I like to make these up and give them to my daughters so grandchildren will have hot cookies..they are so much busier than myself...like giving love!

Number Of Ingredients 8

2 cups margarine, softened
2 cups granulated sugar
3 large eggs
2 teaspoons vanilla extract
1 teaspoon lemon extract
6 cups flour
1 teaspoon baking soda
1/2 teaspoon cinnamon

Steps:

  • in a large bowl, cream margarine and sugar together, beat in eggs, vanilla and lemon extract till light and fluffy --
  • in seperate bowl, combine flour, baking soda and cinnamon --
  • gradually stir flour mixture into egg mixture, until blended.divide dough into 4 equal pieces -- shape each piece into an 8x10 roll --
  • wrap each roll in wax paper or plastic wrap -- , freeze, wrap each frozen dough in aluminum foil and again with these printed instructions.When I make them for gifts for friends.I like to overwrap the aluminum foil with fabric for the holidays --
  • INSTRUCTIONS:.
  • store dough in refrigerator till ready to bake --
  • cut chilled dough into 1/4" slices.place on lightly greased cookie sheets.
  • bake at 350* for 8-10 minutes or edges are golden.
  • each roll makes about 3 dozen -- I cut mine a little thicker.so it will be less.grandchildren like to decorate these as well -- so grandma always includes colored sugars.

-3/4 cups salted butter softened
-3/4 cups granulated white sugar
-1 large eggs
-1 tsp vanilla
-2 cups all purpose flour
-Dash of nutmeg
-Sprinkles

Steps:

  • 1. In a stand mixer, cream the butter and sugar together 2. Add the egg and vanilla and beat on medium speed until mixed well, scraping the sides as needed 3. Add the flour and nutmeg 4. mix until just combined(scraping down the sides once). Be careful not to overmix 5. Form the dough into a thick log (about 8-10" long) Press the log tightly together so that there are no air pockets in the cookie dough. 6. Place a long sheet of plastic wrap on the counter or table 7. Place sprinkles on the plastic wrap 8. Roll the cookie dough log in the sprinkles until it it completely covered, adding more as needed. 9. Wrap the dough in the plastic wrap and refrigerate the dough for at least 2 hours 10. Heat the oven to 325 degrees 11. Remove the cookie dough from the refrigerator and unwrap it 12. Using a sharp knife, cut slices off the cookie dough log. Cut the slices 1/4" thick or a little less 13. Place the cookie dough slices on a baking sheet with a silicone mat (or lightly grease the cookie sheet) 14. Bake for 10-12 minutes, or just until the cookies are set. Don't allow them to brown. 15. Allow the cookies to cool for 3-5 minutes on the baking sheet, then remove them to wire racks to cool completely. 16. Store in an airtight container.

3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup unsalted butter, at room temperature
1 cup bakers sugar
1 egg
2 tablespoons whole milk
1/2 cup turbinado sugar (raw)

Steps:

  • In a large bowl sift together flour, baking powder, and salt. Set aside. Place butter and sugar in bowl of electric stand mixer and beat until light and fluffy, about 3 minutes. Add the egg and milk and beat to combine. Put mixer on low speed, gradually add flour, and beat until mixture pulls away from the side of the bowl. Divide the dough in half, cover with plastic wrap, and refrigerate at least 2 hours.
  • Preheat oven to 375 degrees F.
  • Remove 1 wrapped pack of dough from refrigerator at a time, un-wrap the dough and roll it by hand into a log about 1 1/2-inches in diameter. Repeat with the second pack of dough. If dough has warmed during rolling, return it to the refrigerator for about 10 minutes. The dough may even be frozen at this point and thawed when ready to bake.
  • Sprinkle a work surface with half of the turbinado sugar. Roll one of the logs through the pile coating the entire log with as much of the sugar as will adhere. Repeat with the remaining sugar and the second log. Slice each log crosswise into 1/3-inch thick rounds. Place them at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 8 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on wire rack. Store in airtight container for up to 1 week.
