Steps:
- In a small bowl mix the cream cheese and chives. Lay the slices of salmon out flat. Spread a thin layer of the cream cheese mixture on 1 side of each slice salmon. Starting from a short end roll the salmon snugly over the filling. With a blanched leek tie the salmon to secure it. Arrange the "sushi" cream cheese side up. Garnish the top with a small dollop of caviar.

These appetizers are beautiful to look at (very colorful) and wonderful to eat. They are the focal point of any appetizer tray I have ever done. Yes, they are a bit "diddly" but well worth the effort.

Steps:
- Mix cream cheese and wasabi powder together.
- Let sit for 15 minutes.
- Meanwhile, cut smoked salmon into pieces approximately 2x3 inches.
- Spread cream cheese mixture over smoked salmon pieces.
- Place a piece of julienned carrot, celery, zucchini, red, green and yellow pepper on salmon.
- Add several small pieces of chopped red onion.
- Roll up salmon into small bundle and tie with one stem of chive.
- Serve on a platter decorated with thin slices of lemon.

Steps:
- Mix cream cheese and feta. Spread evenly on the tortillas.
- Top evenly with spinach leaves and salmon.
- Roll up tortillas tightly; wrap individually in plastic wrap. Refrigerate at least 2 hours.
- To serve, remove plastic wrap,. Cut each roll up crosswise into 12 pieces. Arrange on serving dish.
- Note: You could also substitute ham for the salmon. And if you cannot find the green tortillas, you can use regular. It's just prettier with the green/spinach tortillas.

Steps:
- Drain, flake and remove skin and bones from salmon.
- In a large bowl combine cream cheese, lemon juice, red onion, horseradish, salt, and liquid smoke.
- Add salmon to cream cheese mixture; mix well.
- Divide mixture between the flour tortillas; evenly spreading out the filling to the edge.
- Sprinkle top of each tortilla with minced dill.
- Spread two tablespoons of (drained) sliced olives down the center of each toritilla.
- Roll up tortillas; wrap each roll in plastic wrap and refrigerate for 2 to 3 hours.
- To Serve: Slice into bit-size pieces.
TORTILLAS ROLL UPS WITH SMOKED SALMON SPREAD
Eat these in the roll for a hearty sandwich or slice them into pinwheels for hors d'oeuvres. This salmon mixture can be served as a spread with crackers, as a filling for mushroom caps or mini pitas, or as a topping for baked potatoes. You can also make roll ups using other filling ingredients try spreading the tortillas with tuna salad or hummos and top with shredded vegetables such as carrots or lettuce.

Steps:
- Cut salmon into pieces and chop in a food processor with horseradish, lemon juice and pepper.
- Blend in ricotta. Add enough sour cream or yogurt to make a spreadable consistency.
- Arrange tortillas on counter in a single layer. Divide salmon mixture and spread over tortillas. Top with watercress, leaving a 1 inch border at the top so the roll will hold. Roll up tightly. Wrap and refrigerate until ready to serve.
- Just before serving, trim off ends of rolls. Slice each roll into 8 pieces. Arrange on serving platter cut side up. For a pretty presentation, slice on an angle. Makes 32 slices.
- A lighter side: Use low fat ricotta or yogurt cheese; be sure to use yogurt instead of sour cream.
