1/2 cup onion, chopped
1 garlic clove, minced
10 ounces ground turkey
1/2 cup canned black beans, rinsed
1 cup tomato puree
1 tablespoon cider vinegar
1 teaspoon chili powder
1/4 teaspoon mustard powder
8 whole wheat dinner rolls

Steps:

  • Lightly coat a medium skillet with cooking spray and heat over medium-high. Add onion and garlic and cook until onion softens, about 5 minutes.
  • Add ground turkey and cook, stirring to break up the meat. Cook until no longer pink, about 5 minutes.
  • Stir in remaining ingredients (except dinner rolls!). Cook until bubbly and slightly thickened. Divide evenly over dinner rolls and serve hot.

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

Steps:

1 pound raw lean ground turkey
1 teaspoon steak seasoning blend, dry
1/8 teaspoon salt
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar
1 cup canned tomato sauce
3/4 cup canned no-salt-added tomato sauce
2 tablespoons tomato paste
1 1/2 tablespoons granulated sugar
5 small hamburger buns (light, if available)

Steps:

  • Spray a large skillet with nonstick spray and bring it to medium-high heat on the stove. Add turkey and sprinkle with steak seasoning and salt. Cook and crumble until it's mostly cooked, about 8 minutes.
  • Reduce the heat to medium. Add onion, bell pepper, Worcestershire sauce, and vinegar. Mix it well and continue to cook and crumble until the meat is fully cooked, about 5 minutes.
  • Reduce the heat to low. Add tomato sauces, tomato paste, and sugar. Stir well. Stirring occasionally, cook until it's hot, about 5 minutes.
  • Toast the buns, if desired. Evenly distribute the mixture among the bottom buns and then finish off with the tops of the buns. Enjoy!

1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 1/4 pounds ground beef sirloin
1/4 cup brown sugar
2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
1 medium onion, chopped
1 small red bell pepper, chopped
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
2 tablespoons tomato paste
4 crusty rolls, split, toasted, and lightly buttered
Garnish: sliced ripe tomatoes, pickles, Deviled Potato Salad, recipe follows
5 all-purpose potatoes, peeled and diced
Coarse salt
1/4 onion
3 tablespoons prepared yellow mustard
1/2 cup mayonnaise, eyeball the amount
1 teaspoon sweet paprika
1 teaspoon hot cayenne pepper sauce (recommended: Tabasco or Frank's Red Hot)
Salt and freshly ground black pepper
2 scallions, thinly sliced, for garnish

Steps:

  • Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Deviled Potato Salad. Have plenty of napkins on hand!
  • Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes. Drain cooked potatoes and return to the warm pot to dry them out. Let the potatoes stand 2 minutes, then spread potatoes out on to a cookie sheet to quick-cool them.
  • In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine. Add potatoes to the bowl and stir to evenly distribute dressing. Season potato salad with salt and pepper and taste to adjust your seasonings. Top servings of salad with chopped scallions.

1 large carrot, peeled and chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 ½ teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon freshly ground black pepper, or to taste
4 tablespoons tomato paste
2 cups water
1 (14.5 ounce) can no-salt-added diced tomatoes
1 cup red lentils, rinsed and drained
2 tablespoons molasses, or more to taste
1 tablespoon Worcestershire sauce
1 teaspoon prepared yellow mustard
1 teaspoon apple cider vinegar
¾ teaspoon kosher salt, or to taste
6 medium hamburger buns, split

Steps:

  • Heat vegetable oil in a large skillet over medium heat. Add onion, carrot, bell pepper, and garlic. Cook, stirring frequently, until vegetables are softened, 7 to 9 minutes. Season with chili powder, cumin, paprika, onion powder, garlic powder, and black pepper. Cook and stir for 30 seconds. Mix in tomato paste, and cook another 60 seconds, stirring constantly.
  • Add water, diced tomatoes, and lentils, stirring to combine. Bring mixture to a gentle simmer, cover, reduce heat to low, and cook until lentils are tender, but not falling apart, 15 to 20 minutes.
  • Mix in molasses, Worcestershire sauce, mustard, vinegar, and salt. Cook, uncovered, an additional 10 minutes, or until mixture has thickened slightly. Taste, and adjust seasonings as needed. Allow to cool 5 minutes before serving on buns with desired toppings.
