1 (16 ounce) jar salsa
1 (1.25 ounce) package dry taco seasoning mix
1 lime, juiced
3 tablespoons chopped fresh cilantro
3 pounds skinless, boneless chicken breast halves

Steps:

  • Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.

3 -4 lbs broiler chickens
1 teaspoon salt
1 teaspoon pepper
1 lime
1/2 cup fresh cilantro stem
2 garlic cloves, peeled

Steps:

  • Wash and dry the chicken.
  • Reserve the giblets and neck for another use.
  • Season the chicken inside and out with salt and pepper.
  • Place in the slow cooker breast side up.
  • Squeeze the juice of the lime over the chicken.
  • Put the remains of the lime, cilantro and garlic inside the cavity.
  • Cover and cook on the low setting for 6-7 hours or until an instant read thermometer reads 180 degrees Fahrenheit in the thickest part of the thigh.
  • Transfer the chicken to a platter.
  • Pour the liquid from the cooker into a separate container and refrigerate for another use.

This has quickly become one of our favorite dinners in our house. My husband and I add jalapenos and hot sauce. My son loves these topped with cheese and sour cream as well. It's from a bunch of different recipes; I just took out what I loved most about each one and threw it together. It's quick and easy, and with the leftover chicken (when there is any) I make a pot pie or chicken and dumplings.

3 sheets aluminum foil, rolled into balls
1 (5 pound) whole chicken
1 teaspoon seasoned salt (such as Pappy's Choice®), or more to taste
8 cloves garlic, or more to taste, crushed
8 limes, quartered
½ cup white wine
20 corn tortillas, warmed
1 bunch cilantro, chopped

Steps:

  • Put aluminum foil balls in the bottom of a slow cooker crock.
  • Season chicken with seasoned salt. Rub half the garlic on the inside surfaces of the chicken's cavity and leave them inside. Squeeze 8 lime quarters into the cavity; drop the squeezed quarters into the cavity. Place the chicken atop the foil balls. Squeeze 8 more lime quarters over the outside of the chicken; drop squeezed lime quarters into the bottom of the crock. Rub remaining garlic over the outside of the chicken and put garlic in the bottom of the crock. Pour white wine into the crock.
  • Cook on Low until the chicken meat pulls apart easily, 5 to 6 hours.
  • Remove chicken to a cutting board. Remove meat from bones and shred completely. Serve chicken on warmed tortillas with cilantro for topping and lime wedge.

1 carton (32 oz) Progresso™ chicken broth (4 cups)
1 tablespoon adobo sauce (from can of chipotle chiles)
1 can (15 oz) Progresso™ black beans, drained, rinsed
1/2 cup unsweetened coconut milk (not cream of coconut)
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons fresh lime juice
Hot cooked rice
Fresh cilantro leaves
Finely chopped radishes
Lime wedges

Steps:

  • Spray 5-quart oval slow cooker with cooking spray. Sprinkle chicken evenly with Caribbean rub; set aside.
  • In 12-inch skillet, heat 1 teaspoon of the oil over medium-high heat. Cook onion and garlic in oil 3 minutes, stirring occasionally, until tender. Transfer mixture to slow cooker using slotted spoon. In skillet, heat remaining 3 teaspoons oil over medium-high heat. Cook chicken in oil 6 to 8 minutes, turning occasionally, until browned. We love shredded chicken...I will often make large batches of it and freeze in meal size portions. This makes chicken tacos, enchiladas and other favorite chicken meals all that much faster to get on the table. For this chicken, I used what I had on hand in the freezer. I dropped a package of chicken breasts and a package of chicken thighs into the slow cooker...a good mix of white and dark meat! Along with some lime juice, olive oil and big hunks of cilantro and bam...Seriously y'all...the cilantro flavor totally infused into the chicken as it cooked all day. Perfect for using in your favorite Mexican chicken dish. Also, I should add that I got a large batch of cilantro for just $0.29!

1 tablespoon olive oil
3 limes, juiced
1 onion, chopped
1 lb chicken breast, boneless skinless

This cilantro lime chicken recipe is one you are sure to add to your meal plan frequently. It's super easy to make!

Number Of Ingredients 8

2 lbs. boneless skinless chicken breast ((can use chicken thighs))
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. cumin
2 cloves garlic (minced)
1/4 cup freshly chopped cilantro ((or one tablespoon dried cilantro))
1 lime
4 Tbsp. butter (sliced)

Steps:

  • Place chicken breasts into your slow cooker.
  • Sprinkle the chicken with the salt, pepper, cumin, cilantro, and garlic. Cut the lime in half and squeeze over the chicken. Place the sliced butter over the chicken.
  • Cook on high for 3-4 hours or on low for 6 hours. You'll know your chicken is done when it shreds very easily.
  • After the cooking time is done, remove the chicken from the slow cooker and place on a cutting board to shred.
  • Using a fork and knife (or two forks), shred all of the chicken thinly. Alternatively, you can shred with two forks right in your slow cooker.
  • Place all shredded chicken back inside the slow cooker for additional cooking. Add in additional lime wedges if you desire for extra flavoring.
  • When the cooking time is done you can serve as is. If you are making tacos or burritos, it's best to drain off the excess juices before using for it can make tortillas soggy.
  • Serve immediately. Garnish with additional cilantro and lime if desired.
