4 avocados
4 ounces smoked salmon
8 eggs
Salt, to taste
Black pepper, to taste
Chili flakes, to taste
Fresh dill, to taste

Steps:

  • Preheat oven to 425°F. Halve the avocados remove the seed. If the hole looks small, scoop out a small bit at a time until it can hold an egg. Arrange the avocado halves on a cookie sheet, and line the hollows with strips of smoked salmon. Crack each of the eggs into a small bowl, then spoon the yolks and however much white the avocado will hold. Add salt and fresh cracked black pepper on top of the eggs, to taste. Gently place the cookie sheet in the oven and bake for about 15-20 minutes. Sprinkle chili flakes and fresh dill on top. Serve warm.

6 avocados
6 ounces smoked salmon
12 eggs
salt
black pepper
red chili pepper flakes
dill, chopped
toast

Steps:

  • Preheat oven to 425 degrees F.
  • Halve all of the avocados and remove pits.
  • Place avocados on a baking sheet and fill the holes with strips of smoked salmon. Crack an egg into each hole, making sure the yolk remains intact. If all of the egg white doesn't fit into the hole, leave some out.
  • Top each egg with salt and fresh black pepper.
  • Bake eggs for 15 minutes or until whites are set.
  • Garnish with red chili flakes and fresh dill.
  • Serve with toast.

knob of butter
2 slices white bread
½ ripe avocado
½ lemon , plus a wedge to serve
handful watercress
1 large egg
few slices smoked salmon

Steps:

  • Heat a large frying pan over a medium heat. Butter both sides of each slice of bread, then cut a large heart (or circle) out of the centre of one slice using a knife or biscuit cutter. Place the slices of bread, including the cut-out piece, into the frying pan and cook for 2 mins until golden. While the bread is cooking, slice the avocado and squeeze over the lemon juice. Toss the watercress in a little lemon juice, too.
  • Flip the bread over, then crack the egg into the cut-out hole. After 1-2 mins, the whole slice of bread and cut-out piece should be golden brown on both sides. Transfer to a plate (eat the cut-out as a chef's perk, if you like!). Cover the pan with a lid, or some foil, and lower the heat. Continue cooking for a further 1-2 mins until the egg is done to your liking.
  • Top the toasted slice of bread with the avocado, smoked salmon and watercress, and season with a twist of pepper. Put the egg-in-the-hole slice on top and serve with an extra wedge of lemon, if you like.

6 eggs
1/4 cup sour cream
1 teaspoon fresh dill, chopped
1/4 teaspoon ground fennel
60 g smoked salmon, finely sliced, cut in 12 squares of about 2 inches
fresh dill
salt and pepper

Steps:

  • In a saucepan, put the eggs and cover with cold water. Bring to boil at high heat. When water begins to simmer, cover the saucepan and remove from the heat. Lest rest for about 12 minutes. Remove the eggs from the hot water and plunge them in cold water to stopped them from cooking. Peel the eggs.
  • Cut the eggs in half and remove the yolks.
  • In a small food processor or with a fork, reduce the egg yolks in a creamy puree with sour cream, chopped dill and fennel seeds. Add salt and pepper.
  • Put the slice of smoked salmon inside half of each egg, it doesn't matter if it exceeds slightly from the egg. With a spoon, stuff the eggs with the egg mixture and garnish with fresh dill.
