4 chicken thighs, trimmed
1 cup pineapple chunks
¾ cup pineapple juice
½ cup soy sauce
⅓ cup brown sugar
2 tablespoons ketchup
1 clove garlic, minced

Steps:

  • Put flour into a shallow bowl. Dredge chicken thighs in the flour to coat; tapping thighs to remove excess flour.
  • Arrange chicken thighs in the bottom of your slow cooker crock; top with pineapple chunks.
  • Whisk pineapple juice, soy sauce, brown sugar, ketchup, and garlic together in a small bowl; pour over the chicken and pineapple in the slow cooker.
  • Cook on Low for 4 hours.

1 to 2 cloves garlic, finely chopped
1 1/2 cups honey bbq sauce
1 can (20 oz) pineapple chunks, drained and 1/4 cup liquid reserved
1 small red bell pepper, cut into 1-inch pieces
1 small yellow bell pepper, cut into 1-inch pieces
2 tablespoons cornstarch
3 cups cooked rice
Chopped fresh parsley, if desired

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. Place chicken thighs in slow cooker.
  • Top with garlic and sauce. Add pineapple chunks and 1/4 cup reserved liquid.
  • Cover; cook on High heat setting 3 hours or on Low heat setting 5 hours. When 30 minutes are left of cook time, add bell peppers. In small bowl, beat cornstarch and 1/4 cup water. Stir into slow cooker. Cover; cook on High heat setting for remaining time.
  • Serve with rice and parsley.

1/3 cup fresh lime juice
2 teaspoons ground cumin
1 tablespoon smoked Spanish paprika
5 large cloves garlic, crushed
3 bay leaves
1 to 2 habanero chiles, seeded and minced
1 large Spanish onion, diced
3 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup finely chopped fresh cilantro
For serving: Rolls and corn tortillas, shredded red cabbage, sour cream, sliced avocado, chopped fresh cilantro, crumbled queso fresco, lime wedges and hot sauce

Steps:

  • Place the chicken thighs in the base of a slow cooker. Add the diced pineapple, tomatoes, lime juice, cumin, paprika, garlic, bay leaves, habaneros, onion, salt and pepper. Stir ingredients to combine well.
  • Cover and cook until the chicken is fully cooked and can be easily shredded, on high for 4 hours or on low for 6 hours.
  • Remove the bay leaves and discard. Remove the chicken to a platter and use 2 forks to shred. Stir the chicken back into the sauce along with the chopped cilantro.
  • Taste and adjust with additional salt and pepper.
  • Serve with rolls, corn tortillas, and other toppings as part of a sandwich or taco bar.

1 cup dark brown sugar

My husband said it was a wonderful blend of flavors and that I should definitely share the recipe, so here it is. :-)

1 medium sweet onion, cut into 1 inch pieces
2 bell peppers, any color, cut into 1 inch pieces
2 clove garlic, minced
2 large carrots, peeled & sliced into coins
1 chicken bouillon cube, crushed
2 lb chicken thighs, boneless skinless thawed
12 to 16 sugar snap peas
1 can(s) (20 oz.) pineapple chunks in juice, drained juice reserved
SAUCE:
1/3 c dark brown sugar, packed
1/2 of reserved pineapple juice
2 Tbsp rice vinegar (may sub with white vinegar)
1 Tbsp soy sauce
1 Tbsp mirin (rice wine; may substitute with sweet white wine if necessary)
1 tsp sesame oil
1 tsp honey
1 tsp grated ginger (squeeze bottle or tube is fine)
1/16-1/8 tsp chinese five spice powder (depends on personal taste)
THICKENER:
3 Tbsp cornstarch
remaining 1/2 of pineapple juice
SERVE WITH:
rice or noodles prepared according to package directions
GARNISH (OPTIONAL:)
1 or 2 green onions (scallions) or sugar snap peas, thin sliced diagonally
1/2 tsp toasted sesame seeds

Steps:

  • 1. Gather and prep ingredients. Place liner bag in slow cooker, if using (optional.)
  • 2. In bottom of slow cooker, distribute onions, peppers, minced garlic, carrots and chicken bouillon.
  • 3. Place chicken thighs on top of vegetables; distribute pineapple chunks and sugar snap peas over chicken.
  • 4. Cover with lid; set cooker on high temp.
  • 5. Combine all of the sauce ingredients; pour half of the sauce over chicken. Recover cooker with lid. Cook on high for approximately 4 hours until chicken is cooked through and "fall apart" tender.
  • 6. Combine remaining sauce with remaining pineapple juice; refrigerate until ready to add thickener.
  • 7. About a half an hour before serving, prepare rice or noodles according to package directions, if using.
  • 8. When chicken is cooked, leave temperature on high. Mix together cornstarch and remaining pineapple juice/sauce mixture until smooth.
  • 9. Gradually pour and stir thickening mixture into slow cooker. Continue stirring until liquid is thickened.
  • 10. Plate and garnish as desired. Serve immediately. Refrigerate leftovers.
