1-2/3 cups sweetened applesauce (about 15 ounces)
3 pounds sweet potatoes (about 3 large), peeled and cut into 1-inch slices
3/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
1/4 cup packed brown sugar
6 bone-in pork loin chops (6 ounces each)
1 can (14 ounces) whole-berry cranberry sauce

Steps:

  • Place applesauce in a 6-qt. slow cooker. Top with sweet potatoes; sprinkle with 1/4 teaspoon salt, 1/8 teaspoon pepper and brown sugar., Place pork chops over potatoes; sprinkle with remaining salt and pepper. Spoon cranberry sauce over pork. Cook, covered, on low 6-8 hours or until pork and sweet potatoes are tender.

This tender and tasty crock pot pork loin recipe is made with a pork loin roast, cranberry sauce, garlic, brown sugar, apple juice, and apples.

1 (3 to 4 pounds) boneless pork loin roast
2 cloves garlic (minced)
1 can whole cranberry sauce
1/4 cup brown sugar
1/2 cup apple juice
2 apples (cored, peeled, and coarsely chopped)
Salt and pepper to taste
Optional: 1 1/2 tablespoons cornstarch plus 2 tablespoons cold water

Steps:

  • Place the pork loin roast in the slow cooker and coat all sides with the minced garlic.
  • In a bowl, combine the cranberry sauce, brown sugar, apple juice, and chopped apples. Pour sauce over pork.
  • Cover the crockpot and cook on LOW for 7 to 9 hours. Taste the sauce and add salt and pepper as needed.
  • If you think the sauce needs thickening, you can add a cornstarch slurry. In a small bowl, stir the cornstarch with the cold water until smooth. Add the slurry to the liquids and stir to blend. Increase the setting to HIGH and continue cooking for 5 to 10 minutes, until thickened.
  • Remove the pork from the crockpot onto a cutting board. Slice the pork and arrange on a platter. Spoon over sauce and serve.

1 (1 1/2-pound) boneless pork loin roast
1 (16 ounce) can jellied cranberry sauce
¼ cup white sugar
½ cup cranberry juice
1 teaspoon dry mustard
¼ teaspoon ground cloves
salt to taste
2 tablespoons cold water
2 tablespoons cornstarch

Steps:

  • Place pork roast in a slow cooker. Mash cranberry sauce in a bowl; stir in sugar, cranberry juice, mustard, cloves, and salt. Pour cranberry mixture over pork roast.
  • Cook on Low for 6 to 8 hours. Transfer roast to a plate; cover and keep warm.
  • Skim fat from cranberry mixture in slow cooker. Measure 2 cups of cranberry mixture, adding water if necessary. Pour into saucepan and bring to a boil. Whisk cold water with cornstarch until pasty; pour into cranberry mixture. Cook and stir until thickened, 5 to 10 minutes. Serve alongside pork.
