We made our cool, crunchy slaw with just the right amount of tang from sour cream and vinegar. A bit of honey balances the acidity. This classic summer side dish would be welcome at any picnic or backyard BBQ.

5 cups thinly sliced green cabbage
1 cup grated carrots
3/4 cup mayonnaise
1/3 cup sour cream
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 teaspoon celery salt
Kosher salt and freshly ground black pepper

Steps:

  • Toss together the cabbage and carrots in a large bowl.
  • Whisk together the mayonnaise, sour cream, vinegar, mustard, honey and celery salt in a medium bowl. Pour the dressing over the shredded vegetables and toss to coat. Season with salt and pepper. Cover and refrigerate for 30 minutes. Season with more salt and pepper before serving.

3 pounds cabbage
1 tablespoon yellow mustard
1/2 cup mayonnaise
1/4 cup salad dressing spread, preferably Miracle Whip
1 cup sugar

Steps:

  • Slice cabbage into quarters; cut away the core, which is bitter. Peel and discard outer layers of cabbage until you get to the first unblemished layer of leaves. Break up the remaining layers of leaves and place in a bowl. Use a chopper to chop the cabbage by hand in the bowl, or chop on a flat work surface using a sharp knife. (Optional: Pulse cabbage in a food processor to a minced consistency.) Place minced cabbage back into the bowl.
  • Once cabbage is minced, add mustard, mayonnaise, salad dressing spread, and sugar. Toss well to combine. After several minutes, the cabbage will begin to release moisture. Cabbage is fully mixed when a spoon pressed down on the slaw yields pooled liquid. Serve.

4 (6-ounce) skin-on salmon fillets
3 tablespoons canola oil
Kosher salt and black pepper
3 tablespoons sesame seeds
5 tablespoons toasted sesame oil
1/2 cup finely chopped scallions
2 tablespoons peeled, grated ginger
2 tablespoons lemon juice
1 tablespoon mayonnaise
1/2 teaspoon grated garlic
3 cups bean sprouts (about 6 ounces)
1 cup shredded cabbage (about 3 ounces)
1 cup shredded carrots (about 3 ounces)
1 (15 1/2-ounce) can chickpeas, drained and rinsed

Steps:

  • Heat oven to 425 degrees. Arrange salmon on a rimmed baking sheet. Rub with 1 tablespoon of the oil and season with salt and pepper. Roast until opaque and medium throughout, about 10 minutes.
  • Meanwhile, in a small skillet, toast the sesame seeds over low heat, stirring, until golden, about 3 to 4 minutes; scrape into a large bowl. Add sesame oil, scallions, ginger, lemon juice, mayonnaise, garlic and remaining 2 tablespoons oil; season with salt and pepper. Whisk to combine. Reserve 1/4 cup of the vinaigrette in a small bowl.

5 coconuts
onion
taro root, leaves (LOTS, usually the inside leaves are preferred)
salt
1 cup water

Steps:

  • PREPARING THE CREAM:.
  • Scrape 5 fresh coconuts into the baking tin.
  • Bake in oven until brown.
  • Add 1 cup of warm water.
  • Squeeze with a thin cloth or tauaga to get cream.
  • Add salt and onion to personal taste.
  • PREPARING THE LUAU PALUSAMI:.
  • Get taro leaves. (You will need 4 leaves for one luau.Use 1 big leaf and 3 or 4 smaller leaves. You can break a bigger leaf to make a smaller leaf.) Lay the 4 pieces flat with the big one on the bottom and the 3 smaller ones on top.
  • Place leaves in hand and close hand slightly to make leaves in a bowl-like shape, into which you pour the cream.
  • Pour ~ a small cup of coconut cream inside the leaf structure and close outside edges of the leaves to enclose the cream, making the leaves like a ball-like structure.
  • Wrap total package in aluminum foil, twisting the top to conceal and hold the package tight.
  • Put in oven and cook for about an hour at 475 degrees F. (quite high).
