1 1/2 cups whole milk
1 cup all-purpose flour
1 tablespoon sugar
1/4 teaspoon coarse salt
4 large eggs
4 tablespoons unsalted butter, melted and cooled
1/4 cup creme fraiche
1/2 teaspoon finely grated lemon zest plus 1 tablespoon fresh lemon juice
Kosher salt and freshly ground black pepper
2 cups fresh ricotta, drained through a cheesecloth for 2 hours
2 teaspoons finely chopped chives
2 teaspoons finely chopped fresh dill, plus dill fronds, for garnish
2 teaspoons finely chopped fresh parsley
1 teaspoon finely grated lemon zest
Kosher salt and freshly ground black pepper
8 ounces paper-thin slices smoked salmon
1 small red onion, halved and thinly sliced
2 tablespoons drained capers in brine

Steps:

  • For the crepes: Combine the milk, flour, sugar, salt, eggs and 2 tablespoons of the butter in a blender and blend until smooth, about 20 seconds. Let the batter rest at room temperature for at least 15 minutes before using or transfer to a container with a lid and let rest in the refrigerator for up to 1 day.
  • For the lemon creme fraiche: Whisk together the creme fraiche, lemon zest and juice and some salt and pepper in a small bowl. Set aside.
  • For the herbed ricotta and topping: Put the ricotta, chives, dill, parsley, lemon zest and some salt and pepper in a medium bowl and work together with a fork.
  • Heat a 10-inch nonstick skillet over medium heat. Lightly brush with some of the remaining melted butter. Add 3 to 4 tablespoons of the crepe batter and swirl the skillet so the batter completely covers the bottom. Cook until the underside of the crepe is golden brown, 2 to 3 minutes. Loosen the edge of the crepe with a rubber spatula, then with your fingertips, quickly flip. Cook 1 minute more. Slide the crepe out of the skillet and repeat with the remaining batter, coating the skillet with butter as needed. Stack the finished crepes directly on top of each other.
  • Lay 8 crepes on a flat surface. Smear about 1/4 cup herbed ricotta in a wide strip down the center of each. Top with 2 or 3 slices of salmon, then gather the sides of each crepe around the filling, leaving most of the filling exposed. Scatter some onion slices and capers over the filling, then drizzle some lemon creme fraiche on top. Scatter some dill fronds on top and serve.

For the smoked marzipan:
1 cup (about 4 ounces) smoked Marcona or smoked regular almonds
3 tablespoons grapeseed oil
2 tablespoons confectioners' sugar
1 teaspoon kosher salt
For the crispy prosciutto:
1/2 cup canola oil
6 ounces thinly sliced prosciutto, trimmed of excess fat
For the ricotta cream:
3/4 cup heavy cream, well chilled
1 cup (about 9 ounces) fresh ricotta*
1/4 teaspoon kosher salt
For the brûléed figs:
16 fresh figs
1/2 cup turbinado sugar**
1 tablespoon fleur de sel
To serve:
1/2 cup extra-virgin olive oil
Juice of 1 lemon
10 cups baby arugula
*If your fresh ricotta is very wet, you'll need to drain it before using. Line a colander with a double layer of cheesecloth and set it over a small bowl. Place the ricotta inside, cover with plastic wrap, and refrigerate overnight. Discard the drained liquid.
**Turbinado sugar is raw sugar that has been steam-cleaned. The coarse crystals are blond in color with a delicate molasses flavor. Demerara sugar, light brown sugar, or raw sugar can be substituted.
Special Equipment
2 large baking sheets; parchment paper; aluminum foil

Steps:

  • Make the smoked marzipan:
  • Arrange a rack in the center of the oven and preheat to 350°F. Line a baking sheet with parchment paper.
  • In a medium bowl, combine the almonds, grapeseed oil, confectioners' sugar, and salt and stir to combine. Spread the mixture on the prepared baking sheet and bake until golden brown and aromatic, 12 to 15 minutes. Transfer to a cutting board to cool then coarsely chop. DO AHEAD: The smoked marzipan can be made in advance and stored, in an airtight container at room temperature, up to 5 days.
  • Fry the prosciutto:
  • Line a large plate with paper towels.
  • In a large heavy skillet over moderately high heat, heat the oil until shimmering. Working in batches, fry the prosciutto, flipping occasionally, until golden brown and crispy, about 30 seconds per side. Transfer as done to the paper-towel-lined plate. DO AHEAD: The prosciutto can be made in advance and stored, in an airtight container at room temperature, up to 4 hours.
  • Make the ricotta cream:
  • In a medium bowl, beat the heavy cream until soft peaks form.
  • In a second medium bowl, combine the ricotta and salt. Whisk about 1/3 of the whipped cream into the ricotta to lighten it. Gently fold the remaining 2/3 of the whipped cream into the mixture until fully incorporated but still light. DO AHEAD: The ricotta cream can be made in advance and refrigerated, covered, up to 1 hour.
  • Make the brûléed figs:
  • Preheat the broiler and line a baking sheet or broiler pan with aluminum foil.
  • Trim the tops off each fig then cut them in half lengthwise. Gently open each fig half to expose its flesh and place, skin-side-down, on the prepared baking sheet or broiler pan. Sprinkle with sugar and broil, about 6 inches from the flame, until the sugar bubbles, about 90 seconds. Just before serving, sprinkle with fleur de sel.
  • To serve:
  • In a small bowl, whisk together the olive oil and lemon juice. Place the arugula in a large serving bowl or platter, drizzle with vinaigrette, and toss to coat. Season with salt and pepper then top with the smoked marzipan, crispy prosciutto, dollops of ricotta cream, and brûléed figs. Serve immediately.

SMOKED MOZZARELLA AND RICOTTA FRITTERS

1 1/2 cups fresh whole milk ricotta
1 1/2 cups shredded smoked mozzarella
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups panko (Japanese bread crumbs)
3 large eggs
3/4 cup all-purpose flour
Vegetable oil, for frying
1 tablespoon fresh chopped thyme leaves
6 tablespoons balsamic vinegar
2 tablespoons lemon juice
2 tablespoons Dijon mustard
1 tablespoon honey
1/2 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • For the Fritters: In a small bowl combine the ricotta, smoked mozzarella, salt, and pepper. In another bowl pour the panko. In a third bowl lightly beat the eggs. Put the flour in a fourth bowl. Line a tray with parchment paper.
  • Scoop a 1 1/2 tablespoon ball of the cheese mixture into the flour and roll to coat. Transfer the ball to the eggs and roll to coat. Transfer the cheese ball to the panko and again roll to coat. Transfer the ball to the parchment-lined tray. Continue with the remaining cheese mixture.
  • Meanwhile heat 3 inches of vegetable oil in a large skillet to 350 degrees F. Fry fritters in batches, being careful not to overcrowd the pan, until golden, about 1 to 2 minutes. Remove with a slotted spoon to paper towel to drain. Sprinkle with thyme. Serve warm with Balsamic Dipping Sauce.
  • For the Balsamic Dipping Sauce: Combine the vinegar, lemon juice, mustard, and honey in a blender. Blend until combined. Add the oil in a steady stream while the machine is running. Season with the salt and pepper. Serve in a small bowl alongside the fritters.

BREAKFAST PIZZA WITH ZUCCHINI PESTO, PROVOLONE, SMOKED RICOTTA AND OLIVE OIL FRIED EGG



Breakfast Pizza with Zucchini Pesto, Provolone, Smoked Ricotta and Olive Oil Fried Egg image

Cornmeal, for the peel
All-purpose flour, for rolling
Four 4-ounce rounds pizza dough (from a Naples-style pizzeria, if possible)
5 to 6 tablespoons olive oil
8 ounces coarsely grated provolone
Kosher salt and freshly ground black pepper
Calabrian chile flakes, to taste
4 large eggs
Zucchini Pesto, recipe follows
1 pound smoked ricotta
Chopped fresh parsley leaves, for garnish
9 ounces small zucchini, trimmed and cut into 1/2-inch pieces
1 cup packed fresh basil leaves
1/2 cup freshly grated Parmesan
1/4 cup lightly toasted slivered almonds
2 cloves garlic, coarsely chopped
1 green onion, chopped
1/2 cup extra-virgin olive oil
1/2 teaspoon finely grated lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Put a pizza stone on or near the bottom of the oven and preheat to 475 degrees F. Sprinkle some cornmeal on a pizza peel.
  • Dust your work surface with a little bit of flour. Working with 2 balls of dough at a time (whatever will fit on your pizza stone), roll out each ball of dough to about 1/8 inch thick and transfer to the peel. Drizzle the top with a few teaspoons olive oil, scatter some of the provolone evenly over the top and season with some salt, pepper and chile flakes. Using the peel, transfer the pizzas to the stone and cook until golden brown and just cooked through, about 10 minutes.
  • While the pizzas cook, fry the eggs: Heat about 1 tablespoon of the olive oil in a small nonstick skillet over medium-high heat. Slip in 2 of the eggs and fry until the edges are brown and crisp, the whites are set and the yolks still runny, about 3 minutes.
  • Remove the pizzas from the oven and spread an even layer of Zucchini Pesto on top, dollop with some ricotta, top with an egg and garnish with some parsley leaves. Repeat with the remaining dough and toppings. Cook the remaining eggs, adding an additional tablespoon of oil to the skillet if needed. Serve hot.
  • Combine the zucchini, basil, Parmesan, almonds, garlic and onion in the bowl of a food processor and process until coarsely chopped. With the motor running, slowly drizzle in the oil and process until emulsified. Season with the lemon zest and some salt and pepper and pulse a few times.

TARTINE WITH SPRING VEGETABLES, SMOKED SALMON, RICOTTA, AND BASIL OIL

1 cup packed fresh basil leaves
1/2 cup olive oil
3/4 cup whole-milk ricotta cheese
Sea salt and pepper
3 pink radishes, finely chopped
1 teaspoon chopped fresh dill
1 teaspoon sherry-wine vinegar
Sea salt
1/4 cup shelled fava beans
1/4 cup fresh peas
12 thin spears asparagus
4 slices country bread, toasted
1/2 cup watercress leaves
4 small smoked-salmon slices
Fleur de sel, for serving

Steps:

  • Make the basil oil: Bring a large pot of salted water to a boil over high heat. Add basil leaves and cook for 15 seconds. Drain and rinse under cold running water; squeeze out excess water. Coarsely chop basil and transfer to the jar of a blender or bowl of a food processor; add olive oil and blend until smooth. Strain through a fine mesh sieve and use immediately or transfer to an airtight container and keep refrigerated for up to 3 days.
  • Make the ricotta spread: Place ricotta in a medium bowl and beat with a fork to make smooth; season with salt and pepper. Stir in radishes, dill, vinegar, and 1 tablespoon basil oil; set aside.
  • Make the tartines: Bring a large pot of water to a boil. Generously salt water and add fava beans and cook for 1 minute. Drain and cool under cold running water. Peel fava beans and set aside. Add peas and asparagus to boiling water; cook for 1 minute and drain. Cool under cold running water, pat dry, and set aside.
  • Spread each slice of toast with ricotta spread. Top with watercress and salmon. Top salmon with asparagus, peas, and fava beans. Drizzle with basil oil and season with a pinch of fleur de sel. Serve.

SMOKED SALMON & RICOTTA WRAPS

4 tortilla wraps
4 large tablespoons of fresh sheep ricotta
rucola leaves, cleaned, about 50 to 60 gr in total
fresh basil leaves, cleaned, 3 basil leaves per wrap, torn in pieces / so 12 basil leaves for 4 wraps
smoked salmon: about 150 to 200 gr for 4 wraps

Steps:

  • Take a plate & place 1 tortilla on it. Put water on all the tortilla. Dip the rest of the excess water off with kitchen paper.
  • Place in the microwave on the highest heat for 40 seconds.
  • Take it out of the microwave. The tortilla wil not be hot.
  • Spread the ricotta all over the tortilla. Spread it out on all the sides.
  • Now, place the smoked salmon on top of the ricotta.
  • Now, on a horizontal line, place the rucola leaves on top of the salmon. Not too much because rucola is nutty & too much is too much. You want a subtile taste! So, spread the rucola evenly.
  • Then, add the 3 pieces of torn basil leaves, just above & under the horizontal line of rucola leaves, evenly spread.
  • Now, instead of rolling it up, fold the left side a bit into the middle of the tortilla & then fold the right side a bit into the middle & then roll the filled tortilla carefully up.
  • Take your rolled up tortilla & turn it over. Cut diagonal in 2.
  • 10. Take a serving plate & plate up! Put 1 half on the plate & place the other half on top!!

1/2 cup ricotta cheese
2 cloves garlic, crushed
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cups (8 ounces) shredded smoked mozzarella cheese
1 packed cup (1-ounce) arugula
Flour, for dusting
1 (13 to 16-ounce) ball pizza dough
Extra-virgin olive oil, for drizzling
2 Roma tomatoes, sliced into 1/4-inch thick slices

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 475 degrees F. Sprinkle a heavy baking sheet (without sides) with cornmeal. Set aside.
  • In a food processor, blend the ricotta, garlic, salt, and pepper until smooth. Add the smoked mozzarella and arugula. Pulse until just combined but still chunky. On a lightly floured work surface, roll out the dough into a 14-inch diameter circle, about 1/4 to 1/16-inch thick. Transfer the dough to the prepared baking sheet and drizzle with olive oil. Spread the ricotta mixture on top leaving a 1-inch border. Arrange the tomato slices on top. Drizzle with olive oil and bake until the crust is golden, about 15 to 16 minutes. 250 g mascarpone cheese
1/4 cup ricotta cheese
1 tablespoon capers, drained and chopped
1/4 cup smoked salmon, chopped into small pieces
1/2 cup grated parmesan cheese
1/2 cup fresh dill, chopped

Steps:

  • stir together the mascarpone, ricotta, capers, salmon and 1/4 cup each of the parmesan and dill.
  • refrigerate for 20 minutes.
  • using two spoons, form the mixture into 1 inch balls and roll half in the remaining parmesan and the other half in the remaining dill.

SMOKED RICOTTA

At Quince in San Francisco, Michael Tusk, the chef, smokes fresh ricotta over fruitwood and spices until it's lightly browned and crumbly. If you have a stove-top smoker, this is the time to use it, but you can improvise using a wok, a round baking rack and a vegetable steamer. (Fruitwood chips are available at barbecuewood.com.)

2 cups whole-milk ricotta
1 1/2 cups kosher salt
1/2 cup sugar
14 juniper berries
1 tablespoon white peppercorns
3 tablespoons coriander seeds
6 bay leaves
6 sprigs rosemary
1 cup fruitwood chips
2 cups ice

Steps:

  • Line a sieve with cheesecloth and set over a bowl. Spoon the ricotta onto the cheesecloth and let drain overnight in the refrigerator.
  • The next day, line the inside of a stove-top smoker (or wok) with aluminum foil so that it comes at least 2 inches up the sides of the pan. Spoon the ricotta from the cheesecloth into a steel flower-petal steamer.
  • Mix together the salt, sugar, juniper berries, peppercorns, coriander seeds, bay leaves and rosemary. Pour this into the base of the smoker. Sprinkle the wood chips around the edges of the spice mixture. Place a small (10-inch) baking rack on top of the spice mixture. Turn the heat to high (and turn on the exhaust fan above your stove), and when smoke appears, spread the ice on the baking rack. Top with the steamer. Cover the smoker (or wok) tightly with either the lid or aluminum foil. Regulate the heat so the mixture is smoking but not scorching. Smoke until the ricotta is golden brown on top and dry enough on the edges to crumble, 15 to 20 minutes. Scrape the ricotta into a bowl and chill immediately.

2 tablespoons heavy cream

Steps:

  • Cut the bacon into cubes and saute in a nonstick frying pan until crisp, remove with a spoon, and then absorb the fat that will be unleashed on a paper towel. Pass the bacon in a food processor until you have a fine powder. Set aside. Grate the cheese and chop a bit 'of onion. Cook the pasta in boiling salted water, when it is cooked, drain, taking care to save a little 'cooking water. In a pan, put the pasta, two tablespoons of cream, a few tablespoons of cooking water, 2 tablespoons smoked ricotta and mix the onion & chive, until the sauce will be released for good. Add the bacon, mix and Serve. Sprinkle with ricotta , chives and decorated with flowers.
