This Slow Cooker Chicken Chow Mein recipe has been one of our favorites for many, many years. It's time to dust off that slow cooker and make your house smell amazing all day. And then dig into one of the best homemade chicken chow mien dishes you'll ever have. This recipe can be doubled for 5 or 6 quart slow cookers.

1 tbsp olive oil
1 1/2 lbs skinless, boneless chicken breasts (cut into 1-inch bite-size pieces)
3 large carrots (thinly sliced, or julienned)
4 green onions (aka scallions, thinly sliced, green and white parts)
3 celery stalks (sliced)
1 tbsp fresh ginger (grated or finely chopped)
2 garlic cloves (minced)
8 oz. bean sprouts
1/3 cup soy sauce (low sodium works well)
1/4 tsp red pepper flakes
1 8 oz. can of water chestnuts (drained and chopped)
1 cup chicken stock
1 tbsp granulated sugar
1/4 cup cornstarch
1/2 cup cold water
Cooked chow mein noodles (or rice, for serving.)

Steps:

  • Heat oil in large skillet over medium-high heat.
  • Add chicken pieces and cook until lightly browned all over.
  • Place cooked chicken into slow cooker.
  • Add remaining ingredients, except cornstarch and water (don't include the noodles/rice); stir to combine.
  • Cover and cook on Low for 6 to 8 hours.
  • Turn to High. Meanwhile, in a small bowl, stir cornstarch into cold water until dissolved.
  • Stir the cornstarch slurry into the slow cooker and place the cover slightly ajar.
  • Cook until thickened, about 15 to 20 minutes.
  • Serve with cooked chow mein noodles, or rice.

8 boneless skinless chicken thighs (about 1 1/2 lb)*, trimmed of excess fat, cut into 1-inch pieces
2 medium carrots, sliced diagonally (1 cup)
2 medium stalks celery, coarsely chopped (1 cup)
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 can (8 oz) sliced water chestnuts, drained
1 cup chicken broth
2 tablespoons soy sauce
1/2 teaspoon finely chopped gingerroot
2 tablespoons cornstarch
3 tablespoons cold water
1 cup sliced fresh mushrooms (3 oz)
1 cup snow pea pods (4 oz)
Chow mein noodles, if desired

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil about 5 minutes, turning once, until brown.
  • Spray 3 1/2- to 6-quart slow cooker with cooking spray. In slow cooker, place carrots, celery, onion, garlic and water chestnuts; top with chicken. In small bowl, mix broth, soy sauce and gingerroot; pour over chicken. Cover; cook on Low heat setting 6 to 8 hours.
  • In small bowl, mix cornstarch and water until smooth; stir into chicken mixture. Stir in mushrooms and pea pods. Increase heat setting to High. Cover; cook 15 minutes longer. Serve over noodles.
