1/4 cup olive oil
4 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1 teaspoon paprika
1 lb medium shrimp, peeled and deveined
2 tablespoons dry sherry (lemon juice)
salt & freshly ground black pepper, to taste
2 tablespoons parsley, chopped Italian flat leaf

Steps:

  • Heat olive oil, garlic, red pepper flakes, and paprika in a large skillet over medium-high heat.
  • Once the oil is hot and the garlic has turned golden brown, increase heat to high and add the shrimp.
  • Cook until the shrimp turn pink and opaque, about 3 minutes.
  • Deglaze the pan with sherry or lemon juice and season to taste with salt and pepper.
  • Serve garnished with chopped parsley.

Teresa Barrenechea is executive chef and owner of Marichu, a Spanish restaurant in New York City. The shrimp in this traditional Basque appetizer (known as gambas al ajillo in Spanish) are cooked in small earthenware dishes called cazuelas right on the burners of a stove.

1/2 cup olive oil
2 teaspoons finely chopped garlic
2 teaspoons hot red-pepper flakes
2 teaspoons salt
48 medium shrimp, peeled
Flat-leaf parsley, chopped

Steps:

  • Divide oil, garlic, red-pepper flakes, and salt evenly among 4 earthenware or ceramic flame-proof crocks.
  • One at a time or all at once, heat crocks over high heat until oil sizzles, 1 to 1 1/2 minutes. Add 12 shrimp to each crock, and cook just until pink, about 2 minutes. Immediately remove crocks from heat, sprinkle shrimp with parsley, and serve them still sizzling.

Had this on file for years. Not sure of origin. My husband and I both love it. I have made a couple of simple modifications of ingredients to our tastes as noted, but do as you wish.

4 tablespoons butter
5 cloves garlic, crushed
1 1/2 lbs shrimp, shelled,and deveined
1/4 cup fresh lemon juice
1/4 teaspoon pepper
1 cup cooking sherry (I prefer to use only 3/4 cup sherry)
2 tablespoons chopped parsley (3/4 tbls. if using dried)
2 tablespoons chopped chives (3/4 tbls. if using dried)
salt

Steps:

  • p.
  • s on herbs- fresh is best- but dried isn't bad!
  • Melt butter in skillet over medium heat.
  • Add garlic, shrimp, lemon juice and pepper.
  • Cook stirring until shirmp turns pink (about 5 minutes.) Add sherry, parsley and chives.
  • Bring just to a boil.
  • Serve immediately over cooked rice.
  • Garnish with lemon and parsley.
