- Place ham in a 5-qt. slow cooker. In a small saucepan, mix cornstarch and lemon juice until smooth. Stir in remaining ingredients; bring to a boil, stirring occasionally. Pour over ham, covering completely., Cook, covered, on low 6-8 hours (a thermometer inserted in ham should read at least 140°).

SLOW COOKED PINEAPPLE

Steps:
- If using whole pineapple: Peel, quarter, and cut away the core from the pineapple. Discard the core. Cut each quarter in half lengthwise then slice 1/4-inch thick slices crosswise.
- Stir the pineapple together with the sugar, ginger, and cinnamon in a slow cooker. Cover and cook on HIGH for 4 hours, until the pineapple is very tender and slightly sweet.
- Serve warm with scoops of coconut ice cream on top. The compote keeps for up to a week tightly sealed in the refrigerator.

I got the base of this recipe from a cookbook called "The Best Slow-Cooker Cookbook Ever", but I changed it up to suit us. This is an excellent way to get kids to eat their squash!

Steps:
- Peel and seed squash then chop into 1" inch sized chunks. Place into slow cooker.
- In a medium sized bowl mix pineapple (including liquid), sugar, and cinnamon.
- Add to the slow cooker and cover. Cook on low for 7-8 hours.
- Stir and serve.
SLOW COOKED PINEAPPLE PORK ROAST RECIPE - (4.3/5)

- 1. In large saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat, simmer, uncovered for 3 minutes. 2. In a non-stick skillet with oil or cooking spray, brown roast on all sides. 3. Place roast in slow cooker. Pour sauce over the roast and turn to coat. Cover and cook on low for 6-7 hours or until meat is done as desired. Let roast stand for 10 minutes before slicing. (If the whole roast won't fit in slow cooker you can cut it in half and stack in slow cooker)

- 1. Put carrots into slow cooker
- 2. Mix together preserves and dried onion soup mix and spoon on top of carrots
- 3. Add in pecans
- 4. Cook on low for 4 to 6 hours. Note: four-hour cooking time will give you a firmer carrot. Six-hour cooking time will give you softer carrots.
