Fried Yellow Squash with Potatoes and Onions image

My boyfriend suggested I add some squash to the fried potatoes as a way to use up the extra squash. It tastes really good as a side dish to pork or chicken.

1 cup vegetable oil
½ yellow onion, diced
4 potatoes, peeled and sliced
3 yellow squash, sliced
¼ cup butter
1 teaspoon paprika
1 teaspoon ground black pepper
1 teaspoon minced garlic
1 teaspoon salt
½ teaspoon red pepper flakes

Steps:

  • Heat vegetable oil in a large skillet over high heat until oil is hot; decrease heat to medium. Cook and stir onion and potatoes in the hot oil until potatoes are lightly browned and partially cooked, 15 to 20 minutes. Add squash, butter, paprika, black pepper, garlic powder, salt, and red pepper flakes; cook until potatoes are golden brown, 15 to 20 more minutes, turning occasionally. Remove from skillet with a slotted spoon.

Sautéed yellow squash with onion is a classic Southern side dish recipe. A delicious way to use fresh summer squash.

4 Yellow Squash, sliced
2 tsp Olive Oil
1 Yellow or Vidalia Onion, sliced
Salt, to taste
Ground Black Pepper, to taste

Steps:

  • Heat a large skillet over medium heat. Once the skillet is heated, drizzle in a little olive oil, about 2 teaspoons.
  • Add the sliced yellow squash and sliced onions to the skillet. Season with a couple of pinches of salt and a pinch of black pepper.
  • Cover with a lid while cooking, stirring occasionally. Cook until the squash begins to become translucent, about 15 minutes or until squash is softened as desired.
  • Serve hot.

This recipe is based upon my MIL's (she never measures anything). It is my family's favorite way to eat squash and I always make a double batch of it.

5 slices bacon
5 -6 small yellow squash, sliced
1 medium onion, chopped
salt
pepper

Steps:

  • Fry bacon until crisp, remove from skillet.
  • Add chopped onion, cook until translucent.
  • Add sliced squash fry stirring frequently until squash is tender.
  • Season with salt and pepper.
  • Crush bacon and add back to pan.
  • Either yellow zucchini or crookneck squash work well in this dish.

My mother always fixed this for us during the summer and for potluck dinners, and everyone always ate it up and would ask for more.

4 yellow squash, sliced
4 medium tomatoes, sliced
2 green onions, chopped
2 tablespoons red wine vinegar
2 tablespoons olive oil
1 tablespoon Dijon mustard
½ teaspoon salt
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 1 quart casserole dish.
  • Alternate slices of the squash and tomatoes in the prepared casserole dish, and sprinkle with green onions. Mix the vinegar, oil, mustard, salt, and pepper in a bowl, and drizzle over the vegetables.
  • Bake 15 minutes in the preheated oven, or until squash is tender. Cool 15 minutes before serving.

The good old-fashioned country way. This is definitely NOT diet food. You don't drain the bacon fat off after you brown it. If you really have to, you can substitute butter, but it won't be the same. You can also use this recipe with a combination of yellow and pattypan squash.

2 pounds summer squash, sliced diagonally 1/2 inch thick

4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
  • In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
  • Bake in preheated oven for 25 minutes, or until lightly browned.
