1 can (10 1/2 oz) 98% fat free condensed cream of chicken soup
1 can (4.5 oz) chopped green chiles
1 container (8 oz) fat-free sour cream
1/2 cup fat-free (skim) milk
2 1/2 cups shredded cooked chicken breast
8 yellow corn tortillas (6 or 7 inch), torn into bite-size pieces
1 medium green bell pepper, chopped (1 cup)
1 large tomato, chopped (1 cup)
1 1/2 cups shredded sharp Cheddar cheese or Mexican cheese blend (6 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, mix soup, chiles, sour cream and milk until blended. Stir in chicken, tortillas and bell pepper. Stir in tomato and 1 cup of the cheese. Spoon and spread mixture in baking dish.
  • Cover with foil. Bake 40 minutes. Uncover; sprinkle with remaining 1/2 cup cheese. Bake uncovered 5 to 10 minutes longer or until cheese is melted and mixture is bubbly. Let stand 5 minutes.

1 bag (12 oz) frozen whole kernel sweet corn
1 can (14 oz) black beans, drained, rinsed
2 cups cubed cooked chicken breast
2 cans (10 oz each) Old El Paso™ enchilada sauce
1 cup chopped red bell pepper
1/4 cup chopped green onions (4 medium)
1/4 cup chopped fresh cilantro
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
2 cups shredded 2% milk reduced-fat Mexican style cheese blend (8 oz)
1 cup shredded lettuce
1 tomato, chopped

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook rice and corn as directed on bags. In baking dish, carefully stir rice, corn, beans, chicken, enchilada sauce, bell pepper, 2 tablespoons of the green onions, the cilantro, chili powder, cumin, garlic powder and 1 cup of the cheese until well blended.
  • Bake uncovered 30 to 35 minutes or until bubbly and heated through. Sprinkle with remaining 1 cup cheese; bake 3 minutes longer or until cheese is melted. Top with shredded lettuce, tomato and remaining 2 tablespoons green onions.

2 pounds skinless, boneless chicken breasts
2 (15 ounce) cans black beans, rinsed and drained
3 cups fat-free sour cream
2 cups shredded reduced-fat Mexican blend cheese, divided
1 (8 ounce) can chopped green chilies
2 teaspoons ground cumin
½ teaspoon ground black pepper
1 cup salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch casserole dish with cooking spray.
  • Place chicken in a medium saucepan. Fill with enough water to just cover chicken. Set pan over high heat and bring to a boil. Reduce heat to medium and simmer until chicken is no longer pink in the center and juices run clear, 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Drain and let cool 10 minutes.
  • Cut cooled chicken into 1-inch pieces. Transfer to a large bowl. Add beans, sour cream, 1 cup Mexican cheese, chilies, cumin, and black pepper and mix well. Pour into the prepared casserole dish. Sprinkle with remaining cup of Mexican cheese.
  • Bake in the preheated oven until bubbly and cheese is melted, about 30 minutes. Let stand for 5 minutes before serving. Serve with salsa on the side.

1 cup light mayonnaise
1 teaspoon dried minced garlic
1 teaspoon dried minced onion

1 ½ cups shredded Parmesan cheese, divided
2 ½ cups whole wheat rigatoni
1 pound skinless, boneless chicken breasts, cubed into bite-sized pieces
½ cup Italian-seasoned panko bread crumbs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a medium-sized casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes. Drain and set aside.

1 lb chicken breast boneless, skinless
1 package frozen broccoli, broken apart
1 can reduced fat cream of mushroom soup
2 tablespoons fat free mayo
1/2 cup shredded cheddar cheese
1/4 cup crumbled crackers (optional)

Steps:

  • Instructions 1. You need to cook your chicken and cut it into bite sized(ish) pieces - this is how I do it. Some people boil or bake, but for this recipe I cut mine up (with scissors!) and brown in a skillet. It's just faster, and with an 18-month old screaming for dinner, speed is key. Any method will work though. Do what it is best for you. 2. Cut chicken into bite-sized pieces. Yes, I use scissors (these are chicken specific scissors to avoid contamination). I use scissors to cut virtually everything. Even pizza. I can thank my mom for that. 3. Place pieces of chicken in your skillet and cook until there is no more pink in the centers. This is clearly over one pound of chicken. Boneless/Skinless breasts always seem to come in two poundish sized packages so I cook the entire amount and freeze half so I can skip this step next time 4. In a small baking dish combine 2 tablespoons of light mayo 5. One can of reduced fat cream of mushroom soup. (There is no possible way to get a picture of this that doesn't look like a blob coming out of a can, I'll spare ya) 6. a bag of frozen broccoli 7. a 1/2 cup shredded cheese 8. one pound of cooked bite-sized chicken 9. Mix everything together and level. Be careful mixing, your dish will be pretty full. But I'd rather be careful mixing than dirty another a dish I'll have to clean! 10. Now, this next step is optional - but I did it once and it stuck. If you have any sort of crackers crumble about 1/4 cup over the top of the mixture to add some crunch. In this case, I had reduced fat cheese-its on hand. 11. bake at 350°F for 20-25 minutes Calories: 310

2 dried bay leaves
1 medium zucchini, halved and sliced
1 medium yellow squash, halved and sliced

Steps:

  • 1. Preheat the oven to 350º F. Spray a 13x9-inch baking dish with nonstick cooking spray and set aside. 2. In a medium stock pot, bring the chicken broth to a simmer. Add the bay leaves and chicken and simmer covered for 15 minutes, flipping over at the halfway mark. The internal temperature should read 165º F. 3. Discard the bay leaves and reserve the chicken on a plate until cool enough to touch, then shred and set aside. 4. While the chicken is cooking, line a baking sheet with foil and spray with nonstick cooking spray. Toss the vegetables together with the olive oil, garlic, ½ teaspoon salt and black pepper. Roast in the oven for 25 minutes, or until they begin to brown and get soft, turning at the halfway point. 5. Cook the egg noodles in a large pot of salted water, according to package directions for al dente. Drain and set aside. 6. In a large bowl, whisk together the chicken soup, milk, onion powder, and garlic powder. To this, add the roasted vegetables, shredded chicken, cooked noodles, and the remaining salt. 4-5 green onions, diced
1 (14-oz) pkg. sliced fresh mushrooms
2 cups cooked boneless, skinless chicken, cubed
3 Tbsp. all-purpose flour

1 (5.3-oz) fat free plain Greek yogurt
1/4 cup light mayonnaise
1/4 tsp. salt

  • Preheat oven to 350ºF. Spray a 2 quart casserole dish with cooking spray. In a skillet, heat oil. Add green onions and mushrooms. Cook until tender. Add chicken. Sprinkle with flour. Cook for one minute, stirring constantly. Stir in milk, bring to a boil and cook for 3 minutes, or until thick and bubbly. Add brown rice. Fold in Greek yogurt, mayo and salt and pepper. 1 1/2 lbs broccoli (3 large heads) chopped
3 boneless skinless chicken breasts
1 Tbsp. light butter
2 tsp. extra virgin olive oil
2 cloves garlic, crushed
2 Tbsp. shallots, minced (onions would work too)
4 Tbsp. flour
1 cup fat free chicken broth
1 cup fat free milk
1/4 cup white wine (or dry sherry)
6 oz. shredded reduced fat swiss cheese
1/4 cup grated parmesan cheese
1/4 cup seasoned whole wheat breadcrumbs
Salt and pepper
Cooking spray

Steps:

  • Bring a large pot of water to a boil. Add the broccoli and blanch for about 3 minutes. Rinse with cold water to stop the cooking. Drain well and set aside. Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish with cooking spray. Season the chicken with salt and pepper. Using a grill pan, saute chicken on medium-low heat on both sides until browned, and just about cooked through, about 5 minutes on each side. Remove from heat and transfer chicken to a cutting board. When cooled, slice chicken into bite sized pieces. Heat a medium skillet on medium heat. Add the butter and oil until melted and then add garlic and shallots (or onions). Sprinkle flour and whisk until smooth. Stir in broth, milk and wine (or sherry) and bring to a boil. Remove from heat and stir in half of the swiss cheese. Season to taste with salt and pepper. Arrange broccoli in a casserole dish and pour half of the sauce over the broccoli. Arrange the chicken on top and cover with remaining sauce. Sprinkle in remaining Swiss cheese, grated Parmesan cheese and top with bread crumbs. Spray a little oil on top. Bake 30 minutes, serve hot.
