Another family favorite that I don't make very often, but is loved and so easy. Everything is done in one skillet. I always change up the vegetables that I use, today felt like an asparagus day. So good! Enjoy!

1 - 32 oz chicken broth or water flavored with chicken bouillon
3 Tbsp butter, divided
1 tsp olive oil
1 lb boneless, skinless chicken, cut into bite sized cubes
1 tsp garlic paste
6 oz fettuccine pasta - break into
1 c whipping cream
3/4 c shredded parmesan cheese
1/4 - 1/2 c chopped green onion
1/2 tsp fresh cracked black pepper
8 oz package, steamed asparagus - cut into 1 1/2 inch pieces - or other vegetable

Steps:

  • 1. In a large skillet over medium heat, melt 2 tablespoons butter and add olive oil. Once hot, add the chicken and garlic. Stirring occasionally until chicken is cooked. Place chicken and juices on a plate and set aside.
  • 2. In the same skillet, add the chicken broth and bring to a boil. Once boiling add the pasta and cook until tender. Drain and save 1/4 cup of broth.
  • 3. Add the pasta back to the same skillet, along with the cream, chicken and juices and slowly stir in the Parmesan cheese. Next stir in the pepper, onion and last tablespoon of butter. Cook until desired thickness, about 4 - 5 minutes. Add the cooked asparagus and heat through. ( if you need to thin out the sauce, add 1 tablespoon at a time of the reserved broth you cooked the pasta in.)
  • 4. Serve with additional green onions and Parmesan cheese.

I love this recipe because it's SO delicious and super easy to make. My family loves it, too! Great served with caesar salad and garlic bread. I usually have half of the sauce left over. I either freeze it, or cook up extra chicken for leftovers, but the chicken does lose some of its crispiness on the second day. NOTE: One of my favorite things about this recipe is the crispiness of the chicken. I usually use twice the oil that the recipe calls for, maybe even more. I just keep an eye on it, and add more as needed.

1/4 cup olive oil
1 cup chopped onion
2 -3 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
2 teaspoons sugar
1/4 teaspoon basil (optional)
1/4 oregano (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
2 large boneless skinless chicken breast halves
1/3 cup italian-style breadcrumbs
1/3 cup grated parmesan cheese
1 egg, beaten
1/2 cup mozzarella cheese, grated

Steps:

  • Saute onions and garlic in 2 tbsp of oil for 2 minutes.
  • Stir in tomatoes, sugar, and seasonings.
  • Heat to boiling, stirring occasionally. Reduce heat, cover and simmer while preparing chicken.
  • Combine parmesan and bread crumbs. In a seperate bowl, lightly beat the egg.
  • Slice chicken breast in half to create two thinner pieces of chicken or use rolling pin to flatten the breast to approximately 1/4" thickness.
  • Dip chicken in egg, then coat with bread crumb mixture.
  • Heat remaining oil. Cook chicken over medium heat in the oil, turning once. (approx. 10-15 mins).
  • Sprinkle cooked chicken with mozzarella cheese and allow it to melt. Speed the melting up by covering skillet with a lid.
  • Remove chicken to plate and spoon desired amount of sauce over top.
