2 ounces tequila (recommended: El Tesoro)
1 -ounce Triple Sec
1 -ounce fresh lime juice
3/4 teaspoon simple syrup
Ice cubes
1/2 -ounce mezcal (recommended: Del Maguey "Chichicapa" Single Village Mezcal)

Steps:

  • Place tequila, Triple Sec, lime juice, and simple syrup in a cocktail shaker and shake until combined. Serve over ice in a rocks glass and pour mezcal on top; do not stir the mezcal into the drink, as it should "float" on top.

Mix up a pitcher of this make-ahead margarita for a cookout. Mezcal, tequila's smoky cousin, gives the drink it's signature flavor.

1 cup sugar
Peeled zest of 4 lemons, plus 1 1/2 cups fresh juice
12 ounces mezcal, chilled
6 ounces orange liqueur, such as Cointreau, chilled
Orange rounds, coarse sea salt or margarita salt, and frozen lemon wedges (or ice) for serving

Steps:

  • Syrup: In a saucepan, combine sugar, lemon zest, and 1 cup water. Bring to a boil over medium heat, stirring until sugar has dissolved. Remove from heat; let cool completely. Strain, discarding zest; stir in lemon juice. Cover and refrigerate in an airtight container until cold, at least 1 hour and up to 2 weeks. Makes 2 cups.
  • Margarita: In a pitcher, stir together syrup, mezcal, and liqueur. Cover and refrigerate up to 1 day, if desired. Run an orange round along the rim of each serving glass; dip each rim in salt. Add orange rounds and frozen lemon wedges to pitcher. Pour drinks into prepared glasses; serve with more orange rounds and frozen lemon wedges.

CITRUS MARGARITA WITH SMOKY CHILE SALT



Citrus Margarita with Smoky Chile Salt image

Triple citrus (orange, lemon, lime) margarita with a smoky chile salt rim. Chile salt is hand mixed with fine sea salt, ancho and chipotle chile powders.

1 cup sugar
1 cup water
2 tablespoons fine sea salt
1/4 teaspoon ancho chile powder
1/8 teaspoon chipotle chile powder
Lime wedge
3/4 oz Simple Syrup
1 1/2 oz blanco tequila
1/2 oz clear orange-flavored liqueur
1/2 oz fresh lime juice
1/2 oz fresh orange juice
1/4 oz fresh lemon juice

Steps:

  • To make Simple Syrup, mix sugar and water in 1-quart saucepan. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Remove from heat; let stand 30 minutes. Transfer to storage container. Cover and refrigerate up to 3 days. Makes 1 1/4 cups.
  • To make Smoky Chile Salt, mix sea salt, ancho powder and chipotle powder in small bowl until well mixed. Spread mixture on a small plate.
  • To make margarita, rub outside rim of cocktail glass with lime wedge to moisten; roll in chile salt to coat rim of glass. To cocktail shaker, add 3/4 oz of the simple syrup, the tequila, orange-flavored liqueur, lime juice, orange juice and lemon juice. Fill shaker with ice; cover and shake vigorously. Strain into cocktail glass filled with fresh ice. Garnish as desired.

Say hello to summer's new go-to drink. Instead of the traditional lime juice used in a margarita, we went with lemon juice to soften the smokiness of the mezcal. It's light and refreshing enough for a pool party but has a little edge thanks to its salt and pepper rim.

2 ounces fresh lemon juice, plus wedges for serving
6 ounces mezcal
4 ounces orange liqueur, such as Cointreau
Flaky sea salt and freshly ground black pepper
Ice

Steps:

  • Mix equal parts salt and pepper on a plate. Run a wedge of lemon around the rim of two rocks glasses; dip into salt and pepper mixture. Place mezcal, triple sec, and lemon juice in a cocktail shaker filled halfway with ice; shake until outside is cold and frosty, about 30 seconds. Strain over ice into prepared glasses; serve immediately with lemon wedges.
