SMASHED SWEET POTATOES

4 pounds sweet potatoes (about 6 large)
1/2 cup orange juice
1/2 cup heavy cream
4 tablespoons (1/2 stick) unsalted butter, melted
1/4 cup light brown sugar
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour or until very soft when pierced with a knife. Remove from the oven and scoop out the insides as soon as they are cool enough to handle. Place the sweet potato meat into the bowl of an electric mixer fitted with a paddle attachment and add the orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt, and pepper. Mix together until combined but not smooth and transfer to a baking dish.
  • Bake the potatoes for 20 to 30 minutes, until heated through.

BOURBON PECAN SMASHED SWEET POTATOES

3 medium sweet potatoes, peeled and cut into chunks
3 tablespoons butter, cut into small pieces
1/2 cup chopped pecans, a couple of handfuls
3 tablespoons brown sugar
2 ounces bourbon
1/2 cup orange juice
1/4 to 1/2 teaspoon freshly grated nutmeg
Salt and pepper

Steps:

  • Bring a medium pot of water to a boil. Add sweet potatoes and cook 12 to 15 minutes until very tender. Drain sweet potatoes in a colander. Return pan to medium heat. Add butter to the pan. When butter melts, add nuts and toast for 2 minutes. Add sugar and let it bubble. Add bourbon and cook out alcohol, 1 minute. Add orange juice and the cooked sweet potatoes. Smash with a masher and season the sweet potatoes with nutmeg, salt and pepper.

¼ cup light brown sugar
1 teaspoon ground nutmeg
½ teaspoon ground cinnamon
½ cup heavy whipping cream
½ cup freshly squeezed orange juice

1 teaspoon freshly ground black pepper
3 tablespoons unsalted butter
3 apples (such as McIntosh or Macoun) - peeled, cored, and cut into 8 pieces
3 tablespoons light brown sugar

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add sweet potato, cover, and steam until soft, about 1 hour. Scoop the meat from the skin, transfer to a bowl, and smash using an electric mixer or wooden peg.
  • Stir 1/4 cup brown sugar, nutmeg, and cinnamon into smashed sweet potatoes; allow to cool.
  • Stir cream, orange juice, 1/4 cup unsalted butter, salt, and pepper into smashed sweet potatoes; transfer to a baking dish.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt 3 tablespoons unsalted butter in a skillet over medium-high heat; cook and stir apples and 3 tablespoons brown sugar in the melted butter until lightly browned on both sides, 5 to 10 minutes. Spoon caramelized apples over smashed sweet potatoes.
  • Bake in the preheated oven until heated through, about 20 minutes.

3 whole jalapenos
3 bell peppers, choose 3 different colors
2 1/2 pounds small potatoes, such as baby Yukon gold or small red skin potatoes, coarsely chopped
Salt
4 slices bacon, chopped
2 tablespoons chipotle powder, divided
1 small onion, chopped
1 cup sour cream
1 tablespoon dark chili powder
1 tablespoon ground cumin
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
2 large T-Bone steaks 1 1/2 inches thick, 2 1/2 pounds total
3 tablespoons vegetable oil, 3 turns of the pan, divided
1/4 cup bourbon, eyeball it

Steps:

  • Seed and slice the hot and sweet fresh peppers and reserve.
  • Cover potatoes with water and bring to a boil. Add salt to boiling water. Cook potatoes until tender, 10-12 minutes. Chop and brown bacon in a small skillet and add a tablespoon of chipotle powder and onions. Cook 5 minutes over medium heat until onions are tender. When potatoes are tender, drain and return to hot pot. Add bacon mixture and sour cream to the potatoes. Smash potatoes and season with salt, to taste.
  • While potatoes are working, combine dry spice rub: chili powder, remaining chipotle powder, cumin and grill seasoning. Rub steaks liberally on both sides with the mixture. Heat a 12 to14-inch skillet screaming hot. Add 2 tablespoons of vegetable oil, 2 turns of the pan. It will smoke. Add steaks and do not turn for 6 minutes. Flip and cook another 6 minutes for medium rare, up to 10 minutes for well done. Remove skillet from flame and add bourbon. Return steaks to stove and flame the pan. When the fire goes out, transfer the meat to a large serving platter and pour pan juices over the top. Let meat rest for juices to redistribute. Return pan to heat and add remaining tablespoon vegetable oil to the skillet. Add hot and sweet peppers to the pan and saute them for 5 minutes. Season with salt and pile peppers alongside steaks.
  • Remove meat from the T bones and cut into 4 portions. Top with some peppers and pile some chipotle smashers along side. Spoon drippings and juices over meat and serve.

  • Pre-heat your oven to broil (or grill) settings to high heat. Trim off the ends of the sweet potatoes. Cut each sweet potato into quarters (or 1 1/2 - inch pieces).
  • Boil Method: Place sweet potatoes in a large pot of salted water. Bring to the boil; cook, covered for 20 -25 minutes or until just fork-tender. Drain well.
  • Roast Method: Bake sweet potato pieces for 25-30 minutes, or until they are fork tender. Allow to cool for about 5 minted, or until you can handle them without burning your hands
  • Lightly grease a large baking sheet or tray with cooking oil spray. Arrange sweet potatoes onto the sheet and use a fork to LIGHTLY flatten each piece (they will be soft, so try not to press too hard or they will end up breaking and mashed).
  • Mix together the butter, garlic and parsley. Pour the mixture over each sweet potato. Sprinkle with salt and pepper and lightly spray with olive oil spray.
  • Broil (or grill) until they are golden and crispy (about 15 minutes). Remove from oven, sprinkle over the parmesan cheese and return to the oven until the cheese is melted.
  • Season with a little extra salt and parsley, and serve immediately.

¾ cup brown sugar
1 orange, zested and juiced
⅓ cup bourbon
¼ cup butter
1 teaspoon pumpkin pie spice

2 large sweet potatoes (washed and peeled)
1 1/2 Tbsp butter
1 chipotle pepper in adobo sauce (minced)
1 tsp adobo sauce (from can)

Steps:

  • 1. Cut washed and peeled sweet potatoes into 1 1/2 to 2 inch pieces.
  • 2. Place sweet potatoes in a steamer basket and put in stock pot with water 1 inch below steamer basket. Cover and Steam over medium-high heat for 20 minutes or until fork tender.
  • 3. Take steamer basket with sweet potatoes out of stock pot and empty water.
  • 4. Turn heat to low and dump sweet potatoes into stock pot and add butter.
  • 5. Smash with potato masher slightly* then add chipotle pepper and adobo sauce and mix thoroughly with a spatula or wooden spoon. *Potatoes will be slightly lumpy, you don't want them smooth (unless you like your sweet potatoes that way). 3 lb. fresh sweet potatoes, peeled and chopped.
1/2 cup butter, cut into pieces
1 to 2 Tbs. minced canned chipotle peppers in adobo sauce
1/4 cup heavy cream
Salt to taste

Steps:

  • (1) Bring sweet potatoes and salted water to cover to a boil in a Dutch oven over high heat. Reduce heat to medium, and simmer 10 to 15 minutes or until tender. Drain, reserving 1/2 cup water. (2) Return potatoes to Dutch oven. Add butter, minced peppers, and cream; mash with a potato masher, adding reserved water, a little at a time, for desired consistency. Season with salt to taste. Trafer to a serving bowl.

1/2 c freshly squeezed orange juice
1/2 c heavy cream
4 Tbsp unsalted butter, melted
1/4 c light brown sugar
1 tsp ground nutmeg
1/2 tsp ground cinnamon
2 tsp kosher salt
1 tsp black pepper
3 Tbsp unsalted butter
3 McIntosh or Macoun apples, peeled, cored, and cut into 1/8s
3 Tbsp light brown sugar

Steps:

  • Preheat the oven to 375. Scrub, prick, and bake potatoes until very soft, about 1 hr. Scoop out the insides and mix with next 8 ingredients. Pour into baking dish. Melt butter over med-high heat. Add apples and brown sugar and cook 5-10 minutes, until lightly browned. Place on top of potatoes. Bake 20-30 minutes, until heated through.
