BAKED SKINNY FRIES

A simple side dish of homemade chips isn't always unhealthy - this version coats the potatoes in spices too

1 tbsp vegetable oil
2 tsp fine cornmeal or polenta
½ tsp paprika
¼ tsp garlic powder
2 large potatoes , cut into 1cm-thick chips

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pour the oil onto a baking tray and put in the oven for 3 mins. Mix the cornmeal or polenta, paprika and garlic powder together and season. Toss the chips in the mix, then tip onto the tray. Shake well, then cook for 40 mins, shaking halfway through, until crisp and golden.

1 tbsp cornflour
1 tbsp vegetable oil
1 tsp finely chopped tarragon
a little black pepper

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut carrots into 'fries', about 1cm thick, and mix with cornflour and a little black pepper. Toss with vegetable oil, spread in a single layer on a baking tray lined with parchment, and bake for 40-45 mins, turning halfway. Mix a little salt with tarragon and toss through the cooked fries.

2 tablespoons extra-virgin olive oil
1 ½ tablespoons seafood seasoning (such as Old Bay®)
1 teaspoon onion powder
½ teaspoon hot sauce
½ teaspoon garlic powder
2 large russet potatoes
1 tablespoon malt vinegar, or to taste
sea salt to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line 2 baking sheets with aluminum foil; spray with cooking spray.
  • Mix oil, seafood seasoning, onion powder, hot sauce, and garlic powder together in a bowl.
  • Cut potatoes into spirals using a spiralizer fitted with a large shredder blade; snip long spirals into smaller lengths.
  • Place potatoes into a large bowl; drizzle with oil mixture. Toss until potatoes are evenly coated.
  • Spread coated potatoes in a single layer onto the baking sheets, leaving 1/4-inch of space between potato spirals.
  • Bake in the preheated oven until bottom of potatoes are browned, 8 to 9 minutes. Flip potatoes with a spatula. Bake until potatoes are browned and crisp on top, about 6 minutes.
  • Sprinkle malt vinegar and sea salt over potatoes.

2 medium yukon gold potatoes, washed, dried (skin on-can use russet potatoes or sweet potatoes!)
2 teaspoons olive oil
1 teaspoon smoked paprika
1/4 teaspoon chili powder
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon cumin
coarse salt
fresh cracked pepper
2 slices veggie bacon, cooked, finely chopped
1/3 cup sharp shredded cheddar cheese (or more to taste)
2 tablespoons diced scallions
1 tablespoon sliced pickled jalapeno pepper (jarred on canned)

Steps:

  • Preheat the oven to 400°. Line baking sheet with foil for easy clean-up. Lightly coat with cooking spray.
  • Cut each potato lengthwise into 1/4 inch thin slices; then cut each slice into 1/4 inch fries.
  • In a large bowl, combine cut potatoes and oil; toss well. Add seasoning (paprika to salt and pepper). Toss to coat.
  • Place potatoes in a single layer on a lightly greased large baking sheet. Bake uncovered for about 25 minutes or until tender crisp, turning once half way through (depending on thickness this may require more or less time).
  • Remove from oven, place fries into two small oven safe dishes (or one large dish for sharing), top with cheddar cheese, sliced jalapenos, scallions and bacon bits and return to oven for about 2 minutes, or until the cheese melts.
  • Serve with low fat buttermilk ranch dressing.

"SKINNY" FRIES



This recipe comes from The New American Diet Cookbook with some changes by me. The secret here is to soak the potatoes in ice water for 10 to 15 minutes while the oven is preheating.

2 -4 teaspoons cajun seasoning

Steps:

  • Scrub the potatoes and cut lengthwise into 3 equal slices; cut each slice into thirds or fourths.
  • As the potatoes are cut, place them in a dish of ice water.
  • Preheat oven to 425 degrees.
  • When oven is hot, drain off the water, remove potatoes and pat dry with a paper towel.
  • Return the dried potatoes to the bowl, sprinkle with seasoning and drizzle with oil; evenly distribute the oil and seasoning with your hands.

I'm not sure where this recipe came from but with only three ingredients, it's probably the simplest sweet potato fry recipe out there. You can add seasonings like sea salt or garlic powder, but I prefer them just the way they are!

3 medium sweet potatoes (or enough to cover a rectangular baking sheet when they're cut up)
2 tablespoons cornstarch
2 tablespoons olive oil
powdered sugar (optional)
maple syrup (optional)

Steps:

  • Peel sweet potatoes (or leave the skins on if you'd like).
  • Cut the potatoes in 3/8" fries (like the size you get at a carnival is how it was explained to me).
  • Place fries in a glass bowl and cover with water. Let soak for a half hour or more (it's not necessary but it makes a crispier fry).
  • Preheat oven to 425.
  • Add cornstarch to a large, reclosable, plastic bag.
  • Add fries to the bag, close and shake until they are coated with cornstarch. You may have to do that more than once depending on your bag size.
  • Lay the fries out on a baking sheet and drizzle with olive oil.
  • Toss fries gently with your hands until they are all well covered in oil but try not to knock too much cornstarch off.
  • Spread the fries out in a single layer on the baking sheet, making sure not to crowd if you want them to get crispy.
  • Place in oven and bake for 15 minutes or until they reach your desired crispiness.
  • Dust with powdered sugar and serve with maple syrup for dipping, if desired.

2 medium dark-orange sweet potatoes (1 1/3 lb), peeled, cut into 1/4 x 1/4 x 3- to 4-inch strips
1 teaspoon cornstarch
Cooking spray
1/8 teaspoon salt
1/2 teaspoon paprika
1 teaspoon olive oil
1/8 teaspoon salt
1/4 teaspoon dried thyme leaves
1/2 teaspoon paprika
2 boneless skinless chicken breasts (4 oz each), cut into 1-inch cubes
1/2 cup Progresso™ plain panko crispy bread crumbs
2 tablespoons honey
1 teaspoon Dijon mustard

Steps:

  • Heat oven to 425° F. Line 2 cookie sheets with foil; top with wire racks. Spray racks with cooking spray.
  • Place sweet potatoes in medium bowl; sprinkle with cornstarch. Toss to coat; transfer to 1 of the racks. Spray potatoes lightly with cooking spray. Sprinkle with 1/8 teaspoon salt and 1/2 teaspoon paprika. Bake 10 minutes.
  • Meanwhile, place oil, 1/8 teaspoon salt, the thyme and 1/2 teaspoon paprika in small bowl; add chicken. Toss to coat. Add bread crumbs, and press gently to coat each piece of chicken. Transfer to remaining rack. Spray lightly with cooking spray. Add chicken to oven with partially baked potatoes. Bake potatoes and chicken 10 to 15 minutes, or until chicken is no longer pink in center and potatoes are tender when pierced with a knife.
  • Meanwhile, in another small bowl, stir together Honey Mustard Sauce ingredients. Set aside.
  • Divide chicken and sweet potato fries between 2 plates. Serve with sauce.
