1 gallon whole milk
1 pound unsalted butter
2 cups all-purpose flour
1 teaspoon onion powder
21 ounces smoked gouda cheese, shredded
Kosher salt and freshly ground black pepper
3 1/2 pounds macaroni, cooked to al dente

Steps:

  • Heat the milk in a large saucepan over medium-low heat to 185 degrees F.
  • In a separate large pot over medium heat, make the roux by melting the butter and slowly whisking in the flour and onion powder. Once the milk has reached temperature, add the roux and the cheese. Using an immersion blender, carefully blend all ingredients until smooth. Season with salt and pepper. Stir in the macaroni.

4 family-size tea bags, preferably Lipton
1/2 cup brown sugar
3 cloves garlic, smashed
3 sprigs thyme
1 Vidalia onion, thinly sliced
Kosher salt and freshly ground black pepper
3 cups ice cubes
Eight 8-ounce skin-on chicken breasts with drum attached
Vegetable oil, for frying
1 cup prepared sweet tea
12 cups roughly chopped green cabbage
3 cups roughly chopped onions
3 cups roughly chopped green tomatoes
2 cups roughly chopped roasted red peppers
3 cups sugar
2 cups white vinegar
1/4 cup pickling salt
1 tablespoon mustard seeds
1 teaspoon ground turmeric
Pinch of crushed red pepper
1 stick (8 tablespoons) unsalted butter
1/2 cup all-purpose flour
4 cups heavy cream
4 cups whole milk
2 teaspoons liquid smoke
1 teaspoon ground white pepper
18 ounces smoked Gouda, grated
2 cups grated Parmesan
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
24 ounces cavatappi pasta
Panko bread crumbs, for topping

Steps:

  • For the chicken: Bring 16 cups of water to a boil in a large pot and drop in the tea bags. Boil 2 to 3 minutes. Add the brown sugar, garlic, thyme, onion, 1/4 cup salt and several grinds of pepper and return to a boil; cook for 10 minutes. Add the ice cubes to the marinade and refrigerate it until cold, about 1 hour. Add the chicken to the brine and marinate at least 12 hours.
  • Heat enough oil to coat the bottom of a large nonstick skillet over medium-high heat for about 2 minutes. Working in batches, remove the chicken from the brine, pat it dry, and add it, skin-side down, to the pan; reduce the heat to medium. Cook until the skin is golden brown and crispy, about 3 minutes. Reduce the heat to low; flip the chicken and continue cooking until an instant-read thermometer inserted into the thickest part of the breast reads 165 degrees F.
  • Simmer the sweet tea over medium heat until it is reduced by half. It should be thick enough to coat the back of a spoon. Set aside.
  • For the chow chow: Working in batches, pulse the cabbage, onions, green tomatoes and roasted red peppers in a food processor until minced. Combine the minced vegetables with the sugar, vinegar, pickling salt, mustard seeds, turmeric and crushed red pepper in a large pot. Bring to a simmer and cook until the flavors are blended, about 10 minutes. Cool for 30 minutes at room temperature, then refrigerate for at least 5 hours.
  • For the mac and cheese: Preheat the oven to 350 degrees F.
  • Melt the butter in a large saucepan over medium heat. Add the flour and stir to incorporate, creating a blond (very light brown) roux. Add the heavy cream, milk, liquid smoke and white pepper. Cook over low heat, stirring occasionally, until the mixture is thickened and an instant-read thermometer inserted into the sauce reads 145 degrees F., 15 to 20 minutes. Slowly stir in the Gouda and Parmesan until melted. Stir in the thyme and season with salt and black pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the pasta for 7 minutes and drain. Immediately combine the pasta with 2 cups of the sauce in a large baking dish. (Reserve any remaining sauce for another use.) Top the pasta with some panko and bake until the bread crumbs turn golden, about 30 minutes.
  • Divide the chicken among 8 plates, placing it skin-side up. Top the chicken with some chow chow and drizzle with the sweet tea reduction. Serve with a scoop of mac and cheese.

This is a marvelously smooth mac and cheese with a bit of a bite. My family loves this. I got the idea from a recipe made on a popular cooking show, and adapted it to my own recipe and tastes. Delicious contrast if served with a 'sweet' main dish.

1 (16 ounce) package seashell pasta
2 ½ tablespoons butter
2 tablespoons all-purpose flour
2 ½ cups milk
½ teaspoon salt
¼ teaspoon ground white pepper
4 ounces smoked Gouda cheese, shredded

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch casserole dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a small saucepan over medium heat. Stir in the flour and cook until a roux forms. Stir in the milk, salt and pepper; cook, stirring constantly, until sauce is smooth and thick and coats the back of a spoon. Remove from heat and stir in cheese.
  • Combine cooked pasta and cheese sauce; transfer to prepared dish.
  • Bake in preheated oven for 15 minutes, or until heated through.

5 tablespoons unsalted butter, divided
3 teaspoons Frontier Original Organic Seafood Seasoning, divided
1/3 cup whole wheat bread crumbs
8 ounces uncooked rotini (or other pasta)
2 tablespoons all-purpose flour
1 1/4 cups 1% milk
1/4 cup heavy whipping cream
2 tablespoons lemon juice
1/4 cup sour cream
4 ounces smoked Gouda cheese, grated
6 ounces sharp cheddar cheese, grated
6 ounces raw lobster tail meat, cut into pieces (thaw if frozen*)
1 1/2 teaspoons medium grind black pep

Steps:

  • Preheat oven to 400 degrees. Fill a large pot with water and bring to a boil. Meanwhile, melt 1 tablespoon butter. In a small bowl, combine melted butter, 1 teaspoon Seafood Seasoning and bread crumbs. Set aside. Add rotini to the boiling water and cook until al dente, according to package directions. Drain pasta and reserve. In a large saucepan, melt 4 tablespoons butter and add flour. Cook over medium heat, whisking, 3 to 4 minutes, until golden. Gradually add milk to flour mixture, whisking. Bring to a boil, whisking constantly, then reduce heat to low. Add the heavy cream, lemon juice, sour cream, Gouda cheese, cheddar cheese and 2 teaspoons Seafood Seasoning, stirring until cheeses are melted and sauce is smooth. Spray a 9x9-inch pan with nonstick cooking spray and place cooked pasta and lobster in pan. Pour cheese sauce into pan and mix everything together. Sprinkle breadcrumb mixture on top of macaroni and cheese, and then bake for 15 to 20 minutes, until the cheese is bubbly and the breadcrumbs are browned. Sprinkle final dish with black pepper.

1 lb package short pasta (penne, elbow macaroni, etc)
4 tablespoons butter
4 tablespoons all-purpose flour
4 cups milk
½ teaspoon salt
½ teaspoon fresh ground black pepper
½ teaspoon paprika
8-oz block sharp white cheddar cheese, grated and divided (about 2 cups)
8-oz block smoked gouda cheese, grated and divided (about 2 cups)

Steps:

  • Cook the pasta according to package directions, set aside. (don't forget this step!) Melt butter in a large saucepan over medium-low heat; whisk in flour until smooth. Continue whisking and cook for 2 minutes. Gradually whisk in milk. Whisking constantly, cook for 5 minutes or until thickened. Reduce heat to low and stir in salt, black pepper and most of the cheese, reserving about a cup of cheese. Pour the pasta in a lightly greased 8 x 11 x 2 baking dish. Spoon the cheese sauce over the pasta, stirring lightly to even out the sauce in the pan. Sprinkle the top with the remaining cup of cheese and the paprika. Bake at 400° for 20 minutes or until bubbly. Remove from oven, and prepare yourself for out-of-this world macaroni and cheese.
