My daughter and I love the black beans found at a popular fast food chicken restaurant, but I could not find a recipe for that particular taste. I think I came pretty close with this one. A little spicy, a little sweet but oh, so good!!! These beans go great with almost any meat but are especially good with grilled chicken.

1 pound dry black beans, soaked overnight
4 teaspoons bacon drippings
1 onion, chopped
2 teaspoons hickory-flavored liquid smoke
2 tablespoons dark molasses
½ cup packed brown sugar
4 slices pickled jalapeno peppers

Steps:

  • Drain the black beans from their soaking water and place in a slow cooker. Fill with enough fresh water to cover them. Cover and set to High.
  • Heat bacon drippings in a skillet over medium heat. Add onions; cook and stir until tender. Stir this into the beans along with the brown sugar, liquid smoke, molasses and jalapeno slices. Stir to blend, then cover and cook on High for 5 to 6 hours, or until beans are tender.

This classic recipe is adapted from "Tastes Like Cuba," by Eduardo Machado and Michael Domitrovich. The secret is the homemade sofrito, but bottled will do in a pinch.

Number Of Ingredients 15

1 1/2 green peppers, stemmed and seeded
10 garlic cloves
1 pound dried black beans, rinsed and picked over to remove any stones
1 smoked ham hock
2 bay leaves
5 teaspoons salt, or to taste
1/4 cup olive oil
4 slices thick bacon, cut into 1/2-inch pieces
1 Spanish onion, diced
1 jalapeño, stemmed and finely chopped
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
3 tablespoons distilled white vinegar
1 tablespoon turbinado or other brown sugar

Steps:

  • Cut 1 green pepper into 1-inch squares. Smash and peel 4 of the garlic cloves. Put the green pepper and garlic into a large pot with the beans, ham hock, bay leaves and 1 tablespoon salt. Add 2 quarts water and bring to a boil. Cover the pot and simmer until the beans are tender, an hour or more.
  • Meanwhile, make a sofrito. Cut the remaining ½ green pepper into ¼-inch dice. Peel and finely chop the remaining garlic. Heat the olive oil in a very large skillet over medium-high heat. Add the bacon and cook, stirring occasionally, until it starts to brown, about 5 minutes. Add the green pepper and onion and cook, stirring, until slightly softened, about 3 minutes. Add the garlic, jalapeño (leave out the seeds if you don't want it too spicy), oregano, cumin, black pepper and 2 teaspoons salt and stir for another minute. Pour in the vinegar and scrape any browned bits from bottom of pan with a wooden spoon. This is your sofrito.
  • When the beans are cooked, discard the bay leaf. Remove and set aside the ham hock and let it cool. Transfer 1 cup of beans to small bowl, mash them into a paste with the back of a fork and return to the pot. Add the sofrito, then the sugar. Pull the meat from the ham hock, leaving behind any white sinew or gristle. Chop the ham into ½-inch pieces and return it to the bean pot.
  • Stir the beans well and bring to a boil over medium heat, then lower to a simmer and cook, uncovered, for 20 minutes or so, skimming any foam from the top. Taste for salt and serve with white rice.

1 cup black urad beans (saabut urad dal), sorted and washed in 3 to 4 changes of water
1/4 cup , yellow split garbanzo beans, (channa dal), sorted and washed in 3 to 4 changes of water
2 tablespoons kidney beans, sorted and washed in 3 to 4 changes of water
1 tablespoon peanut oil
4 to 6 fresh green chili peppers, such as serrano, skin punctured to prevent bursting
5 whole dried red chili peppers, such as chile de arbol
1 tablespoon peeled minced fresh ginger
1 clove fresh garlic (large), minced
1 tablespoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground oregano leaves
1/4 teaspoon ground fenugreek seeds
1/4 teaspoon ground turmeric
1/8 teaspoon ground asafoetida
1 teaspoon salt, or to taste
1/4 teaspoon liquid hickory smoke
7 to 8 cups water
1 (15-ounce) can tomato sauce
1/2 cup finely chopped fresh cilantro, including soft stems
1 teaspoon dried fenugreek leaves
1/4 cup nonfat plain yogurt, whisked with 1/2 cup water
1/4 teaspoon Garam Masala

Steps:

  • 1. In a bowl, mix together the dals and the kidney beans. Then heat the oil in a medium cast-iron or nonstick saucepan over medium-high heat and cook the green and red chili peppers, stirring, until golden, about 1 minute. (Stand back from the pan in case they burst.) Add the ginger and garlic, then the coriander, cumin, oregano, fenugreek seeds, turmeric, asafoetida, salt, and liquid smoke. Stir about 30 seconds.2. Add the dals and beans and stir constantly over medium-low heat until fragrant and well roasted, about 5 minutes. Transfer to a pressure cooker, add 6 cups of water, secure the lid and cook over high heat until the regulator indicated high pressure, then cook 1 minute more. Reduce the heat to low and continue to cook another 3 minutes. Remove from the heat and allow the pot to depressurize on its own, 12 to 15 minutes. Carefully open the lid and check to see if the beans are very soft with some of the broken if not, add remaining 2 cups water, cover, bring back up to high pressure, and cook under pressure another 1 minute. Or cover and boil until soft, about 30 minutes.3. Mix in the tomato sauce, cilantro, fenugreek leaves, and yogurt-water, and cook, stirring occasionally, over low heat until the dal is thick and creamy, 45 to 60 minutes. Number Of Ingredients 15

1 15-ounce can no-salt-added black beans
8 ounces whole red pepper or 7 ounces chopped ready-cut red pepper (1 1/2 cups)
A few sprigs fresh cilantro to yield 1/4 cup chopped
2 ounces red onion or 1/4 cup chopped
1/2 to 1 whole jalapeño pepper
1 large clove garlic
8 ounces ripe tomato
6 ounces smoked turkey or smoked chicken in a chunk
1 tablespoon olive oil
2 tablespoons raspberry vinegar
2 teaspoons sweet-hot mustard
12 large basil leaves
1 small bunch arugula
Freshly ground black pepper to taste
2 slices country bread

Steps:

  • Wash and drain beans, and set aside.
  • Wash, seed and chop whole pepper; wash, dry and chop cilantro; chop onion; wash, seed and mince jalapeño; mince garlic, and wash tomato and coarsely dice it and smoked turkey.
  • Whisk together the oil, vinegar and mustard in a bowl large enough to hold all of the ingredients; stir in the beans and chopped ingredients.
  • Wash and julienne the basil leaves, and stir in.
  • Remove coarse stems from arugula, wash and dry and break into small pieces. Stir into salad, seasoning to taste with pepper. Mix all the ingredients well to coat with dressing. Serve with bread.
