Red wine and beef are such an elemental combination that it's worth mastering the technique for a great stew: Sauté the ingredients quickly to caramelize and reduce, then cook through very slowly (preferably in a low oven, but see our Notes on how to cook in the slow cooker or pressure cooker). You can use any wine you like, since it will be cooked for a long time: the alcohol, acidity and fruitiness that make wine lovely in the glass are not so nice in the bowl; they have to be tamed by simmering. But the tangy, syrupy taste they leave behind is an ideal counterpoint to red meat. Celery is optional because some don't like it, but note that it's not eaten: It just provides a green flavor note alongside the sweet carrots and earthy potatoes.

3 1/2 to 4 pounds well-marbled beef stew meat, preferably chuck, cut into large (2-by-2 1/2-inch) pieces
2 large sprigs fresh thyme
2 bay leaves
About a dozen juniper berries
1/2 bottle red wine (not sweet)
Salt and freshly ground black pepper
4 garlic cloves (1 smashed and peeled, 3 minced)
4 tablespoons vegetable oil
3 stalks celery (optional)
3 large carrots
2 onions
1 large, starchy potato, such as Idaho
3 ounces pancetta (or French ventrèche), diced small (optional)
3 tablespoons olive oil
3 tablespoons tomato paste
Bouquet garni (2 sprigs fresh thyme, 2 sprigs fresh rosemary or parsley, 2 bay leaves, 6 juniper berries, 4 whole cloves, 1 teaspoon dried orange peel, wrapped in cheesecloth and tied)
1/2 bottle red wine
Chicken broth, as needed
3 tablespoons chopped parsley
1 tablespoon chopped fresh thyme leaves (or use additional parsley), for garnish

Steps:

  • Marinate the meat: In a large bowl, combine all the marinade ingredients. Mix well and refrigerate in the bowl or a thick sealable plastic bag for at least 2 hours or up to 1 day.
  • When ready to cook, strain off the marinade and reserve for cooking. Drain meat on paper towels and pat until very dry. Sprinkle with salt and pepper.
  • Place a large, heavy pot with a tight-fitting lid on the stove and rub the bottom with the smashed, peeled clove of garlic, until coated with the garlic's oils. Discard garlic.
  • Add 2 tablespoons vegetable oil, and cook over medium heat until shimmering. Add half the meat and brown gently on both sides while preparing the vegetables. There's no need for a hard crust to form; a little browning is all that's required. When browned, remove meat to paper towels to drain. Repeat with remaining 2 tablespoons oil and meat. Return all the browned, drained meat to the pot.
  • Meanwhile, cut the celery (if using) and carrots into large chunks. Peel and chop the onions. Peel and dice the potato.
  • Heat oven to 250 degrees. In a separate skillet, heat pancetta (if using) and olive oil over low heat. Cook gently until the fat renders. When the pork fat is running, add onions, celery, carrot, onion and minced garlic. (If not using pancetta, simply heat olive oil and add vegetables and garlic.) Cook gently, stirring, until softened and golden, about 10 minutes. Raise the heat, add tomato paste and cook, stirring, until fragrant and sizzling. Add the bouquet garni, reserved marinade and potato. Let bubble fiercely for 5 to 10 minutes, until liquid is thickened and syrupy. Add mixture, once cooked, to the pot with the meat.
  • Pour in the wine and, if needed, enough broth to just cover the ingredients. Stir to combine. Bring to a simmer, cover tightly and bake 4 to 5 hours, until the meat is soft enough to eat with a spoon and the sauce is rich and thick. After 4 hours, if liquid seems thin, uncover pot for the rest of the cooking.
  • When done, let cool slightly, uncovered. Remove and discard celery (if using) and bouquet garni. To thicken the stew, use a fork to mash some of the carrots and potatoes into the liquid; or, remove and purée them, then add back in. Taste and adjust the seasonings with salt and lots of freshly ground pepper.
  • Reheat and serve immediately, or let cool and refrigerate. Serve within 3 days; the flavor will only improve. Garnish each serving with a sprinkling of chopped thyme and parsley.

3 cloves of garlic
3 sprigs of Thyme
3 heaped table spoons of Plain flour
3 medium carrots (diced)
3 Parsnips (cubed around small roast potato size)
2 medium white onions (sliced)
1 diced Turnip
700g cubed beef
600ml beef stock
Table spoon of Worcestershire sauce
3 bay leafs
Tomato purée 2 large table spoons
500g mushrooms
Rapeseed oil
1/4 tea spoon of Black pepper
Table spoons of English mustard powder

Steps:

  • Put on a high heat slow cooker and add the beef stock to the slow cooker.
  • Put all of the flour, mustard powder and pepper in a bowl and use to completely coat the diced beef. Add any left over coating add to slow cooker.
  • Fry the coated beef with the rapeseed oil until browned off. Put seared beef in slow cooker.
  • Using the pan from the beef, fry mushrooms and onions until onions are slightly browned and translucent, then add to slow cooker.
  • Put diced carrots, turnip and Parsnips in slow cooker, with crushed garlic, Worcester sauce and tomato purée. Mix up and add bay leafs and thyme Turn down heat to medium and leave to cook
  • Remove bay leafs and thyme stalks before serving. Serve on its own or with creamy mash potato and cabbage.

2 large green leek leaves
1 bay leaf
1 celery stalk
2 sprigs fresh parsley, w/stems
3 sprigs fresh thyme
1 2-in-long strip orange peel
3 tablespoons EVOO
2 ounces bacon
3 pounds Beef stew meat, such as chuck, trimmed & cut into 1-1/2 in pieces
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper, divided
2 medium yellow onions
3 cloves garlic
1-1/2 pounds carrots, sliced into 1-in rounds
2 tablespoons tomato paste
1 pound button mushrooms, halved if small, quartered if large
1 bottle full-bodied red wine (Pinot Noir)
1/2 cup fresh parsley

Steps:

  • 1. Preheat oven to 250°F
  • 2. To assemble bouquet garni: Place one leek leaf on the counter. Top with bay leaf, celery stalk, parsley sprigs, thyme sprigs and tangerine (or orange) peel. Place the second leek leaf on top and tie the bundle together in four spots with kitchen string. Set aside.
  • 3. To prepare stew: Heat 1 tablespoon oil in an ovenproof Dutch oven over medium-high heat. Add pancetta (or bacon) and cook until barely brown, 1 to 2 minutes. Transfer to a paper towel-lined plate, leaving any drippings in the pot.
  • 4. Add beef in batches (do not crowd the pot) and cook until browned on all sides. Transfer to a large bowl and season with 1 teaspoon salt and ¼ teaspoon pepper.
  • 5. Add 1 tablespoon oil to the pot and add onions and garlic. Cook, stirring, until the onions are translucent, 3 to 4 minutes. Add carrots and cook, stirring, until they begin to soften, 4 to 5 minutes. Stir in tomato paste. Season with the remaining 1 teaspoon salt and ¼ teaspoon pepper. Transfer the mixture to the bowl with the beef.
  • 6. Reduce heat to medium and add the remaining 1 tablespoon oil to the pot. Add mushrooms and cook, stirring occasionally, until they are tender, 5 to 7 minutes. Transfer to a small bowl; set aside.
  • 7. Pour wine into the pot and bring to a boil, scraping up any browned bits. Return the browned beef, the carrot mixture and the reserved pancetta (or bacon) to the pot along with the bouquet garni. Press down on the beef and vegetables, making sure to submerge them completely in the wine; if necessary, add just enough hot water to make sure they are covered. Cut a piece of parchment paper to fit the pot and press it directly on top of the stew, covering it completely.
  • 8. Transfer the stew to the oven and cook, with the lid off, until the beef is tender enough to cut with a fork, about 3 hours. Check every hour to be sure the ingredients stay submerged in liquid during the entire cooking time. If too much wine evaporates, add a little hot water to make up for the loss. During the last 15 minutes of cooking, stir in the reserved mushrooms.
  • 9. Remove and discard the bouquet garni. Combine chopped parsley and tangerine (or orange) zest in a small bowl and scatter on top of the stew just before serving.
  • Make Ahead tip: Make Ahead Tip: Prepare through Step 8, let cool to room temperature, cover and refrigerate for up to 2 days. Reheat at a gentle simmer on the stovetop for about 30 minutes or in a 350°F oven for 1¼ hours before serving.

1/4 kg lean ground beef (or any lean mince to suit your budget)
1/4 kg stewing beef (or any stewing cuts of meat to suit your budget)
4 chorizo sausages, chopped into cm slices
1 (28 ounce) can chopped tomatoes, open and pour into a bowl (chopped plum tomatoes are nice, we will need the juice so don't throw it away)
6 carrots, chopped into inch size pieces
1/2 swede, chopped into inch size pieces
2 turnips, chopped into inch size pieces
6 large potatoes, chopped into inch size pieces
1/2 cup lentils (already soaked)
1/2 cup pearl barley (already soaked)
1 cup chickpeas (already soaked)
3 pints water, to cover the ingredients in the pot but leave at least 1 inch from the top of the pot
2 tablespoons Worcestershire sauce
2 tablespoons gravy, granules
1 pinch pepper (to season)

Steps:

  • Make sure you prepare this in the morning and leave it bubbling away for at least 8 hours (make sure you don't leave it unattended and follow the guidelines of your slow-cooker). You can do this even if you don't have a slow-cooker but use a fairly big deep-bottomed saucepan or casserole pot and leave on a low heat setting for at least 3 hours.
  • 1. Prepare all veggies and chop into about inch size pieces or bigger if you like (I prefer big chunks).
  • 2. Prepare the tomatoes as above.
  • 3. Chop the stewing beef into inch size pieces, you don't really want them much bigger as they will go chewy and not soft.
  • 4. Chop the chorizo sausages as above into cm size slices.
  • 5. place all ingredients (except the gravy granules and worcester sauce) into your slow cooker along with the water or vegetable stock and turn on as per guidelines. Leave until it comes to the boil and when it starts to simmer add the gravy granules and worcester sauce. Leave bubbling away for approx 8 hours (3 hours if not using a slow cooker) and then serve. be careful as can be very hot!

That's why I love my slow cooker and this hearty winter dish is a favorite for all the family. Thick gravy and tender slow-cooked beef ideally served with mashed potatoes, cabbage, and some nice crusty bread to mop up. Great to prepare all the vegetables the night before especially if slow cooking.

2 pints water
3 carrots, cut into chunks
3 cups mushrooms, halved or quartered
½ rutabaga, peeled and cut into small chunks
1 ½ pounds cubed beef stew meat
2 tablespoons vegetable oil, or more if needed
¾ cup all-purpose flour
2 teaspoons dried parsley
2 teaspoons dried thyme
3 cubes beef bouillon, crumbled
5 grinds freshly ground black pepper
1 teaspoon yeast extract spread (such as Marmite®)
2 teaspoons tomato paste
2 dashes Worcestershire sauce

Steps:

  • Put the kettle on so that you have boiled water ready. Combine carrots, mushrooms, and rutabaga in a slow cooker.
  • Combine beef and vegetable oil in a large bowl. Turn beef in the oil until well coated using a wooden spoon or your hands.
  • Mix together flour, parsley, thyme, beef bouillon cubes, and pepper in a second large bowl. Add beef, reserving oil for later use, and coat with the seasoned flour.
  • Heat reserved oil to a large skillet or wok and heat over medium-low heat. Add beef, shaking off excess flour and reserving for later. Add yeast extract spread, tomato paste, Worcestershire sauce, and more oil if meet sticks to the pan. Cook until beef is no longer pink in the center, 5 to 10 minutes.
  • Sprinkle reserved flour over vegetables in the slow cooker. Pour boiling water onto vegetables a little at a time and stir to mix in the flour. Add beef with cooking juices.

1 jar or box of beef gravy
1 can diced tomatoes, undrained

Steps:

  • 1. On waxed paper or in a bowl sprinkle beef with 2 tablespoons flour, 1 teaspoon of salt and 1/2 teaspoon of pepper, toss to coat. In a 10 inch skillet, heat about 1 tablespoon of oil over medium high heat. Add coated beef; cook and stir 4 to 6 minutes or until browned stirring occasionally. 2. In 4 to 6 quart slow cooker layer potatoes, onions and carrots. Add browned beef; sprinkle with any remaining flour mixture. Top with gravy and tomatoes. 3. 1 large onion, chopped
2 garlic cloves, minced
1 tablespoon canola oil
1 can (14-1/2 ounces) beef broth
1/2 cup dry red wine or additional beef broth
1 bay leaf
1/8 teaspoon dried thyme
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/3 cup water
2 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Place the first four ingredients in a 5-qt. slow cooker. In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Reserve drippings., In a large resealable plastic bag, combine the flour, 1/4 teaspoon pepper and 1/4 teaspoon salt. Add meat, a few pieces at a time; seal and shake to coat. Brown the beef, onion and garlic in drippings and oil. , Transfer to slow cooker. Stir in the broth, wine or additional broth, bay leaf, thyme, reserved bacon and remaining salt and pepper. Cover and cook on low for 8-9 hours or until meat is tender. Discard bay leaf., Combine soup and water; add to slow cooker. Cover and cook on high for 30 minutes. Combine cornstarch and cold water; stir into slow cooker. Cover and cook for 30-40 minutes or until thickened.

1 -1 1/2 lb stewing beef
1 onion, cut into large pieces
3 large potatoes, peeled & cut into large chunks
1 cup baby carrots
1 (10 1/2 ounce) can condensed beef broth
1 cup water
1/4 teaspoon garlic powder (optional)
salt & pepper
1 (1 ounce) package brown gravy mix (package size varies)
1 (10 1/2 ounce) can condensed cream of mushroom soup

Steps:

  • Assemble all the ingredients except the gravy mix & mushroom soup in a crock pot or roasting pan. Cover with the lid.
  • If using a crock pot cook on low for 5 hours (half that time on high). If cooking in the oven bake for 2.5 hours on 325°F.
  • During the last hour of cooking stir the brown gravy mix & cream of mushroom soup into the pan. Recover & continue to cook.

2 large potatoes, cut into 1/2" chunks
1 cup fresh green beans cut into bite-sized pieces
1 lb stew-meat beef chunks
1 bay leaf
1 teaspoon fresh thyme
1 clove garlic, crushed
3 cups beef stock
2 tablespoons light brown sugar
3/4 teaspoon salt
2 teaspoons Worcestershire sauce
pepper to taste
3 tablespoons flour
2 teaspoons tomato paste

Steps:

  • Put the ingredients except for the flour and tomato paste into the slow cooker and stir to combine. Cover and cook on low for 8 to 9 hours or high for 4 to 5 until the beef is tender and potatoes are fork-tender. Stir the stew once or twice as it cooks if possible. 30 minutes before serving, transfer a ladle-ful of broth to a small mixing bowl. Add the flour and tomatoe paste. Whisk until mooth, then stir the mixture back into the stew and cook for the remaining half hour.
