SMOKED BEEF SHORT RIBS

2 cups packed dark brown sugar
1 cup dark chile powder
1 cup good-quality paprika
1 cup kosher salt
1 cup butcher-grind (coarse) black pepper
2 tablespoons ground cumin
2 tablespoons curry powder
4 plates beef chuck short ribs
Barbecue sauce, for serving (see Cook's Note)

Steps:

  • Heat a smoker to 250 degrees F preferably using Texas post oak wood.
  • Mix the brown sugar, chile powder, paprika, salt, pepper, cumin and curry in a large bowl by hand into a uniform color and consistency. Set aside.
  • Remove the beef ribs from their packaging and rinse under cold water. Trim any large fatty areas off the top of the ribs. Turn the ribs over and remove all of the silver skin. Pack the rub only on the top and sides of the ribs; you want it about 1/8 inch thick.
  • Smoke the ribs until they register a consistent interior temperature of 200 degrees F, roughly 11 hours. Let the ribs rest for 30 minutes, then cut into 2-bone portions. Serve with barbecue sauce on the side.

6 meaty beef ribs

Steps:

  • Prepare barbecue (medium-low heat). Blend first 4 ingredients, 1 tablespoon paprika, and 1 1/4 teaspoons cumin in medium bowl. Season sauce with salt and pepper. Transfer half of sauce to small pitcher and reserve.
  • Sprinkle ribs on all sides with paprika, cumin, salt, and pepper. Grill 20 minutes, turning occasionally. Brush ribs with some of sauce from bowl. Grill until slightly charred and cooked to medium-rare, brushing with remaining sauce in bowl, about 15 minutes. Transfer ribs to platter. INDOOR-SMOKED SALT-AND-PEPPER BEEF RIBS

2 racks beef ribs, 5 to 7 pounds total (see Note 1)
3 tablespoons kosher salt
2 tablespoons freshly cracked black pepper
2 tablespoons brown sugar
1 tablespoon paprika
Red pepper flakes, to taste
1/4 cup finely ground hickory chips, preferably Cameron (see Note 2)

Steps:

  • Place the ribs meat-side down on a baking sheet or cutting board and remove the papery membrane from the back of the rack by inserting a small knife beneath it and levering it. Peel off the membrane and discard.
  • Mix the salt, pepper, brown sugar, paprika and a pinch of red pepper flakes to taste, breaking up the brown sugar with a fork. Using your hands, cover the meat entirely in this rub.
  • Place a stovetop smoker on a burner. (Alternately, you can make one by lining the inside of a large wok with wide, heavy foil.) Place the wood chips on the bottom of the smoker, toward the center. Cover with the drip pan. Set the grate over the drip pan. (If using a homemade wok smoker, place the wood chips on the bottom of the foil-lined wok. Make a drip pan by placing a heavy piece of foil over both the chips and the bottom of the wok, but do not let it rise up the sides. Set a small, round baking rack, about 9 inches in diameter, over the drip pan.)
  • Cut each rib rack in half. Place two rib pieces, meat-side down, on the baking rack, then set a second baking rack - about 11 inches in diameter, if using a wok - over the ribs and place the remaining two rib pieces, meat-side-down, on top. Cover tightly with foil, making sure there is at least 1 inch of space between the foil lid and the ribs. Set the heat to high. When smoke appears, lower the heat to medium-high and smoke for as long as you can stand the smoke, no more than 2 hours. (The tighter the lid, the less smoke will be released.) Transfer the wok outdoors before removing the lid.
  • Preheat the oven to 200 degrees. Set the rib racks on a rimmed baking sheet. Place in the oven and cook for 5 hours. The meat will darken.
  • Cut into individual portions. Serve with napkins and, if you choose, barbecue sauce.

MUSTARD SLATHER
1 cup prepared yellow mustard
1/4 cup dill pickle juice
1/4 cup red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 teaspoon granulated garlic
1 teaspoon ground ginger
RUB
2 tablespoons sea salt
2 tablespoons coarse or restaurant grind black pepper
1 tablespoon granulated garlic
2 teaspoons white cane sugar

Steps:

  • Remove the ribs from the refrigerator and outline the bones with a sharp, pointed paring knife. Combine all the ingredients for the mustard slather in a small bowl and blend well. Brush the slather over the entire surface of the ribs.
  • Combine all the ingredients for the rub in a small bowl and blend well. Sprinkle the rub over the slathered ribs.
  • Heat a cooker to 230° to 250°F. Oil the rack and place the ribs on it bone side down over indirect heat. Cover and cook for 1 to 1 1/2 hours. Turn and cook for 45 minutes more, then turn and cook for another 45 minutes, or until the ribs reach 185°F on a meat thermometer.
  • Transfer the ribs to a cutting board and let them rest, covered loosely with aluminum foil, for 10 to 15 minutes. Cut the ribs into individual pieces and serve with barbecue sauce.

2 beef rib racks, 8 bones each racks
9 cups apple wood chips (6 cups soaked in cool water for 1 hour and drained)
4 teaspoons Chinese five spice powder
2 tablespoons salt
1 tablespoon fresh ground pepper
1 tablespoon lightly packed brown sugar
2 teaspoons chili flakes
2 cups hoisin sauce
3 oranges, juice of
2 tablespoons grated ginger
1 1/2 tablespoons garlic, chopped
1/4 cup dry sherry
2 tablespoons sesame seeds

Steps:

  • To make the rub, combine all rub ingredients in a small bowl, and stir to combine evenly. Rub this mixture evenly all over the ribs using slight pressure of the hand to tear the micro fibers of the meat. Place the rubbed ribs in a large re-sealable bag and place in the refrigerator to marinate overnight.
  • The next day prepare the sauce by combining the Hoisin sauce in a medium bowl; add the grated ginger, garlic, orange juice, sherry and sesame seeds.
  • Strain the wood chips. Place 1 cup of dry wood chips on a large sheet of aluminum foil; mix in 2 cups of the wet until evenly distributed. Close the foil up loosely and make a sealed pouch. Pierce the pouch in several spots top and bottom. Repeat to make 3 pouches in total.
  • Remove the ribs from the refrigerator and allow them to come to room temperature. Prepare barbecue by removing grates, placing a drip pan on one side of grill and place a smoke pouch on the other side. Replace the grates over the drip pan only.
  • Preheat the grill for indirect cooling by leaving the 2 burners off under the drip pan and putting the heat on under the smoke pouch. Allow to heat to a temperature of 220F heat. Once smoke begins to form, lift the lid and place the ribs on the grill over the drip pan where there is no heat. Close lid and smoke for 2 1/2 hours, changing the smoke pouch when the smoke dissipates.
  • After 2 1/2 hours, baste the ribs with the sauce. Close lid and continue to cook for 1 hour basting every 30 minutes. Ribs will be done when you can pull them from the bone with ease.
  • Remove ribs from grill; loosely tent with foil and let rest for 20 minutes before cutting and serving. Serve with leftover Hunan sauce.

1/4 cup minced fresh rosemary
1/4 cup minced garlic

Make the rub: Slit each chile open lengthwise. Shake out the seeds and remove the stems and inner membranes. Tear the chiles into small pieces and grind in a spice or coffee grinder until powdery. Combine the rosemary, garlic and 1/4 cup each ground chiles and salt in a bowl. Mix in the peanut oil. Marinate the ribs: Rub the back of the rib rack with about one-quarter of the spice mixture. Rub the rest on the meaty side. Refrigerate at least 3 hours or preferably overnight. Prepare the grill: Stuff newspaper in the bottom of a chimney starter. Put it on the grill grate and fill with equal parts mesquite charcoal briquettes and mesquite wood chunks. Light the newspaper through the holes in the chimney. The charcoal and wood chunks will ignite. Allow the flames to die down and the coals to ash over. Remove the grill grate and dump the coals out of the chimney into the bottom of the grill, banking them to one side to create an indirect heat zone on the other side. Replace the grate. Smoke the ribs: Lay the ribs, meaty side up, on a sheet of heavy-duty foil over the cooler side of the grill (indirect heat). If there's space between your grill grates, use an extra-long piece of foil and let it hang down to the bottom of the grill, alongside the coals (as shown); this will help direct the smoke up toward the meat. Cover the grill and smoke until tender, 1 hour, 30 minutes to 2 hours, 30 minutes, turning every 20 minutes. You'll need to feed the fire about every 45 minutes: Lift the grate and add about a half chimney's worth of unlit briquettes and wood chunks to the hot coals. Carve the ribs: Transfer the rib rack to a cutting board. Slice into individual ribs and serve immediately.
