a boil. Pour over flour mixture; mix well. Stir in the eggs, buttermilk and vanilla. , Pour into a greased 13x9-in. baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool on a wire rack., For frosting, in a large saucepan, bring the cocoa, cola and butter to a boil. Remove from the heat. Stir in confectioners' sugar and 3/4 cup pecans until blended. Cool slightly. Spread over cake; sprinkle with remaining pecans. Cool until frosting is set before cutting.

This is a favorite here and so easy to make. it was a take of of the "Crock pot German chocolate cake". Only this version the topping stays on top. this recipe is easy to double and bake in a 9x13 pan Eric liked it better also

- 1. I used a round pirex casserole dish about 8 inches across. Spray oil in pan. set a side
- 2. In a bowl mix the cake mix 4 cocoa packets, eggs, water, and oil. Beat 2 minutes. then pour into the pan.
- 3. in a small bowl add the coconut, sugar, and pecans mix well and sprinkle over the cake.
- 4. Bake for 20 minutes or until done in a 325 degrees oven.
