Load this shepherd's pie with your favorite bacon cheeseburger toppings for a fun twist on dinner the whole family will love.

2 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
2 cans (10.75 oz each) condensed Cheddar cheese soup
1 cup ketchup
1/4 cup mustard
1 teaspoon Worcestershire sauce
1 box (4.7 oz) Betty Crocker™ homestyle creamy butter mashed potatoes
Water, milk and butter called for on mashed potato box for 6 servings
1/4 cup shredded Cheddar cheese (1 oz)
Crumbled cooked bacon, if desired
Sliced green onions, if desired

Steps:

  • In 12-inch skillet, cook beef, onion and garlic over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain.
  • Stir in soup, ketchup, mustard and Worcestershire sauce. Heat to boiling, stirring occasionally; reduce heat. Cover; simmer about 10 minutes, stirring occasionally.
  • Meanwhile, make potatoes as directed on box for 6 servings, using water, milk and butter. Spoon beef mixture into serving dish; spoon and gently spread mashed potatoes over beef mixture. Sprinkle with cheese. Cover; let stand about 5 minutes or until cheese is melted. Sprinkle with bacon and green onions.

6 slices bacon
1 lb lean (at least 80%) ground beef
1/4 teaspoon pepper
1 large onion, chopped (1 cup)
1/4 cup ketchup
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook bacon over medium-high heat 5 to 7 minutes, turning once, until crisp; drain on paper towels. Crumble bacon; set aside.
  • In same skillet, cook beef, pepper and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in ketchup. Spread in pie plate; sprinkle with cheese and bacon.
  • In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate.
  • Bake 20 to 25 minutes or until knife inserted in center comes out clean. Serve with additional ketchup if desired.

I made this a couple of years ago for a picnic, and it was a huge hit. Serve with bell pepper strips and bagel chips. Really good with tortilla chips, too.

8 ounces bacon
½ pound ground beef
1 (10 ounce) can diced tomatoes with green chile peppers
1 (8 ounce) package cream cheese, cut into cubes
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend
2 tablespoons chopped fresh parsley

Steps:

  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon to a plate lined with paper towels, reserving drippings in the skillet.
  • Break ground beef into the skillet; cook and stir until completely browned, 5 to 7 minutes. Drain beef, return skillet to stove, and reduce heat to low.
  • Stir diced tomatoes with green chile peppers, cream cheese, and shredded Cheddar-Monterey Jack cheese blend into ground beef. Crumble bacon and stir most of it, reserving a few teaspoons for garnish, into beef mixture; cook and stir until cheese begins to melt, 2 to 3 minutes; transfer to a slow cooker.
  • Cook in slow cooker on Low until hot and bubbly, 2 to 3 hours. Stir parsley into the dip. Garnish with reserved bacon. Keep in the slow cooker set to Low to serve.

Steps:

  • In 12-inch skillet, cook bacon over medium-high heat, turning occasionally, until crisp; drain on paper towels. Crumble bacon; reserve 2 tablespoons bacon for garnish.
  • In same skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Reduce heat to low. Stir in cream cheese, shredded cheese, tomatoes and crumbled bacon until well mixed and cheese starts to melt.
