My dad loved chocolate meringe pies and I tried many recipes before finding this one in a Virginia cookbook. It was by far his favorite and he was a chocolate pie conniseur. His way of asking me to make it for him was to come by and ask me if I knew anywhere that sold these pies. It is a little time consuming but so worth it! ...

Number Of Ingredients 13

2 c sugar
4 rounded Tbsp all purpose flour
5 rounded Tbsp dry cocoa
1/2 c butter
5 eggs, seperated
2 1/4 c milk
1 tsp real vanilla
1 9 inch deep dish pie shell
5 egg whites, room temp
pinch of salt
pinch of cream of tartar
1/4 tsp cider vinegar
10 Tbsp sugar

Steps:

  • 1. For the Pie: Mix all dry ingredients. Melt butter in a 10 inch skillet. Add dry mixture and mix lightly. Combine egg yolks with milk, add to mixture, stirring constantly. Cook slowly until really thick. Remove from heat, add vanilla, blend well and pour into baked pie shell and let cool.
  • 2. For the meringue: Let 5 egg whites come to room temperature. Add a pinch of salt, a pinch of cream of tartar and 1/4 tsp. of vinegar. Beat until stiff and add 10 tablespoons of sugar until well blended. Pile on top of pie unevenly. Bake at 350 degrees for 15 minutes.

This is my mom's recipe and it is my very favorite chocolate pie. It is so rich and yummy. You don't have to make it in an iron skillet either.

Number Of Ingredients 9

1/4 cup cocoa
2 egg yolks, beaten
3 tablespoons flour
1 cup evaporated milk, mixed with
1 cup water, to make 2 cups
3/4 cup sugar
1 teaspoon vanilla
3/8 cup margarine (melted)
1 pinch salt

Steps:

  • Melt margarine in iron skillet.
  • You can use a heavy sauce pot.
  • That is what I use.
  • Stir in cocoa, flour, sugar, salt to mixture.
  • Add well-beaten egg yolks and milk.
  • Cook on low heat; stirring with a whisk until thick.
  • Add vanilla.
  • Pour into 9" baked pie shell.
  • Top with whipped cream.
  • Store in the refrigerator.

1 1/2 c sugar
3 Tbsp all purpose flour
3 Tbsp cocoa
1 1/2 Tbsp butter, melted in skillet
3 medium eggs
1 1/2 c milk
1 1/2 tsp vanilla

Steps:

  • 1. Mix the sugar, flour and cocoa in a bowl. Add the egg yolks to the milk and whip. Add to the sugar mixutre and beat with an electric mixer. In a skillet, melt the butter and cook the filling over medium heat until thick and can easily part while stirring. Take off the heat and add the vanilla.
  • 2. Pour into a 9" baked pie crust and top with meringue. Bake @375 until slightly browned.

1 c sugar
3 egg yolks
1 t vanilla
4 t flour, plain
1 1/2 c milk
3 T cocoa
1 1/2 t butter
1 baked pie crust

Steps:

  • Mix dry ingredients in skillet. Beat egg yolks and add milk and eggs to dry mix. Cook on medium heat to low heat, stirring until it thickens. Add butter and vanilla. Pour into pie crust. Top with meringue Mix in GLASS or mixer bowl - no plastic. Use room temperature egg whites. (saved from above). Beat egg whites, add 1 T sugar per egg white. Add sugar little at a time, beating after each addition. Will form peaks, stiff. Put on top of pie. Bake in oven 300 degrees for 15 to 20 minutes.

3 cups all-purpose flour
1¼ teaspoons baking soda
1½ teaspoons salt
¾ cup (1½ sticks) butter, melted and cooled slightly
1¼ cups brown sugar
1 cup sugar
3 eggs
2 teaspoons vanilla extract
2½ cups chocolate chips

Steps:

  • 1. Preheat the oven to 350°. Grease a 10-inch oven-safe skillet with butter 2. In a large bowl, whisk the flour with the baking soda and salt. Set aside. 3. In another large bowl, mix the butter with the brown sugar and sugar until well combined (the sugar should look slightly dissolved). Add the eggs one at a time, mixing until well combined before adding the next egg and the vanilla extract. 4. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips. 5. Press the dough into the prepared skillet and bake until golden brown and baked through, 30 to 40 minutes. Let cool 15 minutes before cutting and serving.
