My Grand Mother always started hers by browning the onions in bacon drippings, but I tried to make mine a little healtier. I like this dish served...

1/3 c extra virgin olive oil
1 c frozen onion blend, you can use fresh onions
40 oz package of fresh frozen okra, or fresh
15 oz can diced tomatoes
1 salt and pepper to taste

Steps:

  • 1. In a large skillet or dutch oven pot, saute onion mixture in Olive Oil until tender.
  • 2. Add okra and water. Simmer on medium until okra defrosts in the pot, about 5 minutes Stir in diced tomatoes and mix well bring to slight boil..
  • 3. Cook on low heat until okra is very tender and most of the liquids are gone, about 30 minutes or until desired fondness. I like mine well done and thick.
  • 4. Serve as a side dish or if you like you can serve over steamed rice. You can also add cooked smoked sausage or cooked chicken 10 minutes before serving to use as a main dish.

I love okra !! yummy. This Recipe has come from watching my aunt as I was a little girl making this delicious concoction, the smell of this cooking oh my!! This recipe comes from south Louisiana, If you have some okra lovers, I suggest doubling this recipe. Also this recipe can be used with squash instead of okra, it is just as delicious as the okra!!! Just don't use the tomatoes with the squash, not unless you would like it that way, but do try the squash once without the tomatoes.

1 lb okra
4 slices bacon
1 small onion
1 (8 ounce) can stewed tomatoes (or 2 or 3 fresh tomatoes)
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne
1/4 teaspoon garlic powder
1/2 teaspoon sugar or 1/2 teaspoon Splenda sugar substitute

Steps:

  • Fry bacon until crisp, remove from skillet, set aside to drain and cool.
  • saute onions in the bacon grease until they turn clear.
  • add Okra to onions,cut up tomatoes or add can of stewed tomatoes.
  • add seasonings, crumble bacon add to skillet. Stir often.
  • cook until okra is no longer slimey.

4lbs of fresh or frozen okra cut into small slices
1lb of smoked sausage (whatever brand you prefer)
2lbs of peeled and devined shrimp
1/2 cup of white onion
1/2 cup of parsley
1/2 cup of green bell pepper
1/2 cup of red bell pepper
3 cloves of garlic minced
6 crabs cleaned and large claws removed
2 tbsp of seasoned salt
1 tbsp each black and red pepper
2 cups of EVOO
3 cups of water
6 cups of medium grain rice
1 tsp of sea salt

Steps:

  • Ok now you will need a nice size skillet so that you can fry your okra in the EVOO over medium high heat until the slime is gone(usually once the okra browns and breaks apart it is done and ready to come out of the pan) allow it to drain as you repeat this step until all of the okra is done. Once the okra has been deslimed, place all the okra in a medium sized deep pot, add all of the fresh season to the pot and allow to cook over medium heat for 20 minutes, then add sausage and crabs cook an add't 20 minutes, then add the remaining ingredients except the rice, water, and sea salt. Allow Okra to cook about 30 minutes on a medium low fire so that all the flavors can fuse together. Meanwhile cook your rice according to the package directions and add sea salt. Remove okra from the heat and wham bam thank you ma'am you have yourself a delicious and hearty meal the whole family will love!

1/2 cup tomato paste
1/2 cup oil
2 cups tomatoes (fresh Creole)
1 cup onion, chopped
1 lb shrimp (peeled and deveined)
1/2 cup bell pepper, chopped
1/2 lb smoked sausage
1 cup celery
1/2 cup shrimp stock
1/4 cup garlic, diced
thyme, fresh, to taste
cayenne, to taste
salt, pinch

Steps:

  • In a 4-quart sauce pan, saute the okra with 1/2 of the oil until tender or slime is cooked out and set aside.
  • In another sauce pan, heat remainder of oil, and saute smoke sausage, onion,.

1/4 cup olive oil
3 cups chopped onions
1/2 cup chopped celery
3/4 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon dried thyme
1 teaspoon flour
1 tablespoon minced garlic
1 bay leaf, crushed
1 (14 1/2 ounce) can diced tomatoes
1/2 cup chicken broth or 1/2 cup water
2 lbs sliced okra, fresh or 2 lbs frozen okra
1 lb peeled deveined shrimp, about 50-60 count

Steps:

  • Heat olive oil in a large skillet over high heat. Add chopped onion and celery and saute, stirring often, about 10 minutes, until onions have browned. Combine salt, peppers, thyme and flour. Sprinkle mixture onto the browned onions; add the garlic and bay leaf, stir and cook for 1 minute. Stir in the diced tomatoes and white wine, and remove the pan from the heat.
  • Place okra in the slow cooker. Pour contents of the skillet over the okra. Stir to mix, cover and cook on LOW for 2 to 2 1/2 hours, until okra is tender but still holds its shape. Stir in the peeled shrimp and cook on LOW an additional 1 hour.
  • Serve over steamed rice.

8 oz fresh mushrooms ,sliced
1 14 oz.can diced tomatoes with juice
1 6 oz. can tomato paste
1 tsp file powder
2 bay leaves
1 tsp salt
1 tsp ground blk pepper
2 Tbsp vegetable oil
1 Tbsp vegetable oil
2 Tbsp flour
1 clove garlic, minced
1 medium onion, finely chopped
1 medium bell pepper, finely chopped
cooked rice

Steps:

  • 1. heat 1 t. oil in a large skillet over med heat, stir in garlic, bell pepper ,and onion, saute until tender.stir in okra, mushrooms,diced tomatoes with juice,tomato paste, file,salt & pepper and bay leaf. cook ,stirring occasionally,for 45 min.
  • 2. heat 2 T.oil in a med skillet over med. heat ,stirring constantly,add flour, and cook 2 to 5 min. until golden roux has formed.

SMOTHERED OKRA BASE FOR OKRA GUMBO OR A SIMPLE SIDE DISH



Smothered Okra Base for Okra Gumbo or a Simple Side Dish image

This is the easiest way to smother okra. Using this method, the okra can be eaten as is or used as a base for Okra Gumbo. To prepare the gumbo, all that needs to be added to this full batch of cooked okra is about 3 to 4 pounds peeled and deveined shrimp, cooking stovetop for about 20 to 25 minutes after returning to a simmer. Should additional liquid need be added, do so towards the end of the 20 minutes by adding broth, water or shrimp stock to reach desired consistency. Serve gumbo over cooked rice.

3 large onions, chopped
2 large green bell peppers, chopped
2 (16 ounce) cans tomatoes with juice (whole, chopped, or crushed)
1/4 cup vegetable oil
3/4 cup water, can substitute chicken broth
5 garlic cloves, minced
1 cup celery (optional)
1 lb ham seasoning, small diced
salt
pepper

Steps:

  • In a large roasting pot, layer alternately the okra, onions, bell pepper, tomatoes with juice, oil, garlic, celery, ham seasoning, water or broth, salt and pepper.
  • Cover pot tightly and place in 425°F oven.
  • Cook 30 minutes, stir and reduce heat to 350 degrees.
  • Cover and cook 2 - 2 1/2 hours, stirring every 30 minutes.
  • When the stringing of the okra ceases, the okra is cooked.
  • Remove from oven and allow to cool.
  • Chill COMPLETELY before packaging and freezing.

Steps:

  • 1. In a large skillet cook and stir onion, sweet pepper, and garlic in hot butter over medium heat about 5 minutes or until tender. Stir in okra, tomato, salt, pepper, and, if desired, cayenne pepper. Bring to boiling; reduce heat. Simmer, covered, about 20 minutes for fresh okra (10 minutes for thawed okra) or until okra is very tender. If desired, sprinkle with bacon.
