BEEF WITH RAMEN NOODLES



Beef with Ramen Noodles image

I made up this recipe when I was looking for good Chinese food in beautiful Oregon. Each time I make this, I change something slightly. Leftovers heat easily in the microwave or fry pan.

1 tablespoon cornstarch
1 cup beef broth, divided
1/2 pound beef top sirloin steak, cut into thin strips
1 tablespoon vegetable oil
1 tablespoon soy sauce
1 package (3 ounces) beef ramen noodles
1 can (14 ounces) whole baby corn, rinsed and drained
1 cup fresh broccoli florets
1/2 cup diced sweet red pepper
1/2 cup grated carrot
2 green onions, cut into 1-inch pieces
1/4 cup peanuts

Steps:

  • In a small bowl, combine cornstarch and 2 tablespoons broth until smooth; set aside. , In a large skillet, stir-fry beef in oil. Add soy sauce; cook for 3-4 minutes or until liquid has evaporated. Remove beef and keep warm., Set aside seasoning packets from noodles. Cook noodles according to package directions; drain and keep warm., Add the corn, broccoli, red pepper, carrot, onions and remaining broth to the skillet. Sprinkle with contents of reserved seasoning packets. Cook for 4-6 minutes or until vegetables are crisp-tender., Stir reserved cornstarch mixture and add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add reserved beef and noodles to skillet; heat through. Garnish with peanuts.

2 tablespoons salted butter
1 yellow onion, diced
3 cloves garlic, minced
1 pound ground chuck
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
12 ounces egg noodles
2 1/2 cups beef broth
1 tablespoon grainy mustard
1 teaspoon smoked paprika
A few dashes Worcestershire sauce
1/3 cup sour cream
2 tablespoons heavy cream
2 tablespoons chopped fresh chives

Steps:

  • Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 1 minute. Add the ground chuck and sprinkle with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Add the tomato paste and cook for about 30 seconds.
  • Add the noodles, broth, 1 cup hot water, the mustard, paprika and Worcestershire sauce. Give a big stir and bring to a simmer. Cover and allow everything to simmer, stirring occasionally and adding up to 1/2 cup more water if necessary, until the pasta is al dente and the sauce has thickened, about 12 minutes. Stir in the sour cream and heavy cream and cook for 1 additional minute or until the pasta is tender.
  • Remove from the heat. Sprinkle over the chives and serve directly from the pan.

Quick-cooking ramen noodles allow you to get this zesty stovetop dinner on the table in little more than half an hour.

2 packages (3 oz each) beef-flavor ramen noodle soup mix
1 lb lean (at least 80%) ground beef
24 slices pepperoni (1 to 1 1/4 inches in diameter)
1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
1 cup water
1 small green bell pepper, cut into 1/2-inch pieces (1/2 cup)
1 cup shredded mozzarella cheese (4 oz)

Steps:

  • Break blocks of noodles in half (reserve one seasoning packet; discard second packet); set aside. In 10-inch skillet, cook beef and pepperoni over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • Stir tomatoes, water and reserved seasoning packet into beef mixture. Heat to boiling. Stir in noodles and bell pepper. Cook 3 to 5 minutes, stirring occasionally, until noodles are tender.
  • Sprinkle cheese on noodle mixture in ring around edge of skillet. Cover and let stand about 5 minutes or until cheese is melted.

1 (11 1/8 ounce) can condensed Italian tomato soup
water, 1/2 soup can
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
generous dash pepper
fresh basil leaf
fresh oregano sprig
tomatoes, slices and
grated parmesan cheese, for garnish

Steps:

  • cook noodles as instruction on pkg.
  • add seasoning pkgs; drain off most liquids.
  • set aside.
  • meanwhile in 10 in skillet over med-high heat, cook beef and onion till beef is browned and onion tender, stirring to separate meat.
  • spoon off fat.
  • stir in tomato soup, water, worcestershire sauce, mustard and pepper.
  • stir in reserved noodles.
  • heat through, stirring occasionally.
  • garnish with the spices and parm cheese.

1 pound ground beef
1-1/2 cups sliced fresh carrots
3/4 cup sliced onion
1 cup water
1 cup shredded cabbage
1 cup sliced fresh mushrooms
1 cup chopped green pepper
3 tablespoons soy sauce
1 package (3 ounces) beef ramen noodles

Steps:

  • In a large skillet, cook beef, carrots and onion over medium heat until beef is no longer pink and carrots are crisp-tender, 7-9 minutes, breaking up beef into crumbles; drain. , Add water, cabbage, mushrooms, green pepper, soy sauce and contents of seasoning packet from noodles. Break noodles into small pieces; add to pan. Cover and cook until liquid is absorbed and noodles are tender, 8-10 minutes.
