SEARED TUNA WITH THE BEST POTATO SALAD



Seared Tuna with the Best Potato Salad image

2 pounds (900 grams) new potatoes, boiled until tender
1 tablespoon capers
1 lemon, juiced
Olive oil
1/2 red onion, finely chopped
1 celery heart, sliced
Salt and freshly ground black pepper
4 (8 to10 ounce/225 to 285 gram) tuna steaks, about 1- inch (2 centimeters) thick
1 good handful basil leaves, picked and finely chopped

Steps:

  • For the potato salad: Cook the potatoes, and while still warm, add the capers and a good squeeze of the lemon. Add the oil, and toss in the red onion and celery heart and season carefully with salt and pepper.
  • Lay out your tuna steaks on a tray and season with salt and pepper. I prefer to cook it on one of those ridged grill pans or in a frying pan. Rub your pan, which should be very, very hot, with a little bit of olive oil on a piece of kitchen paper, then put in the tuna. What you want to do is sear the tuna so that it toasts, fries, and browns, about 45 to 60 seconds on each side. Once cooked, I like to rip the steaks in half and place them on top of the potato salad. Smash or pound up the basil in a mortar and pestle. Add a good glug of olive oil with a squeeze of lemon, and spoon this over each tuna steak.

300g new potato
175g green beans , trimmed and halved
175g frozen soya beans
160g can tuna in water, drained well
good handful rocket or watercress leaves
2 tsp harissa paste (we used Belazu)
1 tbsp red wine vinegar
2 tbsp olive oil

Steps:

  • Put the potatoes in a pan of boiling water, then boil for 6-8 mins until almost tender. Add both types of beans, then cook for a further 5 mins until everything is cooked. Meanwhile, make the dressing. Whisk together the harissa and vinegar in a small bowl with a little seasoning. Whisk in the oil until the dressing is thickened. Drain potatoes well, toss with half of the dressing, then leave to cool.
  • Flake the tuna, then fold into the potatoes. Add the remaining dressing. then gently toss. Divide between 4 bowls and serve each portion with a handful of rocket or watercress on top. Serve warm or cold.

350g new potato
4 anchovies
4 tbsp mayonnaise (reduced fat is fine)
splash white wine vinegar or juice 1 lemon
1 large Cos lettuce
bunch spring onions
x can tuna steaks in brine or oil

Steps:

  • Boil potatoes for 15 mins or until tender. Drain and cool under cold water. Meanwhile, make the dressing by mashing anchovies with the mayonnaise. Add the white wine vinegar or lemon juice and season to taste with black pepper. Tear the leaves from the lettuce into a large bowl. Chop spring onions and tip them in. Slice the potatoes and add to the bowl, then drain the tuna and flake into the bowl. Drizzle the dressing over and serve.

My family has enjoyed this tuna salad for years. The salty crunch of the shoestring potatoes is a great complement to the creamy sweetness of the tuna and carrots. Add shoestring potatoes only at the very last moment as they become soggy after sitting. Make only as much as you will eat because these are not good as leftovers!

1 (7 ounce) can solid white tuna, drained
1 cup shredded carrot
1 cup diced celery
1/4 cup minced onion
1 cup Miracle Whip (Mayonnaise is OK but flavor is better with Miracle Whip)
1 (4 ounce) can shoestring potatoes
salt and pepper

Steps:

  • Mix all ingredients except shoe string potatoes together and refrigerate overnight.
  • Stir in shoestring potatoes just before serving.
  • Serve in lettuce lined bowl.
  • Note: cooking time is overnight refrigerating time.

650g new potato , halved lengthways if large
2 tbsp pesto
4 tbsp olive oil
8 cherry tomatoes
175g can tuna
200g green beans , halved
couple of handfuls of spinach , preferably baby leaves, tear if larger

Steps:

  • Put the potatoes in a pan of boiling water, bring back to the boil and simmer for 8-10 minutes until tender.
  • Meanwhile, mix the pesto and oil to make a dressing. Halve the tomatoes, drain and flake the tuna. Add the beans to the potatoes for the last 3 minutes of cooking time.
  • Drain the potatoes and beans and tip into a salad bowl. Stir in the spinach so that it wilts a little in the warmth from the vegetables. Season with salt and pepper. Scatter the tomatoes and tuna on top, drizzle with the pesto and gently toss everything together.

1 pound tuna steaks
1 teaspoon lemon pepper, or more as needed
1 tablespoon olive oil, or as needed
1 pound fresh green beans - rinsed, trimmed and snapped into bite size pieces
1 ½ pounds red potatoes, cut into bite-size chunks
1 large tomato, cut into bite-size pieces
1 ½ tablespoons minced garlic
2 lemons, juiced
1 teaspoon lemon zest
1 (8 ounce) bottle Italian dressing (such as Ken's Steak House Lite Northern Italian Dressing®)
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Season tuna steaks liberally with lemon pepper.
  • Heat olive oil in a large skillet over medium-high heat. Place tuna steaks in the hot skillet and sear until lightened but still a little pink in the centers, 3 to 5 minutes on each side. Be careful not to overcook. Remove from heat and allow to cool.
  • Bring a large pot of lightly salted water to a boil. Add beans and cook for 4 to 5 minutes. Drain and place in a bowl of ice water to "shock" the beans and preserve the green color.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until they are just a little firm when pierced, 5 to 6 minutes. Drain and place in a bowl of ice water.
  • Combine garlic, lemon, juice, and lemon zest in a large bowl. Add tuna, potatoes, green beans, and tomatoes. Stir in Italian dressing and coat all ingredients with the dressing. Season with salt and pepper to taste. Chill for at least 2 hours or best overnight.

6 new red potatoes, cut into 1/2-inch-thick wedges
1 red pepper
1 pound haricots verts, stems trimmed
1 1/2 cups loosely packed fresh basil leaves
2 1/2 tablespoons white-wine vinegar
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 tablespoons olive oil
1 bunch (5 cups) spinach leaves, chopped
12 cherry tomatoes, halved
2 stalks celery, cut into 1/4-inch-thick slices
1 cucumber, seeded, halved lengthwise, and cut into 1/4-inch-thick slices
2 scallions, white and pale-green parts only, thinly sliced
2 six-ounce cans water-packed solid white tuna, drained
6 Kalamata olives, pitted and chopped

Steps:

  • Heat oven to 450 degrees. Place potatoes on a baking sheet lined with parchment paper; roast until browned, about 30 minutes. Meanwhile, roast red pepper over gas burner until charred on all sides. Place in a bowl; cover with plastic wrap. Set aside for 15 minutes. Remove skin and seeds; cut into 1-inch pieces.
  • Fill a bowl with water and ice; set aside. Bring a pot of water to a boil; add haricots verts. Cook until bright green and just tender, about 2 minutes. Drain; transfer to the ice bath until cool. Drain again, and set aside.
  • Place basil, vinegar, salt, pepper, and 2 tablespoons warm water in a blender, and puree until smooth. With motor running, add olive oil, and puree until combined. Set aside.
  • In a large bowl, combine spinach, tomatoes, celery, cucumbers, scallions, roasted potatoes and peppers, reserved basil puree, and tuna; toss. Divide haricots verts among six plates; top with tuna salad. Garnish with chopped Kalamata olives, and serve.
