1 large head cauliflower, broken into 1-inch florets (about 9 cups)
2 tablespoons olive oil
1 teaspoon smoked paprika
3/4 teaspoon salt
2 garlic cloves, minced
2 tablespoons minced fresh parsley

Steps:

  • Place cauliflower in a large bowl. Combine the oil, paprika and salt. Drizzle over cauliflower; toss to coat. Transfer to a 15x10x1-in. baking pan. Bake, uncovered, at 450° for 10 minutes., Stir in garlic. Bake 10-15 minutes longer or until cauliflower is tender and lightly browned, stirring occasionally. Sprinkle with parsley.

SMOKY SHEET PAN CHICKEN WITH CAULIFLOWER

2 tablespoons olive oil
1 tablespoon white wine vinegar
4 cloves garlic, minced
1 tablespoon sweet smoked paprika (you can replace any portion of this with hot paprika if desired)
1 1/2 teaspoons kosher salt
2 pounds chicken thighs, drumsticks, or halved chicken breasts, all skin-on and bone-in
2 tablespoons olive oil, plus more for the pan(s)
1 1/4 pounds Yukon Gold potatoes (about 4 medium)
1 3/4 pounds cauliflower (1 small or 1/2 very large head)
1/2 large red onion
2 teaspoons fresh thyme leaves, minced
Kosher salt and freshly cracked black pepper
2/3 cup green olives, pitted
8 ounces dried chorizo, cut into chunks (optional)
A few juliennes of red bell pepper
1 tablespoon white wine vinegar
1/2 teaspoon kosher salt
Pinch of granulated sugar
2 tablespoons roughly chopped fresh flat-leaf parsley

Steps:

  • Marinate the chicken: Combine the olive oil, vinegar, garlic, paprika, and salt in a bowl. Add the chicken pieces and toss to coat. Set aside to marinate while you prepare the vegetables (or marinate in the fridge for up to 1 day).
  • Assemble the chicken and vegetables: Preheat the oven to 400 degrees F and line a half sheet pan or 2 quarter sheet pants with foil and coat with 1 tablespoon olive oil.
  • Peel the potatoes if you wish and cut into approximately 3/4-inch chunks. Cut the cauliflower into about 1-inch florets. Cut the onion half into eight thin wedges. Spread the vegetables on the prepared sheet pan and, using your hands, toss with 2 tablespoons olive oil, the thyme, and plenty of salt and pepper. Scatter the olives over the vegetables and the chorizo, if using.
  • Make spaces throughout the pan of vegetables and add the chicken pieces, skin-side up.
  • Bake for 30 minutes, at which point check the tray and toss the potatoes and cauliflower to ensure they're cooking evenly, then return to the oven to bake for another 10 to 20 minutes, or until the chicken and vegetables are cooked through
  • To finish: Toss the pepper strips together with the vinegar, salt, and sugar, and set aside to marinate until needed.
  • When the chicken and vegetables are ready, top with the pepper strips and chopped parsley.

CAULIFLOWER SOUP, CRISPY BRUSSELS SPROUTS AND SMOKY SALMON ROE



Cauliflower Soup, Crispy Brussels Sprouts and Smoky Salmon Roe image

1 ounce salmon roe
1 teaspoon smoked extra-virgin olive oil, plus more for garnish
3 cups cauliflower florets (about 1 small head)
1/2 white onion, coarsely chopped
2 sprigs fresh lemon thyme, plus 1 teaspoon leaves for garnish
1 1/2 quarts whole milk
Kosher salt
Extra-virgin olive oil, for frying
6 or 7 Brussels sprouts, separated into individual leaves
Fleur de sel
1 tablespoon finely chopped chives
Cracked black pepper

Steps:

  • In a small nonreactive dish, stir together the salmon roe and smoked olive oil. Set aside to infuse the roe with smoky flavor.
  • Place the cauliflower florets in a large pot with the onion, thyme sprigs and milk. Slowly bring to a boil over medium-high heat. Season with kosher salt, cover and simmer for 25 to 30 minutes, until the cauliflower is soft. Discard the lemon thyme sprigs. Transfer the cauliflower mixture to a blender and puree until completely smooth. Taste and season with salt.
  • Fill a medium saucepan with 2 to 3 inches of olive oil. Heat to 350 degrees F. Fry the Brussels sprout leaves a few at a time for 30 to 40 seconds, until browned. Drain on paper towels and season with fleur de sel.
  • To serve, ladle the soup into shallow bowls or small shot glasses or espresso cups and garnish with the fried Brussels sprout leaves. Sprinkle with the chives, smoky salmon roe and lemon thyme, and season with fleur de sel, cracked black pepper and more smoked olive oil.

Cut carbs by making fries with cauliflower instead of potatoes. You'll need to plan ahead for this, but they are so flavorful you'll be glad you did.

½ cup mayonnaise
1 tablespoon minced dill pickle
2 teaspoons spicy brown mustard
1 teaspoon Louisiana-style hot pepper sauce
½ teaspoon garlic powder
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper
1 medium head cauliflower, cut into florets
½ cup shredded Cheddar cheese
2 ounces cream cheese
1 large egg
3 tablespoons grated Parmesan cheese
2 tablespoons all-purpose flour
1 tablespoon dried parsley
2 teaspoons seafood seasoning (such as Old Bay®)

Steps:

  • Combine mayonnaise, pickle, mustard, hot sauce, garlic powder, paprika, and cayenne pepper in a small bowl. Mix well and refrigerate remoulade until ready to use.
  • Place cauliflower in a microwave-safe bowl. Microwave for 6 minutes. Transfer to a food processor in batches and process to the consistency of rice. Place riced cauliflower in the center of a clean dish towel and squeeze out as much liquid as possible.
  • Combine Cheddar cheese and cream cheese in a large microwave-safe bowl. Heat for 30 seconds. Stir and heat 30 seconds more. Add riced cauliflower, egg, Parmesan cheese, flour, parsley, and seafood seasoning and stir until evenly combined. Cover and refrigerate dough for 1 hour.
  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Use clean hands to form cauliflower dough into wedge shapes and place on the prepared baking sheet. Lightly spray the top of each wedge with cooking spray.
  • Bake in the preheated oven until crispy, 35 to 40 minutes. Serve with remoulade for dipping.

Roasted Smoky Cauliflower with Limey Yogurt image

2 medium cauliflower heads (use different colors if you can find them), stripped of leaves and main stalk chopped off
1/3 cup extra-virgin olive oil, plus a splash
1 teaspoon ground coriander
1 teaspoon dried mango powder (amchoor, found at Indian stores, optional)
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1 cup Greek yogurt
1 lime, zested, plus a squeeze of juice

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil or parchment.
  • Break up the cauliflower into evenly sized florets about 1-inch long. You can use a knife to divide the large florets if they don't break easily.
  • In a large bowl, whisk together 1/3 cup oil, coriander, mango powder, if using, cumin, salt and pepper, to taste. Add the florets and, using your hands, gently toss to coat.
  • Pour the prepared baking sheet and roast until tender and slightly browned, 30 to 40 minutes, tossing halfway through.
  • Meanwhile, in a small bowl, combine the yogurt with the lime zest, a splash of extra-virgin olive oil, salt, pepper, and a squeeze of lime (as much as you like).
  • Serve the cauliflower with a dollop of yogurt on the side, and enjoy a whole new way to eat cauliflower!

SMOKY ROASTED CAULIFLOWER

1 tbsp extra virgin olive oil
1-2 tsp smoked paprika

Steps:

  • Place a rack in the center of your oven and preheat to 400 degrees F. Line a baking sheet with aluminum foil for easier cleanup, if desired. Pull the leaves off of the cauliflower base. Cut off the lower part of the stem. Cut the head of cauliflower into four quarters. Slice each quarter into 6-8 pieces. You want as many flat surfaces as possible on each floret-- the flat surfaces caramelize best. Caramelization is the key to giving the roasted cauliflower flavor. Give all the florets a thorough rinse in a colander. Shake them dry. Spread out the cauliflower on your baking sheet or pan. Reserve any small bits of cauliflower that have fallen away from the florets in a small bowl. Drizzle the florets evenly with 1 tbsp olive oil. I use a measuring spoon of olive oil, which makes it easier to gauge how much oil I'm using, rather than pouring straight from the bottle. Toss the florets to coat them fully with oil-- I use clean hands for this step. Sprinkle the cauliflower evenly with smoked paprika and salt to taste. Be generous with the salt-- smoked paprika really sings when it's combined with salt. Place the baking sheet into the preheated oven and let the cauliflower roast for 10 minutes. While cauliflower is cooking, drizzle 1/4 tsp of olive oil into the small bowl of reserved cauliflower bits that have fallen away from the florets and toss to coat. Sprinkle them with smoked paprika and salt. You will add these to the sheet a little later so they won't burn. After 10 minutes, remove the baking sheet from the oven. Sprinkle the reserved cauliflower bits onto the baking sheet. Return the baking sheet to the oven. Let the cauliflower roast for 10-20 minutes longer till tender. When it's ready you will be able to pierce it easily with a fork. Keep a close eye on the cauliflower, it can go from brown to burned fairly quickly if you're not careful. Serve hot.

Spicy, Smoky Cauliflower Mash image

4 cups cauliflower florets (about 1 large head)
1 cup grated mozzarella cheese
1/2 cup milk
3 tablespoons sour cream
1 tablespoon lime juice (about 1/2 lime)
1 to 2 teaspoons adobo sauce, to taste
Salt and freshly ground black pepper
Fresh cilantro, chopped, for garnish

Steps:

  • Steam the cauliflower in a steamer insert set over boiling water, covered, until it is very soft, 15 to 20 minutes. Transfer the steamed cauliflower to a blender and puree with the cheese, milk, sour cream and lime juice until smooth, scraping down the sides of the blender jar as necessary. Add the adobo sauce and salt and pepper to taste, pulse a couple more times and transfer to a serving bowl. Sprinkle with cilantro and serve.
