2 tablespoons all-purpose flour
1 teaspoon salt
⅛ teaspoon ground black pepper
3 pounds beef short ribs
2 tablespoons olive oil
1 large onion, sliced
½ cup dry red wine
½ cup chile sauce
3 tablespoons packed brown sugar
3 tablespoons vinegar
1 tablespoon Worcestershire sauce
½ teaspoon dry mustard
½ teaspoon chili powder
2 tablespoons all-purpose flour
¼ cup water

Steps:

  • In a small bowl, combine 2 tablespoons flour, salt, and pepper. Coat the short ribs with the flour mixture.
  • In a large skillet, heat the olive oil over medium-high heat. Brown short ribs in olive oil.
  • In a slow cooker, combine onions, wine, chili sauce, brown sugar, vinegar, Worcestershire sauce, mustard, and chili powder. Mix thoroughly. Transfer the short ribs from the skillet to the slow cooker.
  • Cover, and cook on Low for 6 to 8 hours.
  • Remove ribs, and turn the slow cooker control to High. Mix the remaining 2 tablespoons of flour with 1/4 cup water, and stir into the sauce. Cook for 10 minutes, or until slightly thickened.

4 lbs beef short ribs
2 tablespoons extra virgin olive oil
2 onions, sliced
1 cup red wine
1 cup chili sauce
6 tablespoons brown sugar
6 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon chili powder
4 tablespoons flour
1/2 cup red wine

Steps:

  • Mix flour, salt & pepper. Coat ribs with the mixture.
  • In a large skillet, heat olive oil over med-high heat and brown the short ribs on all sides.
  • In a crock pot, combine onions, 1 cup of red wine, chili sauce, brown sugar, vinegar, Worcestershire, dry mustard & chili powder. Add ribs to the mixture.
  • Cover & cook on low for 6 hours.
  • Remove ribs to a platter and keep warm.
  • Turn crockpot to high and add remaining flour and red wine. Cook 10 minutes or until thoroughly combined and sauce has thickened.

Steps:

  • Place ribs in slow cooker. Combine green onions, say sauce, broth, brown sugar, ginger, garlic, and pepper in medium bowl; mix well and pour over ribs. Cover; cook on LOW 7 to 8 hours or until ribs are fork tender.
  • Remove ribs from cooking liquid; cool slightly. Trim excess fat. Cut rib meat into bite-size pieces, discarding bones and fat. Let cooking liquid stand 5 minutes to allow fat to rise. Skim off fat.

Kosher salt, freshly ground pepper

1/2 cup coarse fresh breadcrumbs

1/2 cup grated peeled horseradish or 2 tablespoons prepared horseradish
1 tablespoon finely grated lemon zest
1 tablespoon fresh lemon juice

Steps:

  • Season short ribs generously with salt and pepper; place in a large roasting pan and chill, uncovered, 12 hours.
  • Preheat oven to 325°F. Toast breadcrumbs on a rimmed baking sheet, tossing halfway through, until golden brown, 8-10 minutes. Let cool.

2 large tart apples, peeled, cored, and chopped
4 carrots, chopped
1 large onion, cut into wedges
3 1/2 pounds bone-in beef short ribs or oxtails
1 cup applesauce
1/4 cup cider vinegar
4 garlic cloves, chopped
1 tablespoon Worcestershire sauce
1 tablespoon smoked paprika
1 teaspoon dry mustard
1 1/2 teaspoons salt
1 tablespoon cornstarch
1/4 cup apple cider

Steps:

  • Put the apples and carrots in a large slow cooker; top with the onion wedges and then the beef.
  • Combine the applesauce, vinegar, garlic, Worcestershire sauce, paprika, mustard, and salt. Pour the mixture over the beef. Cover the slow cooker and cook on low for 8 to 10 hours, or high for 4 to 5 hours.
  • Transfer the meat, apples, and vegetables to a serving platter. Pour the juices into a saucepan, bring to a boil over high heat, reduce the heat, and simmer for 5 minutes.

1 cup dry red wine

Slow-Cooked Short Ribs with Salt-Skin Potatoes image

I love short ribs, and they are best prepared low and slow in a flavorful sauce. I also love salt potatoes, so combined the two with an Italian twist. My family was wowed! -Devon Delaney, Westport, Connecticut

Number Of Ingredients 17

6 thick slices pancetta or thick-sliced bacon, chopped
6 pounds bone-in beef short ribs
1 teaspoon plus 1 cup kosher salt, divided
1 teaspoon pepper
1 tablespoon olive oil
3 medium carrots, chopped
1 medium red onion, chopped
1 cup beef broth
1 cup dry red wine
1/4 cup honey
1/4 cup balsamic vinegar
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 teaspoons minced fresh oregano or 3/4 teaspoon dried oregano
2 garlic cloves, minced
2 pounds small red potatoes
4 teaspoons cornstarch
3 tablespoons cold water

Steps:

  • In a large skillet, cook pancetta over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels., Meanwhile, sprinkle ribs with 1 teaspoon salt and pepper. In another large skillet, heat oil over medium-high heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker., To same skillet, add carrots and onion; cook and stir over medium heat 2-4 minutes or until crisp-tender. Add broth, wine, honey and vinegar, stirring to loosen browned bits from pan. Transfer to slow cooker; add pancetta, herbs and garlic., Cook, covered, on low 6-8 hours or until meat is tender. In the last hour of cooking, place potatoes in a 6-qt. stockpot and cover with water. Add remaining salt. Cover and bring to a boil over medium-high heat; stir to dissolve salt. Cook 15-30 minutes or until tender. Drain well., Remove ribs to a serving platter; keep warm. Strain cooking juices into a small saucepan; skim fat. Add vegetables and pancetta to platter. Bring juices to a boil. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened. Serve with ribs and vegetables.
