My in-laws raise beef for all their children, so I'm always looking for new ways to cook steak. This is an absolute favorite. It's so easy to fix, and the result is a tender steak smothered in a creamy onion and mushroom sauce. The aroma alone makes my husband's mouth water!

3 tablespoons all-purpose flour, divided
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1-1/2 pounds beef top sirloin steak, cut into serving-size pieces
2 tablespoons vegetable oil
1/2 cup chopped onion
2 cups sliced fresh mushrooms
1 garlic clove, minced
2/3 cup water, divided
2 tablespoons brown sugar
2 tablespoons soy sauce
1 teaspoon Dijon mustard
1/2 cup sour cream
Hot cooked noodles or rice

Steps:

  • In a large resealable plastic bag, combine 2 tablespoons flour, salt, pepper and paprika; add beef and toss to coat. In a skillet, brown beef on all sides in oil. Add the onion, mushrooms, garlic, 1/2 cup water, brown sugar, soy sauce and mustard; cover and simmer for 10-15 minutes or until meat is tender. Remove meat to a serving platter and keep warm., Combine remaining flour and water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in sour cream. Heat gently (do not boil). Serve beef and sauce over noodles.

1/2 C Zestu Ital reduced fat dressing, divided
1 lb well trimmed bonelss beef sirloin steak
1/3 C fat free sour cream
4 1/2 tsp grated parm
1/4-1/2 tsp pepper
1 lg onion thinly sliced

Steps:

  • Pour 1/4 C dressing over seak in resealable plastic bag. Seal bag, turn to coat. Refrigerate 30 min or overnight to marinade. Combine sour cream, 2 Tbs of the remaining dressing, parm cheese and pepper. Refrigerte until serving time. Heat remaining 2 Tbs dressing in large skillet on med heat. Add onions, cook 7-8 min or until golden brown, stirring frequently. remove onions, set aside. Drain steak, discard marinade. Cook steak in same skillet on med heat for 3-4 min on each side for med doneness. Place on cutting board, slice crosswise into thin strips. serve steaks topped with sauceand onion.

4 boneless shell steaks, about 8 ounces each, with the excess fat removed
Salt to taste
4 tablespoons cracked peppercorns, white or black
1 tablespoon vegetable oil
2 tablespoons finely chopped shallots
1/2 cup dry red wine
1/2 cup beef broth, fresh or canned
2 teaspoons tomato paste
2 sprigs fresh thyme or 1/2 teaspoon dried
2 tablespoons butter
2 tablespoons finely chopped parsley

Steps:

  • Sprinkle the steaks with salt.
  • Use a mallet or meat pounder to crush the peppercorns, but not too fine. Sprinkle the peppercorns evenly over the steaks on both sides. Press down with your hands to help the peppercorns adhere to the meat.
  • Heat the oil in a cast-iron skillet large enough to hold the steaks in one layer. When the skillet is hot and almost smoking, add the steaks, cook about 3 minutes until browned, then turn. Cook about 2 to 3 minutes more for medium rare. Remove to a warm platter.
  • Pour the fat out of the skillet, add the shallots and cook, stirring, until they are wilted. Do not brown. Add the wine, broth, tomato paste and thyme. Reduce to half a cup. Add any liquid that may have accumulated around the steaks. Bring to a simmer. Remove from heat and swirl in the butter.
  • Remove the thyme sprigs and pour the sauce over the steaks. Sprinkle with parsley.

2 to 3 tablespoons whole black peppercorns, crushed
1-1/2 teaspoons white pepper
4 boneless beef top loin steaks (12 ounces each)
1 teaspoon salt
1/4 cup butter, melted
1/4 cup Worcestershire sauce
1 teaspoon hot pepper sauce
1/4 cup half-and-half cream

Steps:

  • Combine peppercorns and pepper; rub over both sides of steaks. Chill for 1 hour. , Sprinkle salt in a large skillet; heat on high until salt begins to brown. Add steaks and brown on both sides. Add butter; reduce heat to medium-high. Cook steaks for 1-2 minutes on each side. , Add Worcestershire and hot pepper sauce; cook each side 2-3 minutes longer or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove steaks and keep warm. Add cream to the skillet; cook and stir until smooth. Serve with steaks.

1/2 cup zesty Italian dressing, divided
1/3 cup sour cream
