1 medium onion, chopped (3/4 cup)
1 clove garlic, finely chopped
1/2 cup chopped green bell pepper
1/2 lb fully cooked kielbasa sausage, cut lengthwise into fourths, sliced
3 large tomatoes, chopped (2 1/2 cups)
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon salt
1/2 teaspoon Cajun seasoning
1 1/2 cups uncooked instant rice
Red pepper sauce, if desired

Steps:

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion, garlic and bell pepper to skillet. Cover; cook 3 to 5 minutes, stirring once, until vegetables are crisp-tender.
  • Stir in kielbasa, tomatoes, broth, salt and Cajun seasoning. Heat to boiling; stir in rice. Heat to boiling; reduce heat to low. Cook 8 to 10 minutes or until rice is tender. Fluff with fork before serving. Serve with pepper sauce.

1 tbs olive oil
1 tbs butter
1 lb Hillshire Farms Smoked Sausage sliced ¼-inch thick
2 cups broccoli florets
1½ cups cooked brown rice - I use minute rice to save time!
1 tsp garlic powder
1 tsp onion salt
¼ tsp pepper
1/2 tsp salt
1 cup shredded cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat. Add butter and olive oil until melted.
  • Add the sliced smoked sausage and cook for about 5 minutes until sausage begins to brown.
  • Add the broccol and cover. Reduce heat to low and cook about 5 minutes more - stirring occasionally.
  • Add the cooked rice, garlic powder and onion salt to the skillet.
  • Stir well.
  • Add the shredded cheese - stiring well until the cheese is melted.
  • Remove from the heat and serve warm.

Recipe video above. The smoked sausage is the trick here to get great flavour into this quick one pot dinner. Tastes like Jambalaya, minus the cajun flavours, and much faster to make. Everybody loves this!I used kransky sausages but you can use any smoked sausages you want, including chorizo. You can even use raw sausages - see Note 1! Also feel free to use other vegetables - anything that can hold up to 20 minutes on the stove.

3 tbsp extra virgin olive oil
5 garlic cloves (, finely minced)
2 onions ((medium), chopped (or 1 large))
1 yellow capsicum (, cut into 1.5cm / 1" squares)
1 red capsicum (, cut into 1.5cm / 1" squares)
400 g/ 14oz (~3) kransky or other smoked sausages (, sliced 0.5cm thick / 1/4" thick)
3/4 tsp salt
1/2 tsp pepper
3/4 tsp smoked paprika ((sub normal paprika))
1 1/2 cup long grain white rice (, uncooked (Note 2 other rices))
2 1/2 cups chicken stock/broth (, low sodium (or veg stock))
2 cups frozen peas (, thawed)
2 tbsp parsley (, chopped (optional))

Steps:

  • Cook sausage: Heat 2 tbsp oil in a large heavy based pot over medium high heat. Add sausages and cook until golden. Remove with a slotted spoon.
  • Cook onion and garlic: Add remaining 1 tbsp oil. Add garlic and onion, cook for 2 minutes. Add capsicum and cook for 2 minutes until onion is translucent.
  • Add rice and liquid: Add rice, chicken stock, paprika, salt, pepper and the sausage. Stir, bring to boil, then reduce heat to low so it's simmering very gently.
  • Cover and cook: Cover with lid, cook 20 minutes.
  • Add peas and rest: Remove pot from stove. Working quickly, remove lid, add peas, then quickly put the lid back on. Rest 10 minutes - the residual heat with cook the peas.
  • Fluff and serve: Add parsley. Use a fork to fluff the rice. Serve immediately!

2 cups long grain white rice
5 cups chicken stock, divided
2 tablespoons vegetable oil
1 pound smoked pork sausage, sliced
1 clove garlic, minced
1 large onion, chopped
1 stalk celery, chopped
1 medium green bell pepper, chopped
1/4 teaspoon cayenne
1/4 cup chopped fresh parsley leaves
Kosher salt and freshly ground black pepper

Steps:

  • Make the rice, in a medium saucepan combine the rice and chicken stock. Bring to a boil, reduce the heat and simmer until all the stock is absorbed into the rice, about 20 minutes.
  • Meanwhile heat oil in a heavy-bottomed saute pan over medium-high heat. Brown the sausage. Once browned, add the garlic, onion, celery, and green bell pepper. Cook until softened, about 5 minutes. Season with salt and pepper. Add 1 cup chicken stock and cayenne. Cook until the stock has reduced a little. Add the cooked rice and parsley and stir thoroughly. Taste and season with salt and pepper, if necessary.

2 pounds smoked kielbasa or Polish sausage, halved lengthwise and cut into 1/4-inch slices
1/4 cup finely chopped onion
3 bacon strips, finely chopped
3/4 cup honey barbecue sauce
1/4 cup packed brown sugar
1 tablespoon prepared horseradish
2 teaspoons water
2 teaspoons minced garlic
1/2 teaspoon crushed red pepper flakes
Hot cooked rice

Steps:

  • In a Dutch oven, saute the kielbasa, onion and bacon until onion is tender; drain. Add the barbecue sauce, brown sugar, horseradish, water, garlic and pepper flakes. Bring to a boil; cook and stir for 2-3 minutes or until sauce is thickened. Serve with rice. Freeze option: Place cooled individual portions in freezer containers without rice. Freeze up to 3 months. To use, thaw in refrigerator overnight. Place in a saucepan; heat through, gently stirring and adding a water if necessary. Serve with rice.

4 cups small broccoli florets
1 medium red bell pepper, cut into strips
2 large eggs, lightly beaten
1 (12 ounce) package frozen riced cauliflower
¼ cup reduced-sodium soy sauce
1 tablespoon toasted sesame oil

½ teaspoon black pepper
2 tablespoons chopped cilantro

Steps:

  • In a large nonstick skillet, heat 1 tablespoon of the oil over medium-high. Add sausage; cook about 3 minutes, stirring occasionally, until lightly browned.
