This traditional favorite is made super easy in a slow cooker. The finished Crock-Pot lasagna cuts well to make nice individual servings. You may need to break the lasagna noodles so they fit into the slow-cooker crock. -Rebecca Goodwin, Bowling Green, Kentucky

1 pound ground beef
1 medium green pepper, chopped
1 medium onion, chopped
1 jar (24 ounces) herb and garlic pasta sauce
4 cups shredded part-skim mozzarella cheese
1 carton (15 ounces) ricotta cheese
1 tablespoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 no-cook lasagna noodles
2 tablespoons shredded Parmesan cheese

Steps:

  • In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in pasta sauce; heat through. In a large bowl, combine the mozzarella and ricotta cheeses, Italian seasoning, garlic powder, salt and pepper. , Spread 1 cup meat sauce in an oval 3-qt. slow cooker. Break one lasagna noodle into three pieces. Layer 1-1/3 noodles over sauce, breaking noodles to fit as necessary. Top with 2/3 cup meat sauce and 1-1/3 cups cheese mixture. Repeat layers twice. Top with remaining sauce., Cover and cook on low for 4-5 hours or until noodles are tender. Sprinkle with Parmesan cheese. Cover and cook 15 minutes longer. Let stand for 10 minutes before cutting.

Every fall and winter, our staff has a soup rotation. I have modified this recipe so I can prep it the night before and put it in the slow cooker in the morning. My colleagues love it! -Sharon Gerst, North Liberty, Iowa

1 package (19-1/2 ounces) Italian turkey sausage links, casings removed
1 large onion, chopped
2 medium carrots, chopped
2 cups sliced fresh mushrooms
3 garlic cloves, minced
1 carton (32 ounces) reduced-sodium chicken broth
2 cans (14-1/2 ounces each) no-salt-added stewed tomatoes
2 cans (8 ounces each) no-salt-added tomato sauce
2 teaspoons Italian seasoning
6 lasagna noodles, broken into 1-inch pieces
2 cups coarsely chopped fresh spinach
1 cup cubed or shredded part-skim mozzarella cheese
Optional: Shredded Parmesan cheese and minced fresh basil

Steps:

  • In a large skillet, cook sausage over medium-high heat, breaking into crumbles, until no longer pink, 8-10 minutes; drain. Transfer to a 5- or 6-qt. slow cooker., Add onion and carrots to same skillet; cook and stir until softened, 2-4 minutes. Stir in mushrooms and garlic; cook and stir until mushrooms are softened, 2-4 minutes. Transfer to slow cooker. Stir in broth, tomatoes, tomato sauce and Italian seasoning. Cook, covered, on low 4-6 hours, until vegetables are tender., Add noodles; cook 1 hour longer or until tender. Stir in spinach. Remove insert; let stand 10 minutes. Divide mozzarella cheese among serving bowls; ladle soup over cheese. If desired, sprinkle with Parmesan cheese and basil.

This recipe was given to me by a friend who made it using a store-bought marinara sauce. I created a homemade sauce and it has been a big hit whenever I serve it, especially at potlucks and bring a dish gatherings. -Sheri Oganowski, Dayton, Ohio

1 pound ground turkey
1 pound bulk Italian sausage
3/4 cup chopped sweet onion
3 garlic cloves, minced
3 cans (15 ounces each) tomato sauce
1 can (28 ounces) crushed tomatoes, undrained
1/3 cup sugar
3 tablespoons dried parsley flakes, divided
2 teaspoons dried basil
3 teaspoons dried oregano, divided
1/2 teaspoon salt, divided
1/4 cup dry red wine or beef broth
3 cups shredded part-skim mozzarella cheese
2-1/2 cups ricotta cheese
1 cup grated Parmesan cheese
1 package (9 ounces) no-cook lasagna noodles

Steps:

  • In a Dutch oven, cook the turkey, sausage, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, crushed tomatoes, sugar, 2 tablespoons parsley, basil, 2 teaspoons oregano and 1/4 teaspoon salt. Bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes. Add wine; cook 15 minutes longer., Meanwhile, in a large bowl, combine the cheeses and the remaining parsley, oregano and salt., Spread 2-1/4 cups meat mixture into a 6-qt. slow cooker. Arrange five noodles over sauce, breaking to fit if necessary. Spread 1-1/3 cups cheese mixture over noodles. Repeat layers twice. Top with remaining meat mixture., Cover and cook on low until noodles are tender, 4-5 hours.

This has became a favorite of mine; just put it in the crockpot and forget about it for a few hours.

Number Of Ingredients 7

1 lb lean ground beef
1 (26 -28 ounce) jar pasta sauce
1 (8 ounce) can no-salt-added tomato sauce
8 uncooked lasagna noodles
1 (1 lb) jar alfredo sauce
3 cups shredded mozzarella cheese (12 oz.)
1/4 cup grated parmesan cheese

Steps:

  • In large skillet, cook ground beef over medium-high heat until thoroughly cooked, stirring frequently. Drain.
  • Spray 4 to 5-quart slow cooker with nonstick cooking spray. Spread 3/4 cup of the tomato pasta sauce in bottom of sprayed slow cooker. Stir remaining tomato pasta sauce and tomato sauce into ground beef.
  • Layer 3 lasagna noodles over sauce in slow cooker, breaking noodles as necessary. Top with 1/3 of the Alfredo pasta sauce, spreading evenly. Sprinkle with 1 cup of the mozzarella cheese. Top with 1/3 of the ground beef mixture, spreading evenly.
  • Repeat layering twice, using 2 lasagna noodles in last layer. Sprinkle Parmesan cheese over top.
  • Cover; cook on Low setting 3-1/2 to 4-1/2 hours. If desired, cut into wedges to serve.
