I believe this one carries a good challenge to all of those out there. This has been a favorite always of my family and friends, so let me know what you think and let's create a melting pot for the perfect slow cooker chili dish. Serve topped with sour cream, shredded Cheddar cheese, chopped chives, hot sauce, and sliced jalapenos (or habanero if you like the heat).

1 tablespoon olive oil
½ large onion, coarsely chopped
2 teaspoons finely chopped fresh garlic

  • Transfer beef mixture to a slow cooker. Stir in black beans, kidney beans, and diced tomatoes and chiles. Cover and cook on Low, stirring occasionally, 8 to 10 hours.

Steps:

  • Combine the tomatoes, beans, onion, garlic, and spices in your Crock Pot. If you're going for the full-on meat version, go ahead and brown your pound of hamburger in a separate frying pan, drain, and add that now, too. You'll add meat later if you're going half veggie/half carnie.
  • Cook on low for about 7 - 9 hours. But it's pretty forgiving if you need to cook it for longer.
  • Boil the macaroni according to package directions, but cut the time short by a minute or so to make sure it's just nice and al dente, or else the noodles might swell up to epic and less appetizing proportions in the finished product.
  • Stir the macaroni, along with half the cheese, into the Crock Pot with the chili.
  • For the half veggie/half carnie adaptetarian version, here's where you split it. If you're going all vegetarian or all meat, ignore this step and move on to Step 6. Move half of the cheesy chili maccy goodness into a medium casserole dish. Brown your half pound of hamburger in a separate frying pan, drain it, and stir the hamburger into the mixture in the casserole dish. Sprinkle over the top with half the remaining cheese, and bake the meaty version at 350 degrees for 20 minutes.
  • Sprinkle all the remaining cheese over the Crock Pot mixture, cover with the Crock Pot lid, and cook for another 20 - 30 minutes, until the cheese is melted.
  • Now get cozy, and enjoy!

1/4 cup chili sauce

Steps:

  • Cook bacon in 12-inch nonstick skillet over medium heat, stirring occasionally, until brown and crisp; remove from skillet with slotted spoon and drain on paper towels. Reserve bacon fat in skillet.

1-1/2 lb. of ground beef
2 cups leftover meat (we used smoked brisket, pork ribs, and smoked ham), julienned
1 large onion, chopped
8 garlic cloves, chopped
8 mini-sweet peppers, chopped
5 tomatillos, chopped
1 can (28 oz.) Italian style peeled tomatoes
3 Tbsp. of tomato paste
1/4 cup of TACO BELL® Hot Sauce
1 can (15 oz.) pinto beans, drained
1 can of American-style lager beer
1/2 cup fresh cilantro, chopped
1/2 cup green onions, chopped
1 lime
3 Tbsp. chili powder
1 Tbsp. ground cumin
2 tsp. dried oregano leaves
3/4 tsp. ground pepper
1 tsp. chipotle chile pepper powder
1 Tbsp. sugar
1 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • COOK ground beef until done and drain well. Add to slow cooker. Add leftover meats of your choice. We recommend at least some smoked meats such as ham for flavor. You can use chicken, ribs, etc. We do not recommend seafood.
  • ADD onion, garlic, peppers, tomatillos, canned tomatoes, tomato paste, TACO BELL� Hot Restaurant Sauce, drained beans, and beer. Mix thoroughly.
  • ADD half the cilantro (put aside remaining cilantro for garnish) and juice of lime.
  • ADD dry ingredients (chili powder, cumin, oregano, pepper, cinnamon, Chipotle Chile, and sugar). Let cook on high for 1 hour then reduce to medium for 5 to 6 hours.
  • GARNISH with 1 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese, cilantro, chopped green onion, and a dollop of sour cream.

This is my variation of chili. I usually cook it with ground venison, though it tastes just as good with ground beef, and I am sure ground turkey would be fine as well. I use a 4.5 qt slow cooker.

1 lb ground beef or 1 lb venison
1 large onion, chopped
15 1/2 ounces light red kidney beans, drained
15 1/2 ounces dark red kidney beans, drained
2 teaspoons minced garlic
2 (14 1/2 ounce) cans diced tomatoes
2 (15 ounce) cans tomato sauce
3 teaspoons chili powder (or to taste)
1/4 teaspoon pepper
2 teaspoons cinnamon (optional)
1 teaspoon adobo seasoning (optional)
1 cup shredded cheese

Steps:

  • Cook and drain meat.
  • Add all ingredients except cheese to the crock pot.
  • Mix ingredients well
  • Cook on low heat for 6 hours.
  • When serving, top each bowl with shredded cheese.

10 3/4 ounces condensed tomato soup
14 1/2 ounces diced tomatoes
2 medium garlic cloves, minced
1 1/2 lbs ground beef or 1 1/2 lbs ground turkey, browned
2 (15 ounce) cans red kidney beans, rinsed and drained
1/4 cup chili powder
1/2 cup water
1 cup onion, chopped
2 teaspoons ground cumin

Steps:

  • COOK: beef in skillet over medium high heat until need is browned, stirring to separate meat. Pour off fat.
  • MIX: beef, soup, water, chili powder, cumin, garlic, onion, beans & tomatoes in 3.5 qt slow cooker.
  • COVER: and cook on LOW 8-10 hours or on HIGH 4-5 hours.

1 pound ground beef
12-16 oz Italian Sausage (mild or hot - I used mild)
3 cans mild chili beans (use hot if you want it spicier)
1- 28oz can Ro*tel
1 6oz can tomato paste
2 stalks celery, chopped
3 garlic cloves finely diced
1 yellow onion chopped
1 red or green bell pepper seeded and chopped
6 ounces roasted red peppers chopped
8 strips of bacon cooked and chopped
1 cup beef stock or broth
1/4 cup chili powder
1 teaspoon salt
1 1/2 teaspoons coarse ground black pepper
1 teaspoon paprika
2 teaspoons sugar
1 tablespoon dried oregano
2 teaspoons ground cumin
1 teaspoon dried basil
1 teaspoon cayenne pepper
3 teaspoons hot pepper sauce of your choice
2 tablespoons Worcestershire sauce

Sour Cream
Shredded Cheddar Cheese
Diced onion

Steps:

  • In a large skillet, drizzle a few teaspoons of extra virgin olive oil and sauté the chopped yellow onion. When the onion becomes translucent, add in the Italian sausage and ground beef and cook. Drain off excess fat. In the pot of your slow cooker, place meat/onion mixture on the bottom. Add in Ro*Tel, beans, Tomato Paste, Celery, Garlic, Bell Pepper, Roasted Red Pepper, and chopped bacon. Add in seasonings - chili powder, salt, black pepper, paprika sugar, oregano, cumin, basil, and cayenne pepper. To the pot add beef stock, hot pepper sauce, and Worcestershire. Use a large spoon to stir the ingredients so that the seasonings and veggies are incorporated throughout. Turn the slow cooker on low and let it cook for at least 8 hours. When ready to serve, top with your favorite garnishes including Fritos, sour cream, cheddar cheese, and diced onion.
