Another variation of the classic hamburger! It goes on and on! This will become one of your favorites.Chop up some jalapeños for those with the cast iron stomach. Chipotle peppers are smoked jalapeños. They usually come in cans and have a vinegar based sauce. You can omit the egg if you serve your meat rare or medium-rare.Ole'.To add as note re: the burger patties not holding together, after reviewing all of the reviews, it is my descision not to change the recipe. I make these often and have never had the problem. If recipes like meatloaf, etc.and this one don't hold together, more breadcrumbs are needed. If too dry, add some more liquid such a a few drops of water.

1 lb lean ground beef
1/2 cup of your favorite salsa (or try mine #21831)
1 large egg
0.5 (1 1/4 ounce) package taco seasoning mix
1/3 cup mayonnaise (I use best Foods, or in the east, Hellmans(sp)
1 chipotle chile in adobo (from a 4 oz.can of chipotle peppers in adobo sauce)
sliced tomatoes
chopped fresh cilantro
chopped red onion
monterey jack pepper cheese

Steps:

  • To prepare:.
  • Combine the beef, 1/2 cup salsa, egg (if using) and the 1/2 packet of taco seasoning.
  • Mix in large bowl.
  • Shape into 4 even burgers. Place the mayonnaise and chipotle chile in blender. Cover and blend until nice and smooth.
  • Grill or broil burgers, turning once, until desired doneness. Serve on buns topped with chipolte chile mayonnaise and choice of toppings.
  • Serve with your favorite corn tortilla chips.

Homemade salmon patties are grilled and loaded onto brioche with onions, lettuce, tomatoes and a homemade chipotle mayo.

scallions, minced
jalapeño pepper, seeded and minced
garlic, minced
Traeger Chicken Rub
Salt
Black pepper
minced cilantro leaves
salmon, skin and pin bones removed
Mayonnaise
chipotle peppers in adobo sauce, minced, plus 1 tablespoon sauce
lime, juiced
Salt
Pepper
butter lettuce
pickled red onion
dill pickles
brioche buns, halved

Steps:

  • Combine scallions, jalapeño, cilantro, garlic, Traeger Chicken Rub, salt, and pepper in a food processor and pulse a few times to combine. Scrape down the sides of the bowl and pulse once or twice more.
  • Roughly chop the salmon and place it in the bowl of the food processor and pulse 2 to 3 times.
  • Remove salmon mixture from food processor and form into 5 patties roughly 6 ounces each.
  • Place the patties on a sheet tray and transfer them to the refrigerator for 10 to 15 minutes.
  • When ready to cook, set Traeger temperature to 500°F and preheat, lid closed for 15 minutes.
  • Place salmon burgers directly on the grill grate and cook for 4 minutes on each side, flipping once.
  • For the Chipotle Mayo: Combine mayonnaise, chipotles and adobo sauce, lime juice, salt, and pepper in a small bowl. Mix well and refrigerate until ready to use.
  • To assemble the burgers, place the salmon burger on the bottom bun and top with lettuce, pickled red onions, pickles, and chipotle mayo, or add your favorite toppings. Enjoy!

4 slices bacon, thick slices cooked until crispy and crumbled
1 1/2 lbs ground beef
6 ounces smoked cheddar cheese, grated (about 1 1/2 cups)
1 garlic clove, minced
salt and pepper
4 hamburger buns
2 tablespoons butter, melted
lettuce
tomatoes
onion, slices
pickle, slices
1/2 cup mayonnaise
1 -2 chipotle pepper (from can)
1 tablespoon adobo sauce
1/2 teaspoon sweet paprika

Steps:

  • For mayo: mix mayo, peppers, adobo sauce and paprika in a bowl and whick well.
  • Preheat Grill to High.
  • In a mixing bowl combine bacon, ground beef, cheddar cheese and garlic. Mix well.
  • Wet hands and shape mixture into 4 equal size patties. Place on a plate and refrigerate, covered, until ready to grill.
  • Season each patty on both sides with salt and pepper and place on grill. Close lid and grill for 4-6 minutes. When done, remove burgers to a clean plate and cover to keep warm.
  • Brush cut sides of hamburger buns with melted butter. Place bun, cut side down on grill surface and grill until toasted (1-2 minutes).
  • Serve burgers with lettuce, tomato, onion, pickle and a dollop of Chipotle Mayonnaise.
